The only real security that you can have for all your important rights must be in the nature of your government. If you suffer any man to govern you who is not strongly interested in supporting your privileges, you will certainly lose them. COOKING CORNERTang Cinnamon Tea Mix1/2 c. instant tea2 c. Tang1 lg. pkg. instant lemonade3/4 c. sugar1/2 tsp. cinnamon1/2 tsp. allspiceCombine all ingredients. Store in airtight jar. Use 1 heaping teaspoon per cup of boiling water. Makes a nice holiday gift.
Round Cracker Crust1 1/2 c. cracker crumbs3 tbsp. sugar1/3 c. butter, meltedHeat oven to 350 degrees. Mix cracker crumbs and sugar in bowl. Add butter; mix thoroughly. If desired, save 1/4 cup mixture for topping. Press remaining mixture firmly and evenly against bottom and sides of pie pan. Bake 10 minutes. Cool and fill.
Ham and Corn Casserole1 c. ham, cubed1 tbsp. can cream style corn1/2 tbsp. pepper1/2 tsp. salt1 tbsp. margarine, softened2 eggs, beaten1/2 c. milkMix together and place in greased bread loaf pan or 8x8 inch dish. Spread 1 cup buttered bread crumbs over top and bake at 350 degrees for 40 minutes.
Creamed Tuna3 T margarine6 T flour1 ½ c milk1 ½ broth1/8 tsp pepper14 oz canned tuna, drained1 c cooked peas½ c cashews, choppedMelt margarine, stir in flour, mix in liquids & seasonings.Thicken on stovetop – moderate
heat. Add tuna, peas, and cashews.Serve hot over toasted waffles or biscuits.
Mini Pie Muffins1 cup packed light brown sugar1/2 cup allpurpose flour1 cup chopped pecans2/3 cup butter, softened2 eggs, beatenPreheat oven to 350 degrees F. Grease and flour 18 mini muffin cups or line with paper muffin liners. In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl beat the butter and eggs together until smooth, stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3 full. Bake for 20 to 25 minutes. Cool on wire racks when done.
Lemon Ice Box Pie1 graham cracker crust (8" or 9" dia)1 Can sweetened condensed milk (14 oz) (Eagle Brand)3 egg yolks3 Oz Minute Maid pure lemon juice4 Oz Cool Whip14 vanilla wafersCombine milk, yolks and lemon juice with wire whip. Pour into pie shell. Arrange vanilla wafers
around pie pushing into the filling so only 1/2 the wafer is showing. Spread cool whip over top evenly, and cover with saran wrap. Put in freezer at least 2 hours. Best served very cold.
Crock Pot Chicken Casserole2 pounds chicken pieces1 can condensed cream of celery1/4 cup flour2 medium zucchini, cut lengthwise, then sliced – diagonally into 1/21 teaspoon paprika1/2 teaspoon basil leaves1 clove garlic minced1 cup canned tomato drainedRinse chicken parts and pat dry. Mix celery soup with flour. Combine all ingredients in crock pot; stir thoroughly to coat chicken. Cover and cook on Low for 8 to 10 hours or on High 4 to 5 hours. Serves 4
Historical Recipe – Irish Beef RollsChop some fat beef with 1 onion and 2 sprigs of parsley. Season with salt, pepper, nutmeg and a little mace to taste and the grated rind of 1/2 lemon, 1 beaten egg and 1/2 cup of fine breadcrumbs. Mix all well together and shape into rolls. Then heat some dripping in a saucepan; lay in the rolls; cover and let simmer until brown. Serve hot with the sauce.
