• The word alcohol is derived from the Arabic al-khol.

• Alcohol is generally define as the liquid contains ethyl alcohol, or ethanol (CH3CH2OH).

• The percentage of alcohol in a drink is varies from 0.5% to 95% depending on the method.

Classification of alcoholic beverages

Alcohol drinks are classified into three types they are:

• Brewed &fermented drinks.• Fermented drinks.• Distilled drinks.

• Yeast act on sugar and convert one molecule of sugar into two molecule of ethyl alcohol and two molecule of carbon dioxide (co2).

• The alcohol level rises up to 14%. • Once the alcohol level riches 14% the yeast is killed later it bring

the fermentation process is to halt or end.

Fermentation:• Is the process in which sugar is converted to

alcohol and carbon dioxide by yeast. This process is the basis for producing all types of alcoholic beverages.

Distillation: • Is the process of separating elements in a liquids

by vaporization and condensation.

• Stilling is the process of separating alcohol from water.

• There are two types of still used in distilling spirits:

Advantages The advantage of this system are as follows:• It produces spirits that are individualistic due to

the presence of congeners.• Spirits with pronounced aroma • Small quantity of wash can be distilled.DisadvantagesThe limitations of this system are as follows:• It need more time and labor• It is costly to operate• Stills need frequent cleaning & refilling, often after each

distillation.

Advantages • The advantage of this system are as follows:• It does not required too much of labor, cleaning & refilling.• More quantity is produced as compared to pot still method.• It is cost effective.

Disadvantages• The limitation of this system are as follows:• It is not suitable for small quantity of distillation.• Aroma and other essential elements that are required

in the drink may not be achieved. • After manufacturing, most of the fermented and

distilled drinks are aged before bottling to mellow them & to make them acquire unique characteristics.
