C Breadmaking basics Breadmakingisbothascienceandanart.It’sasciencebecauseitrequiresprecisemeasurementandcontrolofquantities,temperaturesandtimesinordertowork.It’sanartbecausethereisanalmostunlimitednumberofvariationsofsweetorsavouryingredientsthatcanbeaddedtoabasicbreadmix.Thismeans,onceyouhavemasteredthebasics,youhaveunlimitedfreedomtoexplorethecreativepossibilitiesofproducingbreadjustthewaythatyoulikeit.

YourBreadmakerwillhelpyoubecauseittakescareoftheprecisemeasurementsoftemperatureandtime.Allyouhavetodoisensurethatyoumeasuretheingredientsaccuratelyanditwillallowyoutobakeaperfectloafeverytime.

PreparationBeforeyoubeginmakesureyougatheralloftheequipmentandingredientsyouneed.Thisincludescontainersforingredients,acoolingtray,ovengloves,andifyouhaveoneavailable,adigitalkitchenscale.

Thislastitemisnotessential,butitwillhelpyoumeasurebothliquidanddryingredientsaccuratelyand,aswehavealreadyexplained,thatisalargepartofthesecretofsuccess.

Theroomtemperaturecanaffecttheoutcomeofyourbaking.TheBreadmakerworksbestinatemperaturebetween15°Cand34°C(59°Fand93°F).

MeasuringIt’simportantthatingredientsaremeasuredaccurately.

• Usethesamemeasuringspoonsforalltheingredients.

• Usethebackofaknifetolevelallspoonsformeasurementsgiveninspoons.

• Electronicscalesaremuchmoreaccuratethanmeasuringjugswhenmeasuringwater.Ifyou’reusingarecipefromelsewhere,1millilitreofwater=1gram(g).

Choosing ingredientsFlour. Ordinaryplainorselfraisingflourisnotsuitableformakingbread.Itisimportanttochooseaflourwith“Strong”or“Bread”initsname.Strongorbreadflourscontainmoreglutenthanordinarybakingflour.Glutenistheproteinthatgivesthebreaditsstructureandtexture.Itretainsthecarbondioxideproducedbytheyeast,puttingtheelasticity,thebounce,intothedough.

Youcanchoosefromstrongwhite,strongbrownor“Farmhouse”flour,strongwholemeal,andwholewheatbreadmakingflours.Wholemealfloursprovideanexcellentsourceofdietaryfibre,butcontainlowerlevelsofglutenthanstrongwhiteflour.Thismeansthatbrownloavestendtobesmalleranddenserthanwhiteloaves.Trysubstitutingstrongwhiteflourforhalfofthebrownflourintherecipetomakebreadwitha“brownbread”flavouranda“whitebread”texture.

Forthoseonaglutenfreedietitispossibletosubstituteamixtureofriceandpotatostarchflourtomakeglutenfreebread.SeethedetailsfortheGlutenFreeBreadmakerprogramlaterinthismanual.

Yeast. Yeastisalivingorganism.Givenmoisture,food,andwarmth,theyeastwillgrowandreleasecarbondioxidegas.Thisformsbubbleswhicharetrappedinthedough,makingitrise.

Chooseadriedyeast,marked“suitableforbreadmakers”.Theseareusuallysoldinsachetsanddon’thavetobedissolvedinwaterfirst.Onlyusefresh,recentlyopenedyeast(Checkthe“bestbefore”dateonthesachet)–yeastthatisstoredcanquicklyloseitsabilitytorise.

Liquid. Theliquidingredientisnormallywaterormilk,oramixtureofthetwo.Watermakesacrispiercrust.Milkgivesasoftercrustwithavelvetytexture.Watershouldbeslightlywarm,in

therangeof20°C-25°C.Itwillslowtheyeastifitistoohotorcold.Don’tusemilkwiththedelaytimer;itmightcurdlebeforethebread-makingprocessstarts.

Fats and oils. Theseincludebutterandoliveoil.Theymakethedoughmoretenderandenhancetheflavour,givingthefinishedloafaricherquality.Theyhelptoretainmoisture,makingthebreadkeepfreshlonger.Don’tuselowfatspread.

Sugar. Sugaractivatesandfeedstheyeast,allowingittogrow.Itaddsflavourandtexture,andhelpswithbrowningthecrust.Honey,syrup,ormolassesmaybeusedinsteadofsugar,providedtheliquidingredientisadjustedtocompensate.Don’tuseartificialsweeteners.Noneofthemwillfeedtheyeastandsomeofthemmaykillit.

Salt.Salthelpstocontrolthegrowthoftheyeast,preventingthebreadfromrisingtoomuchorcollapsing.Italsoaddstotheflavour.Saltmayinhibittheyeastifitistoostrong,sokeepthemseparatewhenaddingtheingredients.

Eggs.Eggsareusedinsomerecipestomakeyourbreadricherandmorenutritious,addcolour,andhelpwiththestructureandtexture.Eggscountaspartoftheliquidingredientofthebread.Adjusttheotherliquidingredientsifyouareaddingthem.Otherwisethedoughmaybetoowettoriseproperly.

Herbs and spices. Driedherbsandspiceslikecinnamon,ginger,oregano,parsley,andbasilwilladdflavourandinterest.Thesecanbeaddedatthebeginning,alongwiththemainingredients.Freshherbs,likegarlicandchivesmaycontainenoughliquidtoupsetthebalanceoftherecipe,sotheliquidcontentmustbeadjustedaccordingly.

Nuts, raisins and other ingredients.AddtheseonlywhentheBreadmakerbeeps,earlyintheprogram.Driedfruitandnutsshouldbechoppedfinely;cheeseshouldbegrated;chocolatechipsshoulddefinitelybechips.Don’taddmorethanthereciperequires,otherwisethebreadmaynotriseproperly.

Freshfruitandnutscontainliquids(juicesandoils),soyoumayneedtoadjustthemainliquidingredienttocompensate.

Adding ingredientsRemovethebreadpanfromtheBreadmakerusingtheHandletopullitstraightupandoutofthemachine.

Makesurethebreadpaniscompletelycleanandthefitthepaddletotheshaftatthebottom.

It’simportantthatyouaddtheingredientsinthecorrectorder,particularlyifyouareusingthedelaytimer.Iftheyeastgetswet,itmayactivatetooearlyintheprocess.

Liquidingredients,includingmilkandeggs,shouldbeaddedfirst,followedby

theflourandotherdryingredients(seediagram).

Addsalttotheliquidtoavoiditcomingincontactwiththeyeast.

Makeasmallindentationonthetopoftheflourandaddtheyeasthere.Thiswillpreventtheliquidfromcomingincontactwiththeyeast.

TheBreadmakerwillbeginbymixingtheingredientsintoadough.Itwillkneadthedough,allowittoriseandfinallybakeit.TheprogressindicatorwillshownwhichstageisinprogressintheDisplayWindow.

Note. TheWHOLEWHEATprogrambeginswitha30minutedelaytopre-heattheingredients.

WhenusingtheBASIC,WHOLEWHEATandSWEETprogramstheBreadmakerwillbleepafterafewminute,indicatingthatitistimetoaddadditionalingredients,suchasdriedfruit,nuts,herbs,oats,etc.

2. Openthelid(thiswillnotstopthekneadingprocess).AddtheingredientsandusearubberspatulatoscrapeanyingredientsfromthesidesoftheBreadPan.Quicklyclosethelidtopreventheatloss.

Ifyouneedtointerruptthemachineatanypointsimplyswitchthepoweroffatthewallsocket.Themachinewillrememberwhereitisintheprogramforuptosevenminutesandwillresumeassoonaspowerisrestored.

3. WhenyourbreadisfinishedbakingtheBreadmakerwillbeepand“0:00”willappearintheDisplayWindow.

Keep WarmIfthebreadisnotremovedimmediatelyafterbaking(andtheSTART/STOPButtonisnotpressed),theKeepWarmcontrolledtemperaturereductionwillbegin.TheOperation/KeepWarmLightwillilluminate;thecolonintheDisplaywillcontinuetoflash.

KeepWarmwillhelppreventthebreadfrombecomingsoggy.TheBreadmakerwillautomaticallyshutOFFin60minutes.

C Removing the breadH RememberthattheBreadPanandyourloafarebothveryhot!Becarefulnottoplaceeitheronatablecloth,plasticsurface,orotherheat-sensitivesurfacewhichmayscorchormelt.

Toremovethebread:

1. UnplugtheBreadmakeratthewallsocketandopentheLid.Takecarenottogetscaldedbyescapingsteam.

2. Putonovenglovesand,usingthehandle,pullthebreadpanoutoftheBreadmaker.

3. TurntheBreadPanupsidedownandshaketoreleasethebread.Placethebreaduprightonawireracktocool20to30minutesbeforecutting.Thisallowsthesteamtoescape.

4. Checktoseeifthekneadingpaddlehascomeawaywiththebread.Useanonmetalutensiltogentlyremoveit,takingcarenottoscratchthenonstickcoating.

H CAUTION. TheBreadPan,KneadingPaddleandbreadwillbeveryhot.

C Using the 15-hour delay timer Youcanusethedelaytimertopre-programyourBreadmakersothatitstartsbakingautomaticallywhileyouareaway.

1. Addtheingredientsasusual,takingcarenottolettheyeastandliquidingredientscontactoneanother.

6. PressSTART/STOPtobegintheTIMER.Thecolon(:)inthetimedisplayedbeginstoflash,lettingyouknowtheTIMERisstarted.WhentheDisplayWindowindicates0:00,bakingiscompleted.

7. Ifyoumakeanerrorafteryou’veactivatedtheprogramandwanttostartover,pressandholdtheSTART/STOPButton.TheTimerwillclearandyoucanbeginagain.

C Care and MaintenanceThisappliancerequireslittlemaintenance.Itcontainsnouserserviceableparts.Donottrytorepairityourself.

To clean the product:1. UnplugtheBreadmaker(switchthesocketofffirst,ifit’sswitchable).

2. Openthelid,andletitcooldownfullybeforecleaning.

3. TheLidcanberemovedforcleaning.

4. Ifthepaddlehasstucktoitsshaft,fillthebreadpanwithwarmwaterandletitsoakforupto30minutes.Thisshouldsoftenanydoughresiduesandallowthepaddletoberemoved.

5. Washthebreadpanandpaddleinwarmsoapywater,rinse,thendrythoroughly.

6. Wipeallothersurfaces,internalandexternal,withadampcloth.

7. AllowthesurfacestodrybeforereusingtheBreadmakerorstoringitaway.

C TroubleshootingPower cuts Ifyousufferfromapowercutlastinglessthan7minutes,theBreadmakerwillcarryonwhenpowerisrestored,andtheprogramtimewillbeextendedbythedurationofthepowercut.Ifthepowercutismorethan7minutes,theprogramwillfail–unplugtheBreadmaker,letitcooldown,thenemptythebreadpan,disposeoftheingredients,cleanit,andstartagain.
