Award winning singer/songwriter Peter Katz will perform at the Centre Street United Church this Saturday (Feb. 10) as part of the Shaunavon Arts Council concert series.
Over the past decade, Katz has seen his albums debut at #1 on the iTunes singer-songwriter charts; he’s shared the stage and studio with the likes of Academy Award Winner Glen Hansard (Once, The Swell Season), Juno Award-Winners The Good Lovelies, Polaris-Prize nomi-nated Melissa McCelland (Whitehorse) and the Legendary Garth Hudson from The Band.
Katz has also toured all over the world, regularly playing to capacity crowds, and has managed to build an impressive fan-base of loyal
listeners, selling over 25,000 cop-ies of his discs mostly from the stage, one show at a time.
Never content to sit still for long, Peter Katz has his eyes firmly set on the future.
“I’m in a different place than I was when I started 10 years ago,” he stated in a bio describing work on his album, ‘We Are The Reckoning.” “I didn’t really know what I was getting myself into and I maybe didn’t always put my focus in the right place. Now I know what this thing is, I know the relentlessness that’s required, I know it’s not a race, and I know that the music has to come first. I feel like I finally did that with this record. I took my time. I shook myself up, threw myself into unfa-miliar territory and took some big risks. Chicken Andouille Gumbo
12 cups water 3 pounds chicken parts 2 tablespoons vegetable oil 1 1/2 pounds okra 1/2 cup vegetable oil 1/2 cup all-purpose flour 1 pound andouille sausage, sliced 1 (28 ounce) can Italian-style whole peeled tomatoes 1 green bell pepper, chopped 2 stalks celery, chopped 2 cloves garlic, minced
combine water and chicken in large pot. Bring to boil. Reduce heat and simmer until chicken is tender, about 1 hour. Using tongs, transfer chicken to strainer and cool, saving cooking liquid. Remove meat from bones in pieces. Heat 2 tablespoons oil in heavy skillet over medium heat. Add okra and cook until no longer sticky, stirring frequently, about 20 minutes; set aside. Stir flour and remaining 1/2 cup oil in heavy large Dutch oven. cook over medium heat until deep golden brown, stirring frequently, about 6 minutes. Add 4 cups reserved chicken cooking broth, okra, andouille sausage, tomatoes with their juices, bell pepper, celery, garlic, bay leaf, salt, thyme, basil, cayenne, and pepper. cover partially and simmer until thickened, about 1 1/2 hours. Spoon off any fat from surface of gumbo. Add chicken and file pow-der to gumbo and simmer gently 15 minutes. (If preparing ahead, cover and refrigerate. Bring to simmer before serving.) Mound rice in shallow bowls if desired. Ladle gumbo over and serve.
