445th Anniversary Recalls FoundingOne in a series of historic features as St. Augustine prepares for
its 450th Anniversary in 2015.Pedro Menendez’ asiento (contract) with King
Phillip II of Spain was to be primarily an explorationand settlement expedition – until word came that theFrench had established a fort nearpresent-day Jacksonville and werepreparing to reinforce it.
The voyage of Menendez’ fleetin the summer of 1565 was record-ed in detail by his principal priest,Father Francisco Lopez deMendoza Grajales wrote, “Veryoften the sea washed completelyover the deck where we were gath-ered, one hundred and twenty menhaving no other place to go, as there was only onebetween-deck, and that was full of biscuit, wine, andother provisions...
“When (a Spanish royal dispatch boat) arrived offMona Island, she was attacked, and compelled to sur-render to a French vessel. The enemy boarded her,possessed themselves of all her papers, (and) read theplans for the conquest of Florida...
“On Tuesday, the 28th (August), we had the pleas-ure of seeing land. We steered in that direction,anchored near a point of land, and found ourselvesactually in Florida, and not very far distant from theenemy, which was for us an occasion of great joy.”
That Feast Day of St. Augustine of Hippo inspiredMenendez to name his first settlement in the saint’shonor.
“On Saturday, the 8th of September,” Father Lopezwrote, “the general landed with many banners spread,to the sound of trumpets and salutes of artillery. I tooka cross and went to meet him, singing the hymn TeDeum laudamus. The general marched up to the cross,followed by all who accompanied him, and there theykneeled and embraced the cross.

New CarThe first Sunday after my husband and I bought a
new car, we parked it in the last row of the church lot,not wanting to be ostentatious.
While talking with friends after the service, my hus-band accidentally hit the panic button on his electronickey. Immediately our car’s horn blared and its lightsflashed.
Watching my husband fumble with the button, hisfriend teased, “Wouldn’t it have been in better taste tojust put a few lines in the church bulletin?”
Sense of HumorMy girlfriend wanted me to meet her folks, to
which I hesitantly agreed. “My mother has a greatsense of humor,” I was told. “You’ll get along justfine.”
We met her parents at a local restaurant, and rightaway her mom launched into a string of jokes. I begantelling anecdotes, and soon all four of us were laugh-ing hysterically.
After several minutes passed, my girlfriend noticedthat there was no one seated in our area. “Maybe we’rebeing too loud,” she said.
“Nonsense,” I said, “the waitress is probably askingcustomers if they’d like to be seated in ‘Joking’ or‘Non-joking’!!”
The Right Card A little boy had been pawing over a stationer’s
stock of greeting cards for some time when a clerkasked, “Just what is it you’re looking for? A birthdaygreeting, message to a sick friend, Anniversary or acongratulations to your mom and dad?”
The boy shook his head and answered, “Got anylike a blank report card?”
Baby Wrap Part of my job as a public-health nurse is teaching
new parents how to care for their infants. As I was demonstrating how to wrap a newborn, a
young Asian couple turned to me and said, “You meanwe should wrap the baby like an egg roll?”
“Yes,” I replied, “That is a good analogy.” “I don’t know how to make egg rolls,” another
mother said anxiously. “Can I wrap my baby like aburrito?”
The best substitute for bad manners is fast reflexes.
The Scale Two children went into their parent’s bathroom and
noticed the scale in the corner. “Whatever you do,” cautioned one child to the
younger one, “don’t step on it!” “Why not?” asked the sibling. “Because every time mom does, she lets out an
awful scream!” Very funny Scotty, now beam down my clothes.
School of Agriculture The school of agriculture’s dean of admissions was
interviewing a prospective student, “Why have youchosen this career?” he asked.
“I dream of making a million dollars in farming,like my father,” the student replied.
“Your father made a million dollars in farming?”echoed the dean much impressed.
“No,” replied the applicant. “But he alwaysdreamed of it.”

Pirates Can Be Heroes!During a Sunday trip, the crew of the Black Raven
Pirate Ship encountered, and assisted, a stranded jetskialong with its three passengers. With a line caught inthe drive shaft of the jetski, the small pleasure crafthad overturned and dumped its riders into the water totry to mend the damage. When the Pirate Ship BlackRaven came across the stranded individuals, theyimmediately responded and brought the jetski and thefloating individuals alongside the massive steel hull to
render assistance andoffer help. Theguests aboard wereable to get a firsthand look at howwell trained the crewwas, and one of thepassengers wrote into offer his praise:
Ahoy Mate,Here are the pics I got of your response to the
jetski with the fouled driveshaft. Some a littleblurry, not sure if you could use them in a newsstory or anything but hope you enjoy them any-way. On a side note, I am an old coastie bosunwho spent a lot of time in search and rescue. Iwas so impressed wth the way you and your crewacted, completely calm and professional. Rightdown to keeping the guests calm, and under con-trol. Well done ye scurvy ruffians! A sad day forpiratedom though...

Squeezing Ideas Into Budget CrunchHow do you squeeze management of a city into a
shrunken budget? St. Augustine is generating ideaslarge and small to cover a $2 million shrinkage in its$22 million operating budget.
Ideas ranging from comparison shopping insurancerates (saving $645,000) and workforce attrition andreassignments ($985,000) to retread tires on non-emer-gency vehicles ($15,000) and discontinuing “citybrown” repainting of new vehicles ($5,000).
The August primary elections decided the makeupof the St. Johns County Commission for the next twoyears and one seat on St. Augustine’s CityCommission. Incumbent Ron Sanchez and newcomerJay Morris won the two county seats among allRepublican candidates, while incumbent CityCommissioner Nancy Sikes-Kline won reelection withmore than 50 percent of the vote in a non-partisan raceagainst two challengers.

Grilled Arabian Fish ( Mezgouf) Ingredients:
3 Tbs butter or olive oil (plus 1tbs oil for fish)
2 large onions sliced very thin6 large garlic cloves1 tsp minced The Spice and Tea
Exchange Malasysian Ginger Curry2 tsp The Spice and Tea Exchange Indian Yellow Curry1 tsp The Spice and Tea Exchange Moroccan Blend2 Tbsp tomato paste1 14oz. can diced tomatoes with liquid1/3 cup plus 1 Tbsp waterThe Spice and Tea Exchange Parfume de Sel sea saltThe Spice and Tea Exchange Black Tellicherry Pepper2-3 Tbsp lemon juice1 1/2 lbs. Fish (Whole or Fillets with skin)Lemon Wedges
To Prepare :If using whole fish, scale and gut, remove the head, cut
down the middle and spread open. If using fillets,make sure you have the skin on one side.
Heat butter or oil in sauté pan. Add onions and cook over medium/low heat for about 10
minutes, or until they begin to turn golden. Add garlic and Malaysian Ginger Curry and sauté for 1
minute. Add 1 tsp Indian Yellow Curry, 1/2 tsp Morrocan Blend
and 1 Tbsp of the tomato paste and cook, stirring, for1 minute.
Add tomatoes, 1/3 cup water, salt and pepper to taste and2 Tbsps of lemon juice.
Cook until sauce is thick - keep stirring. Taste, adjust seasoning, add more lemon if desired. Brush or spray grill and preheat. Mix remaining Tbsp of tomato paste with 1 Tbsp water,
remaining Indian Yellow Curry and Moroccan Blend,and a pinch of salt and pepper.
Brush fish with oil and season lightly with salt and pep-per.
Place on grill non-skin side first, cook for 3-4 minutes. Turn onto skin side. Spread second tomato paste mixture over fish. Continue to grill until done (another 5-7 minutes for thick
fillets) and fish is flaky. It's fine if the skin get black-ened. Make sure tomato paste topping doesn't burn.
Put some of the onion-tomato sauce on the platter. Serve fish over sauce with remaining sauce on the side.
