Rustic Greengage and Sultana Cobbler & Summer Fruit Treats

RUSTIC GREENGAGE AND SULTANA COBBLER

600g (1¼lb) stoned greengages75g (3oz) sultanas

FOR THE COBBLER TOPPING250g (9 oz) wholemeal self raising flour75g (3oz) sultanas50g (2oz) lard50g (2oz) Demerara sugar200ml (7fl oz) natural yoghurt1 tsp salt½ tsp mixed spice

Put the fruit in a 1.5 litre/2½ pint pie dish. Pour in justenough water to cover. Put the flour, salt and spiceinto a mixing bowl and rub in the lard with yourfingertips. Stir in the sugar and sultanas. Make a wellin the centre of the scone mixture, pour in theyoghurt, and mix to a soft dough. Divide the doughinto 8 portions and form them into 2.5cm (1 inch)thick rounds. Arrange them symmetrically on top ofthe fruit. Bake the cobbler for 35 minutes at 200C /400 F / Gas 6 or until the scones are golden brown.

SUMMER FRUIT TREATS

You will need a selection of soft fruitsMixed small fruits: raspberries, cherries (stoned),grapes, small strawberriesLarge chopped fruits: pineapple, bananasSeveral large grapefruits sliced in half put on aplate cut side down

Fruit is quite delicious by itself but if you are having anevening party and want to make your fruit a bit moreinteresting, try this idea. Melt some good qualitychocolate either very carefully in the microwave, or ina bowl over a pan of boiling water. Put each piece of

fruit onto a cocktail stick and dip it into the chocolate.Then push the other end of the cocktail stick into thegrapefruit. Place the dipped fruit into the fridge andwhen the chocolate is set you can remove it from thegrapefruit and serve either with or without thecocktails sticks.

Theprogram covers all areas of the sufferer’s disease and istailored to cater for each individual’s particular needs, suchas minimising and avoiding triggers. Buteyko is abreathing retraining exercise and so the results achieveddepend on home participation. Client’s complete 3 sets ofexercises (15minutes) each day and keep a diary of theresults. The results can then be used to monitor progressand can be shown to medical professionals to indicate theimprovement in symptoms. Information from the diarycan then be used to influence decisions relating tochanges in medication.

TimingSo it all sounds soooo romantic to getmarried on Valentine’s Day or atChristmas....but it is not always soromantic financially or practically! Themajor drawback to getting married atthese times of year is the cost of allflowers. Flower prices are based onsupply and demand (like mostcommodities). The demand is high at

these peak times therefore prices are subsequently high. Theother major problem with getting married at Christmas isavailability of flowers.

The markets in Holland close for holidays and don’t reopen for2-3 days; therefore the supply chain dries up. Generally youcan’t get fresh flowers after Christmas until nearer to newYears. So you must rely on flowers keeping fresh from beforeChristmas. Although some flowers are very happy to do thisothers are not so impressed! It’s not impossible but it’scertainly more restrictive.

Wedding flower magazinesBy all means flick through these magazines to get an idea of thetype of flowers you would like for your bouquet, church orvenue. They can be very inspiring and a great source of ideas.However do bear in mind that most of the magazines designflowers without budget limitations.... and although exquisitemay be very expensive to create. You can usually do a lessexpensive version of them by perhaps introducing moregreenery or less expensive flowers etc so don’t be put off but berealistic. Most florists love doing unusual designs so if you findan image you like in a wedding magazine it’s so much easier toexplain what you want.

ColourIt is really helpful when visiting your florist to have a sample ofthe bridesmaids dress available for colour match. If necessarya good florists will order in some sample blooms so that thedress can be matched. It’s always amusing at how insignificantthe bridal dress is to the choice of flowers....it’s all about thebridesmaids colours. Go bridesmaids!

Confirm your choicesFollowing your initial consultation with your florist you shouldexpect to get written confirmation of your discussion. This givesyou an opportunity to collect your thoughts and add changes ifnecessary. It’s also a good reference point going forward withyour discussions. Once you have confirmed your choices makesure these are documented. Changes can always be made, evenup to a week before and indeed corsages numbers can be addedto the day before.

Venue DesignNowadays the hotels and venues very often provide tablecentre arrangements as part of the package they offer.Unfortunately they are not always very imaginative so it’salways worth asking your florist what they can do for yourvenue. It doesn’t have to cost the earth. A good florist hasprobably done loads of table designs for many events and willhave many options to offer you.

Know your budgetGenerally you should expect your first consultation to be freeof charge. Be aware that the florist is giving you their expertopinion and experience. They are spending a couple of hoursof their time with you and documenting the discussionsafterwards. Definitely shop around but getting into a “Dutchauction” will not endear you to your wedding florist. If youlike your florist, their portfolio of work and are impressed bytheir ideas that’s usually all you need to know to make yourmind up. ...it’s not meant to stress you out! If you have anidea of budget to start with then its best to let the florists knowand they will work with you to make that happen.

This month, Paddy Comyn of CompleteCar.iehas been driving a new car that has optionalextra’s that total €46,522. These include seatsthat massage you, night vision, a DVD changerand leather seats that cost €21,000. It is Audi’snew A8, a technological tour de force that aims tobe the last word in comfort, innovation andperformance for the discerning luxury car buyer.

The first thing you notice about the A8 is its size, itis truly immense. But you will also notice that interms of styling it is really rather muted. Weprobably expected something a little more radicalwhen it came to the car’s design, rather thansomething that just looks like a really massive A4,but you must remember that the executive buyerat this level is notoriously conservative and as BMWfound out as few years back with the 7 Series, ifyou try something too radical then it can be hardto sell this to an often older buyer in this class.

Whatever about the exterior of the A8, theinterior is nothing short of incredible. Audi arewell known for the quality of the interiors on eventheir most basic car but when they are showingoff the results are astonishing. The A8 we drovedid, as we mentioned, feature a host of optionalextras, many of which seem wildly extravagantbut we would be a fan of the massaging seatswhich do provide much more than a tickle andthe handwriting pad on the dash also allows you

to write in navigation destinations, although itwould work better on a left hand drive car if youare right handed.

There is air suspension, which can be adjusted tofour models – auto, dynamic, comfort and lift andeven on twisty back roads the A8 can be flungabout like a hot hatch. With 346hp on tap and800Nm of torque the A8 is not short on power –anything but. With an eight-speed automatictransmission and four-wheel drive power deliveryis really smooth. 0-100km/h takes just 5.5 secondson the way to a top speed limited to 250km/h.Fuel economy isn’t bad returning a believable 7.6l/100km and CO2 emissions of 199gkm mean itisn’t even in the highest tax bracket.

Round the Garden in August

The last month of summer is here and, although it’s thebest month to enjoy the garden and weather, it’s alsotime to prepare for the coming autumn months.

LawnsSpike the lawnwith a fork to improve drainage. If it is excessivelyhot, leave a very thin layer of cuttings as a sun shield. Now is thetime to plant bulbs in the lawn for next spring.

Tidying upAntirrhinums need their flower spikes cut down. Train clematis,honeysuckle and wisteria to prevent shoots growing wild.Tulips should be lifted and stored.

SowingAnnuals for next spring need to be sown this month. It’s alsotime for sowing cauliflowers, endive, onions, radishes, redcabbage, spinach for winter use and turnips. Perennialseedlings should be thinned.

Cut and divideCuttings of carnations should be ready for planting out. Springflowering perennials can be divided and replanted this month.

VegetablesBroccoli will require plenty of water this month as the headsform. Garlic and onions can be harvested and herbs collectedfor storing. Runner beans should be stopped when theyreach the top of the poles and the beans harvested whenready. Turnips may need dusting with slake or ground limeto guard against fly.

FruitApples, pears and plums should be thinned out if the crop isheavy. Cut down the old canes of loganberries and raspberriesas soon as the fruit has been picked. Any unwanted strawberryrunners should be cut off, with new beds made for the runners.

TTRS course for children with Dyslexia, Dyspraxia andother learning difficulties

Touch-Type, Read and Spell (TTRS) is a multi-sensory(seeing, hearing, speaking, touching) computer-aidedlearning course for children with spelling, reading orwriting difficulties. The course has successfully beenrunning in the South Dublin area for the last four years.

The course aims is to improve the reading and spelling ofthe student through the use of touch-typing. It also helps tobuild confidence and self-esteem of the student throughconsistent praise of the student’s achievements. The TTRScourse has received some excellent reports from parentsand teachers alike; it suits children with the followinglearning difficulties.

I often think to myself what makes a good localrestaurant, is it the service, the surroundings oris it just good, well prepared and presentedfood. I sometimes leave a restaurant and thinkthat was very close if only they had…. Well fromthe moment we entered the BD SpiceRestaurant and started up the stairs to thedining area I had a suspicion we were in for abit of a treat.

As we were shown to our seats (the only two left inthe restaurant) there was a real buzz in the air withlots of diners chatting and laughing amongst abeautifully aromatic atmosphere, considering theoffer that BD Spice are running around certain localarea’s it was no surprise that the place was full.

The offer is available to residents in the local areaon certain nights in the month and you get a fourcourse meal with complimentary glass of wine orIndian beer for only €20.

After being shown the special menu which includedall the main Indian dishes you might expect weordered from Rajib and continued our conversationmainly about how great it was to see a restaurant asfull in these very difficult times. We were thenbrought our glass of wine which was part of themenu offer and the quality of the House wine couldnot be faulted, a small taster of what was to come.

Duly our starters arrived, my wife opting for theChicken Shaslik, tender chicken pieces withmushrooms and onions in a very light but tastysauce. I myself went for the Shammi Kebab’swhich can be very tricky to find done well, I wasnot disappointed, two minced lamb patties’scooked to perfection and for me they were a realtreat.

Then came our main courses, for myself theChicken Jalfrezi and my wife went for the LambBhuna. Both dishes were excellent, cooked freshwith both the Lamb and the Chicken exceptionallytender; it always amazes me how Indian cuisinenever fails to get its meat as tender as they do.

The Pilau rice was perfectly flavoured and alongwith the light and beautifully prepared GarlicNaan bread they made perfect companions towhat was a superbly delicious course. I see myselfas a bit of curry nerd, it is my favourite meal and Ihave eaten in Indian restaurants all over thiscountry and the UK where it is the biggest sellingfood and this was up there with the best I haveever tasted.

I chatted to the two couples next to us to comparethe experience and was met with nothing butglowing accounts of what they had just eaten and

how they would be back for the Shammi Kebab’sSamosa’s, Tikka Masala and especially the PrawnMasala. This was only preaching to the converted,every comment just mirroring our own experience,so thank you to Mr & Mrs Murphy and Walsh ofRathfarnham for allowing me to interrupt yourprecious night out.

I could only really find room after such a superbfirst two courses for the selection of ice creams butthere were other choices if you have theinclination, then finished with the coffee and yetmore conversation. They do, of course, have theirA La Carte menu available from 5pm to 11pm 7evenings a week and a Sunday lunch 4 coursefamily special.

From the fun and bubbly Shoma to the superblyefficient Iqbal, Rajib and Nasrin Parvin I must thankthem for their great service and lovelyconversation. Thanks to them I now have a newfavourite Indian restaurant (or should that beBangladeshi, that’s what the BD stands for just incase you were wondering).

I could go on about how this Bangladeshi familyrun restaurant is a real gem that you should try butI won’t because I know that you really don’t havean excuse not to, you can’t say it’s too expensive,it’s not far from where you live, they even let youtake away or deliver locally so you have been told,BD Spice, even Eve could not resist this little spicypiece of Eden.

The Ballinteer Male Voice Choir (BMVC) hostedthe 2nd Ballinteer International Male VoiceChoir Festival on Friday 14th and Saturday 15thMay 2010. The choir was joined at the festivalby the Baldonnell Male Voice Choir, the DublinWelsh Male Voice Choir and our special guestsEntresol - Choeur d’Hommes du Dauphine -France.

On Friday May 14 Entresol arrived at Dublin Airportand were escorted to the Mansion House wherethey were received and were welcomed by theLord Mayor Emer Costello. Together with BallinteerMale Voice Choir they entertained the Lord Mayorwith several songs from their repertoire.

BMVC also presented the Lord Mayor with a copyof their first CD which they launched during theFestival. The Lord Mayor in turn presented eachchoir with a memento of their visit.

The Festival itself was a resounding success. The 4choirs sang to a capacity audience in the Church ofSt. John the Evangelist, Ballinteer Avenue. TheGrand Finale saw the 4 choirs (approximately 120male voice choristers) perform 3 songs which theyhad rehearsed separately for many weeks. One ofthese songs was “Ireland’s Call” composed by PhilCoulter and arranged for Male Voices by MusicalDirector of BMVC Ray Ryan.

Phil Coulter was present for this premier renditionof his masterpiece and he was extremely impressedby the quality of the whole performance. He wasalso presented with a copy of the CD which waslaunched during the weekend by Ballinteer MaleVoice Choir.

The Gala evening was well received by everybodypresent and the choirs received a standing ovationon completion of the performance.

ABOUT MUSIC

Music on the Move!Churchtown School of Music recently held their End-Of-Year Recitals in Marlay House on a glorious sunny Sundayafternoon.

As is the ethos of the school all students are invited to play,either as a solo performer or in an ensemble group. Parents,friends and the local community turned out in force andwandered around the beautiful period house listening to thestrains of various instruments coming out of every room. It wasa truly magical day.

The MOVE!

Churchtown School of Music continues to go from strength tostrength since it first opened it’s doors in 2005. Students nownumber 600 with 38 fully qualified and experienced teacherswhich makes it one of the largest music schools in the city.

Tuition is offered on all classical and popular instruments aswell as Theory. More and more students in Ireland arechoosing to do Music as a Junior and Leaving Cert subject andthis can be done once a week in CSM if you can’t fit it intoyour choices at your own school.

This increase in numbers necessitates a move to biggerpremises so September will see CSM move to The VillageCentre, Dundrum. This area has come alive again in recentmonths and CSM will no doubt add to the spirit ofregeneration. Soundproofing work will be carried out during

the summer and everyone is looking forward to an excitingnew school on Monday 6th September.

Mini Music is launching it’s new curriculum on Saturday 28thAugust in The Music School, The Village Centre, Dundrum.There will be free classes throughout the day. There are 5different age groups from 3months-5 yrs so booking is essential.
