Garnet’s quality, Andela predicts, will be in increas-ing demand two years from now, when fledgling Hudson Valley Creamery in Livings-ton reaches full capacity.

For now, that newly opened creamery in Co-lumbia County is importing lots of goat cheese from Europe and repackaging it, but it has big plans. When a million-square-foot freezer comes on line in 2014, Hudson Valley will need the milk of 10,000 goats to meet its production goals.

There are only 12,000 goats in all of New York State now. “It will be a game changer,” Andela said.

Talking to farmers around Otsego County for this year’s “Farmers of the Fu-ture” series, “game chang-ers” abound.

Harmon talked about a $700 million shortfall in the sup-ply of grass-fed beef in New York City alone. Enviro Energy’s Bob Miller, partner in a Wells Bridge plant producing grass and weed pellets, believes that tech-nology may be on the cusp of revolutionizing home heating.

“How much can you pro-duce two years from now?” Andela asks himself, then replies, “We want it ALL.”

The Andela family’s cheese-making ambitions – he and wife, Cynthia, also founded Andela Products, Inc., which recycles old glass into new products; she is president – began simply enough a dozen years, when daughters Lisa and older sis-ter Karla began raising two goats – Peanut and Maria – for their 4H Club.

Central School to Calvin College in Grand Rap-ids, Mich., in 2006 – both parents and Karla are also Calvin alums – dad and younger daughter had begun talking about developing their then-12 milkers into a full-fledged commercial operation.

With gestation of 150 days, a goat farm can easily double its herd annually. “We essentially keep all the girls,” said Andela, who has a freezer full of goat meat, which he says is a lot like lamb. (Guests at Lisa’s wedding two years ago raved at the tender curried and barbecued morsels.)

Krugerrand’s herd is milked twice daily, and neighbors Zack and Nate Ames can supply milk from their 90-goat herd if needed. The Ameses recently in-stalled a double-row milk-ing parlor that will allow

them two milk 400 goats in two hours.

Lisa drives over from her husband’s Sherburne dairy farm every other day, and she and her father turn the milk into cheese in two vats – one 40 gallons, one 60 – in the main house’s former garage.

The cheese – the Baby Rand gouda and an Original Rand Swiss in 3.5- to 50-pound wheels (there is also a ricotta) – is then stored in a “cave” out back. “The Cave” is a banked concrete bunker behind the main house, and it is everything you might expect in an ac-tual cave, moist, cool, dim.

“It’s very difficult to duplicate precisely a raw milk cheese,” said Andela, a big man – his daughters are both in the vicinity of 6 foot – with a neatly braided graying ponytail down the back of his neck. “But

that’s part of the charm of it. It’s always good, but it’s rarely the same.”

Before the economic downturn, four years ago, Krugerrand’s cheeses – at premium prices – were quickly snapped up, but that’s slowed. Optimally, the farm would be produc-ing 30,000 pounds a year; it’s producing about a quarter of that. Optimally, the cheeses will move out of “The Cave” to market at six months; some have been stored for two years.

But that’s OK with Andela, since the natural cheeses continue to change and richen. “I can eat this cheese in the morning,” he said, nibbling on a slice of Original Rand from a wheel on his kitchen table. “I wrap it up, put it away, take it out this afternoon, and it’s a different cheese,” however slightly so.

From”The Cave,” the tour goes to an octagonal barn Andela built himself – he also built a timber home for the Miedemas outside Sherburne last year – which contains the milking parlor, and where newborn kids frolic around their mommas. Beyond that is the meadow where the herd spends most of its day. Andela whistles, and the goats come running.

At the kitchen table, An-dela returns to the econom-ics. Milk is a commodity, its price out of control of local farmers. The “Ameri-can artisan cheese move-ment” – Krugerrand Farms

is part of it – creates “value added”: It adds value to the commodity, value that can be captured (through the higher price) and then flows through the local economy.

Krugerrand Farms’ cheese have been sold at South Street Seaport’s New Am-sterdam Market. It has been sold at the Cooperstown Farmers Market. Alex Web-ster has served it at Alex & Ika. You can find it at the Green Earth in Oneonta. Its milk is provided to Nettle Farm in Warrensburg, an-other artisanal cheese farm.

But the sales piece is missing. Andela, while no doubt a salesman, can’t go on the road and make cheese, too. Nor can Harmon. Nor can Enviro Energy as much as neces-sary. Until that piece is put in place, ensuring a steady market, a thriving artisanal cheese industry is unlikely here, Andela said.

As he’s talking, he’s been handing over a sliver of Original Rand, then a sliver from a “wild blue” – peni-cillin pierced a gouda shell in “The Cave.” He poured a short glass of goat milk – “naturally homogenized” – which is identical to cow’s milk to the untutored pal-ette. He whipped up a little “queso frita” – a non-cul-tured Spanish-style cheese that doesn’t melt in the pan.

“Cheese is like quality hardwood,” he observed. “The really special stuff can look kind of gnarly.”

been job hunting for the past three

months but have been unsuccessful.

My problem is that I have little work

experience. How can I make my résumé

eye-catching to employers? – Emily

Dear Emily: I wish there was a formula to predict the length of a job search, but the success of each candidate’s search depends on numerous factors. One thing is for sure, though; the better prepared you are, the more likely you are to shorten the length of your search. Selecting an objective for which you are qualified, creating a strong and targeted résumé, sharpening your inter-viewing skills, and exhausting all search options, will help get your foot in the door and land that job sooner.

The U.S. Bureau of Labor Statis-tics notes the average length of unemployment is about 5 months; a recent study of more than 400 professionals and executives found a job search took one month for every $20,000 candidates earned in annual salary in their former position. There is no question a job search is a long and often laborious process, and with the thought of months of search-ing on the horizon, I’m sure you’ll agree taking a proactive approach to preparing for a search is not an option, but a necessity.

Many factors can impact the success and length of your search including selecting real-

istic objectives and remaining flexible to opportunities, titles, and compensation levels. Keep in mind that some factors are outside of your control, such as the demand in your industry, for your particular skill set, and the personal preferences of each hiring manager. So how do you shorten the length of your search?

Define Your Goal – Be sure you understand your goal, and you clearly identify your transferable skills, as a hiring manager won’t have time to re-late past experiences to current interests. Don’t get trapped into creating a one-size-fits-all résumé; instead, define a primary objective and refocus your résumé to meet the needs of secondary goals. As a recent graduate with little or no work experience, you must sell your degree and the coursework you have completed, along with the skills you have demonstrated in the class or during the little experience you may have had as it relates to your objective.

Develop a “Value-Based” Résumé – Your résumé needs to sell your value to a hiring man-ager. Don’t develop a résumé that simply serves as a narrative of your background. Instead, prioritize engagements,

responsibilities, and achieve-ments based on your objective, making sure you are marketing your candidacy effectively and answering the hiring manager’s question of why he or she should interview you. Follow up-to-date protocols in format-ting your résumé, beginning with a qualifications summary, not an objective statement. Also, be sure your résumé looks professional and “meaty” and isn’t formatted using an over-used template. The summary should tell the hiring manager about your core qualifications, experiences, and achievements that position you to perform in your profession of choice. (Think about team projects you may have led, extracurricular activities you were involved in, or even skills you demonstrated while juggling part-time work and school.) Remember, recent studies estimate the screening process to be as short as 7 seconds, so this summary is critical in getting your foot in the door.

Diversify Your Search – Job boards and newspaper classified ads should always form the foundation of your search, but there are also other methods you can use to expand your search. Network-ing is a great way to find un-

advertised positions or to gain valuable referrals for posted op-portunities. If you don’t have an extensive network, think about joining a local professional or-ganization, community group, church organization, or civic league. Don’t be afraid to send a “cold contact” letter asking for an opportunity, regardless of whether one is posted.

Prepare for the Interview – Give your friends and family members your résumé and have them “quiz” you on different aspects of your back-ground. Develop scripts for the questions you have struggled with in past interviews. Record yourself so you can watch your interview and analyze your verbal communication and nonverbal cues. And never turn down an opportunity to inter-view. The more practice you get, the more confident you will be when the interview for your dream job comes along.

Remain Positive – While this might be easier said than done, it is critical you remain positive during your search. Keeping a good attitude will help maximize your success when you are presented with various opportunities.

PLEASE TAKE NOTICE that on the 26th day of Jan, 2012 the Otsego County Trea-surer, hereinafter the “Enforc-ing Officer” of Otsego County hereinafter “Tax District” pursu-ant to law, filed with the Otsego County Clerk a PETITION AND NOTICE OF FORECLO-SURE against various parcels of real property for unpaid taxes.

The above cap-tioned proceeding is hereby com-menced to en-force the payment of delinquent tax-es or other lawful charges which have accumulated and become liens against certain property. The parcels to which this proceed-ing applies are identified on Schedule “A” of this Petition, which is annexed hereto and made a part hereof. This document serves both as a Petition of Foreclosure and a Notice of Foreclosure for purposes of this proceeding.

Effect of filing: All persons hav-ing or claiming to have an interest in the real prop-erty described in this petition are hereby notified that the filing of this petition con-stitutes the com-mencement by the Tax District of a proceeding in the court specified in the caption above to foreclose each of the tax liens therein described by a foreclosure proceeding in rem.

Such payment shall be made to Dan Crowell, Otsego County Treasurer, 197 Main Street, P.O. Box 265, Coo-perstown, N.Y. 13326. In the event that such taxes are paid by a person other than the record owner of such real property, the person so paying shall be entitled to have the tax liens affected thereby satisfied of record.

Last day for redemption: The last day for redemption is hereby fixed as the 30th day of April, 2012. Service of answer: Every person having any right, title or interest in or lien upon any parcel of real property described in this petition may serve a duly veri-fied answer upon the Attorney for the Tax District setting forth in detail the nature and amount of his or her interest and any defense or objection to the foreclosure. Such answer must be filed in the Office of the County Clerk and served upon the Attorney for the Tax District on or before the date above mentioned as the last day for redemption.

ONEONTA – Virginia Spencer Sanik, 90, a special education teacher, passed away on Saturday, Feb. 12, 2011.

Sanik was born on June 23, 1922 in Clarksburg, W.Va., and raised at the Country Club there, where her father was the golf pro-fessional.

Her family then moved to Newport, R.I., where she grew up at the famous New-

port Casino, which became the Tennis Hall of Fame. She graduated from the University of Rhode Island, later receiving her master’s degree from Russell Sage Collegein Troy.

She married John Sanik Jr. at the end of World War II. They raised four children in Rhode Island, Kansas, In-diana, and finally Oneonta.

In addition to teaching special ed in city schools,

she served as the bridge director for decades. She also taught bridge with the Oneonta Adult Education Program and often gave private lessons. In addition, she was a volunteer Tax Pre-parer at the Senior Center.

Sanik is survived by her children, David, Lorraine, Gregg and Paul; her grand-children, Courtney, Mitchell and Cassie Sanik; Michael and Abby Fischer; Kevin

and Brian Sanik; son-in-law, Jonathan Fischer; daugh-ter-in-law, Marge Meitus and David’s fiance, Sheila Webber. She also leaves her nieces, Diane Farrow and Carol Shield; her sister, Blanche Perrine; and niece, Kim Hageman.

A private memorial is planned. In lieu of flowers, please make a donation to the charity of one’s choice.

ONEONTA – Vivian (Mattice) Townsend, 87, of Oneonta, passed away Sunday, Feb. 19, 2012.

She was born Nov. 14, 1924, in North Franklin, the daughter of the late Kenneth and Violet (Lorman) Mat-tice.

She met her husband, Donald Townsend, when she was working at the Oneonta Dairy. They were married on July 17, 1949, in Dallas, Pa.

She worked in the meat

department at P&C Grocery in Oneonta and then she was the food service manager at the Center Street School until her retirement. She enjoyed dances at the Elk’s club and playing bingo.

Townsend is survived by her four children, Ken-neth and Carol Townsend of Stamford, Jeri Townsend and John Christensen of Oneonta, Jacalyn and James Renwick of Burlington Flats and Karen and Gordon Saggese of Oneonta; step-

son, David Wiltsie of Cali-fornia; 10 grandchildren, Michael Townsend, Stacy Howland, Ann Osborne, Jill Renwick, Patrick Renwick, Kelly Renwick, Jennifer Renwick, Chad Saggese, Christopher Saggese and Stephanie Gelardi; 20 great-grandchildren; one sister, Josephine and Andy Prez of Port Crane; one brother, David Mattice of Oneonta; as well as several nieces and nephews.

She was predeceased by

her husband, four brothers, Winfield Mattice, Kenneth Mattice Jr., Leroy Richard Mattice and Robert Mattice.

Funeral services will be private. Burial will be in the West Oneonta Cemetery in the spring.

Memorial donations in Vivian’s name may be made to the National Kidney Foundation, Finance Depart-ment, 30 East 33rd St., New York, NY 10016.

RICHFIELD SPRINGS -- Albert John Dorn Jr., 66, a Vietnam War veteran passed away on Friday, Feb. 17, 2012.

He was born on Dec. 15, 1945, in Utica, son of the late Albert J. Sr. and Lois Brown Dorn. A lifelong resi-dent of Richfield Springs, he was a graduate of Richfield Springs High School. He enlisted in the Marine Corps in 1964 and, after serving in Vietnam, was honorably discharged on July 22, 1970, with the rank of sergeant.

For many years Mr. Dorn worked as an electrician for the Bassett Hospital.

Dorn was a member of Saint Joseph the Worker Catholic Church.

He is survived by his part-ner, Larraine DeAngelis.

Funeral services were on Wednesday, Feb. 22 2012, in the funeral home with the Rev. Terence Healy, St. Joseph’s pastor, officiating.

Interment with military honors provided by the Ma-rine Corps will be in Saint Joseph’s Cemetery.

Albert J. Dorn Jr., 66, Sergeant In Vietnam RICHFIELD SPRINGS – William R. Sheldon, 80, a Korean War veteran, passed away on Wednesday Feb. 15, 2012, at Bassett Hospi-tal.

He was born on August 27, 1931, in Richfield Springs, son of the late Le-land E. and Elda Armstrong Sheldon. A lifelong area resident he was a graduate of Richfield Springs High School.

He served in the Air Force in 1951-55, and was honor-ably discharged with the ran

of staff sergeant. For many years Bill worked as a meat cutter for the Big M Store in Ilion, retiring in 1995.

On Feb. 14, 1991 he married the former Sharleen Moore in Cherry Valley. They lived in Richfield Springs since 1993.

A graveside funeral service with military honors will be conducted later this spring in Springfield Center Cemetery with Pastor Terry Brant of the First Christian Church of South Valley of-ficiating.

Wm. R. Sheldon, 80, Korean War Vet

COOPERSTOWN – An-thony George Martucci, a World War II veteran, died early Saturday morning, Feb. 18, 2012, at his home in the Town of Middlefield. He was 85.

A native of Staten Island, Anthony was born in the Rosebank neighborhood on Aug. 19, 1926, a son of An-thony and Catherine Mangi-no. After graduating from high school, he enlisted in the Navy, entering into ac-tive duty Oct. 23, 1944, and serving in the Philippines. He was mustered out on Aug. 9, 1946, continuing in the Navy Reserves.

On March 31, 1951, Anthony married Jose-phine Rosalie Ciaburri at St. Margaret Mary Ro-man Catholic Church on Staten Is-

land. The couple settled in Midland Beach, where they raised their family.

Tony worked for the Brooklyn Union Gas Co., retiring as a customer service supervisor. With G&R Bus Service, he drove school bus for special needs

children.In September 1993, the

Martuccis moved to Fred Ottaway Road, Town of Middlefield.

For 47 years, he was a member of the Knights of Columbus. Locally, he was a member of the Sgt. Walter P. Eggleston Veterans of Foreign Wars Post No. 7128 in Cooperstown and the Milford American Legion Post No. 1566.

He was an ardent Yan-kees fan, loved puzzles, and loved being with his family.

In addition to his wife of 61 years, survivors include their children, Barbara

Martucci of Manhattan, James Martucci and his wife, Diane, of Charlotte, N.C., Richard Martucci of Cooperstown, and Frederick Martucci of New City; 12 grandchildren, James, Man-uel, Thomas, Tara, Nicole, Anthony, Salvatore, Joseph, Danielle, Alyssa, Adrianna, and Briana; and one great grandson, Ryan.

A funeral service is at 1 p.m. Thursday, Feb. 23, at the Connell Dow & Dey-senroth Funeral Home, with Father John P. Rosson, pas-tor, St. Mary’s “Our Lady of the Lake” Catholic Church, officiating.
