Inasaucepan,combine1cupofKelpDashistock,2Tbsp.ofsoysauceand2Tbsp.ofcookingSakeandheatovermediumheatuntilitcomestoaboil.

Cutofftheendof½washedeggplantandcutintobite-sizepieces.

Ifyoudon’tliketheskinoftheeggplant,peelitbeforethisprocess.

l Braise

Shapealuminumfoilsothatitisslightlysmallerthanthetopofthepan.Letitfloatontopofthestockinthepanandsimmerfor20minutesovermedium-lowheat.Thismakessimmeringfaster.

Whenthestockboils,turntheheattomedium-lowandaddthecuteggplanttothepan.

Aftersimmeringfor20minutes,removethealuminumfoil,add2Tbsp.ofMirinandstirforafewseconds.

Turntheheatoffandletsitfor10minutesontherangetoallowtheflavortoblend.

Sprinklesomewhitesesameseedstotaste.
