TITLE OF SABBATICAL PROJECT The Power of Local Foods: Developing Culinary Tourism Businesses
GOALS and OBJECTIVES:
1. Research on Culinary Tourism• Research, analyze and compile information about Food Tourism operations that have operated
successfully in a variety of culinary cultures. Research can be done virtually or in person, whenthat becomes safe. Examples include Asian Street Food Tours in California locations, ChocolateTours, farm and market tours, and well-developed and popular Food and Wine Tours in Napa,Santa Barbara and/or Sonoma. NOTE: During COVID-19, many small tours are operational,because they are limited in size, all participants wear masks, they are non-touch, and any tastingoccurs outdoors.
• Conduct interviews of successful Culinary Tourism entrepreneurs to understand and torepresent this fast-growing segment of tourism; interviews can be done virtually or, eventually,in person in a safe manner. Interviews can include restaurateurs, food journalists, touroperators and farming, brewing and winery entrepreneurs.
• Share research with other interested Saddleback Departments, including Travel and Tourism,Culinary Arts and Photography. Planning for collaborative projects (like a Photography Show anda Food Fair) will begin during the research phase of the sabbatical with interested departments.
2. Development of Culinary Tourism coursework• Create a module for BUS-160 Entrepreneurship to showcase examples of Culinary Tourism.• Develop a workbook and Seminar to educate and assist individuals in the development of their
specific Culinary Tour Business Plan. Market and promote this workshop across the campus andlocal community and to the Continuing Education and Emeritus Communities.
• Present results of the Sabbatical to College Faculty and Staff during Flex week.• Invite involvement from key industry representatives met during the research phase, as part of a
Virtual or Hybrid Culinary Tourism Food Fair.
ACTIVITIES: Research through books, journals, hospitality and culinary/travel magazines, broadcast journalism and websites about Food Travel and International Culinary Education. Interviews with industry experts in the world of Food Tourism, including national and international restaurateurs, food journalists and other media professionals, chefs, cooking class instructors, tour operators, and farming, brewery and winery entrepreneurs. Discussions with members of the Hospitality industry including Convention and Visitors Bureaus and destination marketers, who will have unique insights on this engaging area of travel. GOALS and OBJECTIVES:
1. The goal and one of the objectives of this sabbatical is to create a custom lab manual for GEOG ll:Physical Geography Laboratory at Saddle back College.
2. An additional objective of this sabbatical is to deliver the lab manual to Saddle back Collegestudents at a lower cost than the current published lab manual.
ACTIVITIES:
I will write the custom Physical Geography Laboratory manual which is accessible and compliant with
Sections 504 and 508 of the Rehabilitation Act of 1973 and available for a lower cost than the current published lab manual to Saddleback College students. In the process of developing the lab manual, I will also research public domain materials due to the large number of tables, figures, maps, and images that
might be needed. In many cases, I will create tables and figures to be used in the lab manual exercises.
Throughout the sabbatical, I will consult with the other geography faculty and provide drafts of lab exercises so that they have input in the design and content of the lab manual.

TITLE OF SABBATICAL PROJECT Creation of IVC World Languages Department Website and Games to Accompany the Spanish Textbook "Tu mundo," 3rd ed.
GOALS and OBJECTIVES: 1) Revise the content and format of the current School of Languages and Learning Resources website.
This revamped website will be more informative, containing a description of the school, a list of facultyand staff contact information, a page with the degrees and certificates it awards, and a link to thedifferent programs and majors it offers. Having all this important information in one site will be helpfulfor students seeking this information.
2) Create content for a new World Languages Department website to house in one site pertinentinformation such as credit by exam, challenging a pre-requisite, benefits of learning a language, tipson succeeding in a language course, career opportunities, resources for students, etc. This one stopsite with all the answers students often ask instructors will help consolidate the information fromdifferent websites, lowering students' anxiety and frustration. It will also alleviate the need forinstructors to often repeat the same answers; they can now refer the students to the website for theanswer, thus saving time that can be dedicated to creating fun class activities.
3) Create a set of Jeopardy and a set of Kahoot! games to match the vocabulary, grammar and culturein each chapter of the Spanish textbook "Tu mundo," third edition, used at IVC in Spanish 1, 2 and 3.The games are student centered, foster whole class participation and promote healthy competition.Playing these games will lower students' anxiety, increase students' motivation and encouragecreative and spontaneous use of language.
ACTIVITIES: In fall, I will explore the Languages Department website of at least 30 California community colleges
and take notes on the types of information they've included in their site that can be added to ours. I will meet with the languages faculty and ask for their input on the new website and request that they think of former and current students who would be willing to record a testimonial of their experience taking a language course at IVC. Videos of these testimonials will be included in the new website. In consultation with the Languages faculty and Dean Bui, I will add content to the existing School of Languages and Learning Resources (LLR) website, the new World Language website, and each individual language website.
In spring, I will review every chapter's vocabulary, grammar and cultural information in the Spanish textbook "Tu mundo," 3rd edition and decide which categories and questions to use in each chapter's Jeopardy game. I will also decide what topics and questions to play in Kahoot! and type a list for each chapter. I will then create 15 sets of Jeopardy games and 15 sets of Kahoot! games based on the vocabulary, grammar and culture in each chapter of the new edition of the Spanish textbook.
