Cape Coral looked so beau-tiful shining in the sun as wecame down the CaloosahatcheeRiver on our recent mailboattrip that we decided we wouldvisit this new and much talkedof dream city; ~ - - -

So we accepted theirfree fun tour and were pickedup at 8 a.m. on our own doorstep by a most pleasant gentle-man who drove us from Sani-jel to Cape Coral a tripwhich, by the way, will be amere hop-skip-'n-jump when thenew Cape Coral bridge is com-pleted around January.

As soon as we arrived, wewere whisked into a plane whichtook us on a bird's eye tourof the Cape. It really is amaz-ing, especially when one con-siders that it was mainly graz-ing pasture just four yearsago. Gulf American Land Corp-oration has planned it so thatthere are many waterfront homesites, as well as parkways andstreets.

After we landed, we weretaken for a ground tour andadmired all the lovely homesand model houses. The newbusiness section is growing, andthere is an impressive yachtclub, complete with yacht basinand marina.

Next stop was the NautilusRestaurant, where we enjoyeda leisurely lunch. We even bookeda weekend at the new poshCongress Inn Nautilus Motel,so we could get a taste of "BigCity" living for a day or so.

They delivered us back toour own doorstep after a de-lightful day at one of Florida'snewest waterfront wonderlands

with Cape Coral as our host.

CASTAWAY PARTY

Castaway's Restaurant re -opened Thursday, November 14,with an Island party. Roy andAnita Webb served their usualdelectable menu (from which youchoose what you want) to over200 Islanders and a few visi-tors—and it was all on thehouse.

This was one of the mostneighborly and gracious openhouse affairs that the Islandshave ever seen. The Webbsserved and smiled and smiledand served 'til way past usi^alclosing time and until theirguests were just about to pop.

We all came away feelingthat we wouldn't eat again forat least three days, but wedid—and at Castaway's too!

By the - way, we were soentranced with all that lovelyfood that we almost forgot totell you about the scrumptious"new look" of the dining room.It really is lovely—a perfectsetting for a perfect dinner.

CHOW TIME

Depending on how long you'vebeen here, you may or maynot k~ wthat some of the world'sbest ,,uoks live on our Islands. When space permits, the Is-lander plans to sneak some se-crets away from them and giveyou the recipe. Here's one that'sbeen making quite a hit at par-ties here and there. It's called"Shew pye Gulf" or ba'rbequedspare ribs. /

6 tablespoons honey6 tablespoons vinegar1 tablespoon sugar6 tablespoons soy sauce2 cloves garlic, minced.1/8 teaspoon powdered ginger1 1/2 cups stock or 2 bullion

cubes dissolved in1 1/2 cups boiling water2 tablespoons sherry3 lbs. spareribs

Combine in a bowl everything(except the spareribs) and mixwell. Cut the spareribs intoindividual ribs (or servings)and place them in the bowl.Spoon the sauce over the ribsfor at least three minutes andmarinate at room temperaturefor at least three hours, bast-ing frequently.

Remove ribs from marinadeand place them on a flat roast-ing pan and roast in a 350oven for one hour or until done.Pour off fat as it accumulatesin the pan—at least four timesduring the roasting period—andat the same time, baste theribs with the marinade . Whenproperly roasted, the ribs willbe crisp, but not dried out.

One three pound rack ofribs is enough for four to sixpeople as an- appetizer if theyare to be the main course, usetwo racks of ribs and serve

with rice. The quantity of marinade in

this recipe is sufficient fortwo racks.

WILD RECIPE FOR TAME RICE

1 medium or two small onions1/2 cup of processed rice (such

as Uncle Ben's) that has tobe cooked, but does not haveto be rinsed during cooking

water, salt, pepper & butter

Peel and chop onion coarsely.Put in heavy-bottomed pan withrice, water, butter, salt and pep-per to taste. Cover and cookover low heat until water isdown to the level of the rice.Uncover and cook until dry(But don't let it scorch.) Serve. This should be enough for fourto five persons.

"Born more years ago thanI care to recall in Perth, Scot-land. Spent the first 12 yearsof life there, six at St. And-rew's School in Edinburgh. Cameto the U.S.A. with an aunt...buttwo years later, at the insist-ance of my maternal grandmoth-er who detected some 'alienYankee habits,' I was hustledoff to His Majesty's Dominionof Canada. Graduated from Uni-versity of Toronto, Trinity Col-lege, where I was organist forsix years.

Ordained to the priest-hood in Grace Church, Brant-ford and remained in the Can-adian city for ten years. WasDirector of War Services from'39 to '44. Accepted a call toSt. John's Church, Milwaukee in1946 and in 1950 was appoint-ed Canon Precentor of the Cath-edral. This, of course, is justa hi-falutin' title for nothingmore than being able to cater-waul louder than the other Breth-ern—maybe being able to handletemperamental Prima Donnashelped a bit.

To the Islander;

Enclosed is my check.,.for oneyear's subscription to the Is-lander. I was on Sanibel justbefore the bridge opened, havingvacationed there twice before, and I am interested in readinghow the bridge might affectSanibel. I shall miss the ferryand hope the solitude and ser-

'enity of Sanibel will be therewhen I next return. I enjoythe Ding Darling Memorial andthe interesting bird life on San-ibel—of course the shell is theprime interest—but even whenthe shelling is poor, I enjoythe relaxing way of the Island. So I hope we "foreigners" donot spoil the Island by flock-ing there and disrupting yourway of life.

BLUE FISH'N BUGS

Mrs. James Ealy and Mrs.Harold Esty Jr . went a-fishina week or so ago with Capt.Jake Stokes and came homewith 60 Blues. They had a lotof fun that day, even if theyhadn't had a lot of fun the nightbefore.

Seems they were in Reis-inger's Tavern when an inquisi-tive palmetto bug decided to ex-plore prohibited areas of Mrs.Ealy. She started to do theTwist—figured out a number ofinteresting new steps, too—andhad just started into a striproutine that would have raisedthe roof when Mr. PalmettoBug gave up the battle and tookoff, coward that he was. Themoral being that even the bugson our Islands want to makefriends.
