Ice cream is different depending on the country of origin. American ice cream has more milk and less cream than Eu-ropean variations. It contains milk (condensed, dry or fresh) and cream, sugar, flavorings and air. The US Government al-lows air to constitute up to 50% of ice cream's total volume.

Frozen Custard Ice cream made with an egg-custard base (at least 1.4% egg yolks), which gives the dessert body and silkiness. Must contain a minimum of 10% milkfat and not weigh less than 4.5 pounds per gallon.

Frozen Yogurt A mostly commercial product, containing basically the same ingredients as ice cream but with yogurt added and a lower percentage of butterfat.

Milkshake A sweet, cold beverage which is made from milk, ice cream or iced milk, and flavorings or sweeteners such as fruit syrup or chocolate sauce.

Slushie An icy freeze made with a neutral slush base (sweetened or unsweetened) and a variety of flavors.

Smoothie A blended and sometimes sweetened beverage made from fresh fruit (fruit smoothie) and in special cases can contain chocolate or peanut butter. In addition to fruit, many smoothies include crushed ice, frozen fruit, honey or contain syrup and ice ingredients.

Sorbet This frozen treat contains fruit juice or flavored water and sugar. It does not contain any dairy.

Cake Cone Is a dry, cone-shaped pastry, usually made of a wafer similar in texture to a waffle, which enables ice cream to be held in the hand and eaten without a bowl or spoon.

Waffle Cone Waffle cones are made with a high grade blend of cake and pastry flours, dark brown sugar brings which brings a sweeter taste and shortening. (The more shortening a cone has the shorter the life).

Ice Cream While in storage soft serve ice cream should be kept at 35°F and hard ice cream should be held at -10°F. Soft ice cream has a shelf life of 7-10 days.

For service hard ice cream cabinet temperature should be raised to +10 degrees for easier scooping.

Chocolate SyrupsChocolate syrup is ready to use . However it can be diluted with water to get right consistency; if too thick under refrigeration. Should be refrigerated at 35°F after opening.

Fruit ToppingsStore at room temperature until opened. Once opened seal and put in cooler at about 35°F.

Hot FudgeBefore opening soak in hot water for 1 hour. Serve in warmer at 140°F. Check water level in warmer as fudge must be steam heated or it will scorch. Turn off over night. A crust forms over top (this protects from mold & bacteria) that will dissolve when reheated! It can be diluted with 1 - 2 oz. of water for right consistency. Refrigeration is not necessary. If serving hot butterscotch or caramel follow same directions.

Peanut Butter & Chocolate S'More Parfait

Layer 1 oz milk chocolate fudge, 1 oz peanut butter topping, 5 oz ice cream, 1 oz peanut butter topping, 1 Tbsp graham cracker crumbs, 1 oz marshmallow topping, 1 oz peanut butter topping, 4 oz ice cream, 1 oz milk chocolate fudge and 1 Tbsp graham cracker crumbs in large chilled glass. Top with Reddi-wip and shaved chocolate.

Pineapple Upside Down ShakeLayer caramel, pineapple and cherry toppings in bottom of large chilled glass. In blender, combine ice cream, milk and vanilla syrup; puree until smooth. Serve in shake glass; top with Reddi-wip and cherry.

Salted Caramel Shake Combine sea salt and sugar crystals in small bowl; set aside. In blender, combine ice cream, milk and 3 oz caramel topping; puree until smooth. Dip rim of large chilled glass in caramel topping and roll edge in salt and sugar mixture. Serve in garnished shake glass; top with Reddi-wip and additional salt and sugar mixture.

Italian Ice Cream SandwichesIn a large chilled bowl, fold orange zest, 1/4 cup pistachios, 1/4 cup chocolate, and 1 tsp. cinnamon into ice cream until blended. Cover and freeze for about 1 hour, or until firm. In a small bowl, mix remaining pistachios and chocolate. Sandwich 1/2 cup of Breyers Vanilla Ice Cream between warm brioche halves. Sprinkle pistachio mixture along ice cream edges and serve immediately.
