CONGRATS TO OUR PHARMACIST
Southern Cancer Center’s Director of Pharmacy, Tiffany Mitchem, PhD, was recently honored as
one of Mobile Bay Magazine’s “Top 40 Under 40” for the class of 2019. This award recognizes the
top young professionals from both sides of the Bay impacting their fields and giving back to their
communities. This year’s class was treated to an awards dinner at The Steeple in downtown Mo-
bile and featured in the magazine’s January issue. See full list of winners at mobilebaymag.com.
Tiffany joined Southern Cancer Center in May of 2018, and holds
the position of Director of Pharmacy for SCC & Pharmacist in
Charge for Coastal Pharmacy (SCC’s in-house, oncology-specific
specialty pharmacy). In her role, she also serves as SCC’s Pharma-
cy & Therapeutics Chair and the Senior Clinical Oversight for
Coastal Pharmacy, offering guidance over clinical operations
and clinical decision-making within the pharmacy program. In her
first year and a half with SCC, Tiffany achieved two specialized
pharmacy accreditations, making Coastal Pharmacy the first dual
accredited specialty pharmacy on the Gulf Coast! This is a huge
accomplishment and in turn means better care for our patients.
In her personal life, Tiffany is the Friends of Scouting Committee
Chair & Den Leader for her sons’ Cub Scout Pack 47 and also
serves on the Board of Directors for the local non-profit Anchor
Cross Cancer Foundation.

WELCOME NEW NURSE PRACTITIONER MARY SMITH!
Mary comes to us from USA Children and Women’s Hospital where
she worked in pediatric oncology for over 12 years. In 2018, she
graduated from South Alabama with an Adult/Gerontology Nurse
Practitioner degree and has spent some time this past year volun-
teering as a nurse practitioner at Victory Health Partners.
She is married to John Smith and they have four adult children.
Mary grew up in Mobile and as a native have lived here all of her
life. Aside from work, she has many varied interests such as ballroom
dancing, jazz music, wine tastings, cooking, Scottish culture and is a
novice mushroom hunter. She absolutely loves oncology and is ex-
cited to now be a part of the SCC team. Welcome Mary!
2020 THE YEAR OF THE RAT
Welcome 2020, the Year of the Rat. Yes, we said it, THE RAT.
While the Year of the Rat might sound disgusting and unfa-
vorable, it’s actually quite the opposite. In the terms of yin
and yang, the Rat is yang and represents the beginning of
a new day. In Chinese culture, rats were seen as clever
and hardworking animals, a sign of wealth and surplus. Be-
cause of their reproduction rate, married couples prayed
to them for children.
The Year of the Rat is quite special, it is the first of the zodiac animals in the 12-year zodiac cy-
cle. On January 25, we welcome not only a new year, a new decade, but also an entirely new
zodiac cycle. According to Chinese myth, the Jade Emperor (the emperor of Heaven) an-
nounced he would host a race among all of the animals and the first 12 animals who crossed
the finish line would be honored to represent the 12-year zodiac cycle.
As the story goes, the rat set out early while the other animals were sleeping. When it arrived at
a wide river that it could not cross, the rat persuaded the ox, another early riser, into giving him
a ride. Once safely across the river, rat jumped ahead of the ox, rushing across the finish line
first. Whether you agree with the rat’s tactics for victory or not, he is still a symbol of new begin-
nings. Today is a new beginning. Find your strength, find your spirit. Love deeply, laugh often.
And wherever you may be along your cancer journey, never give up. Tomorrow is new too.

Globally recognized, this day asks those across the world to show support in fighting cancer.
February 6th: AL Lifestyles Snowbird Expo
SCC will have a booth at this popular snowbird event at the Orange Beach Convention Center
at the Wharf. We will hand out information and goodies.
February 14th: Valentine’s Day
SCC LOVES our patients! Please take pictures of yourselves with our staff members and post
them to our Facebook page on Valentine’s Day.
February 25th: Fat Tuesday
Let the Good Times Roll! Have a fun and be safe. All SCC offices are closed this day.
March 1st: “Dress In Blue” Day for Colon Cancer Awareness
Supporters can go blue all month long, but this day is officially observed on Friday, March 1st.
March 2nd: SCC’s Birthday
Southern Cancer Center is turning 13 years old! Look for goodies at our offices this week.
March 7th: ACS Chili Cook-Off
SCC will have a tent again this year at the American Cancer Society’s annual competition held
in downtown Mobile at Mardi Gras Park. Stop by our tent and taste our chili!
March 26-29th: Festival of Flowers
SCC will sponsor this Providence Hospital Foundation annual garden show event, held on hospi-
tal grounds. This year’s theme is “Zen Gardens”.
March 30th: National Doctors Day
HIGH FIBER, HIGH PROTEIN WITH A LATINO FLAIR
Cauliflower Rice Paella with Shrimp Cauliflower rice paella with shrimp is a fantastic way
to upgrade what can be a boring side into a tasty
crowd-pleasing weeknight meal. Low in carbs and
calories and high in protein, fiber and cancer fighting
phytonutrients. Thanks to cauliflower, this easy dish is
a bonus for breast cancer patients on hormone
blockers who may need to watch their weight. Its
complex flavor is so delicious it in no way feels like
deprivation, just yummy satisfying paella.
Prep time: 20 minutes. Total time: 50 minutes.
Serving size: 4.
Ingredients
3 tablespoons olive oil, divided 1 cup chopped onion
2 cups chopped fresh tomatoes 1 cup chopped red pepper
2 cups finely chopped kale 1 pinch saffron
1 tablespoon sweet smoked paprika 4 cups cauliflower rice (or couscous)
1 pound shrimp, peeled and deveined 1/4 cup chopped parsley
Salt and pepper to taste
Preparation
1. Preheat oven to 300 F degrees.
2. In a large oven-proof sauté pan over medium heat, add 2 tablespoons olive oil. Add on-
ions, tomatoes, peppers and kale. Season with salt and pepper and sauté for about 15
minutes, until the vegetables are soft. Add saffron and smoked paprika and stir to combine.
3. Add cauliflower rice and about 1/4 cup water. Season with salt and pepper and cook for
15 minutes, until cauliflower is tender.
4. Smooth the top of the cauliflower and vegetables into an even layer. Place the shrimp on
top of the rice and drizzle with remaining olive oil.
5. Transfer pan to oven and cook for about 10 minutes, or until the shrimp are pink and fully
cooked. Garnish with the parsley and serve.
Chef Ann’s Tips and Tricks: Try to use saffron if you can. It’s sweet mellow flavor works beautifully with the smoked paprika.
If you can’t, instead use 1/2 teaspoon of turmeric in step 2. It will give your cauliflower rice pa-
ella its beautiful classic yellow color.
In the winter, when tomatoes aren’t that good, use 2 cups of canned diced tomatoes instead
of fresh and if you use a 28oz can, freeze the leftovers for another meal.

Rebirth, New Beginnings and Growth
Bras Across the Causeway Also on October 12th, SCC sponsored Providence Hos-
pital Breast Center's third annual “Bras Across the
Causeway” 5k run & walk, held at Meaher State Park.
The rainy weather didn't keep participants from having
fun, spreading awareness for breast health and raising
money for local breast cancer patients.
ACCF Masquerade Ball On Wednesday, October 23rd, SCC was excited to be a
sponsor of Anchor Cross Cancer Foundation's inaugural
Masquerade Ball held at the Daphne Civic Center. We
"masked out" cancer on this exciting evening to help
raise money for local cancer patients. The event includ-
ed a band, tons of food, live auction, survivor lounge,
plus a patient pamper room. Wouldn't you agree Dr.
Meshad wore his mask best?!
Fairhope Tree Lighting On November 21st, SCC passed out free
hot chocolate and cookies to the im-
pressive crowd at the annual Fairhope
Tree Lighting, spreading Christmas cheer!
ACCF Bass Fishing Tournament On Saturday, October 12th, Anchor Cross Cancer Foun-
dation held its 5th annual Bass Fishing Tournament at
Live Oak Landing in Stockton, AL. SCC was proud to
again sponsor this popular event, with several staff
members volunteering for registration and weigh-ins.
