IRISH SODA BREAD
FEATURED RECIPE
With a history spanning more than two centuries, soda bread is a traditional Irish specialty. The first loaf, consisting of little more than flour, baking soda, salt, and sour milk, made its debut in the mid-1800s when baking soda found its way into Irish kitchens. At the time, bread-making in rural Ireland was performed domestically using minimal ingredients, equipment, and experience. Providing a quick, convenient, and reliable leaven, baking soda was simple to work with and easy to store. It also produced a better-tasting bread than what was originally available in the 19th century, making soda bread a staple of the Irish diet.
Today, soda bread is enjoyed throughout the world. Many take pleasure in its tangy flavor, dressing it with butter and preserves for breakfast, eating it with cheese for a light snack, or serving it as an accompaniment to a celebratory feast.
• 4 cups flour, plus more for dusting • 3 tablespoons granulated sugar• 2 teaspoons baking soda• 1 ½ teaspoons cream of tartar• 1 ½ teaspoons kosher salt• 1 ½ cups buttermilk• ½ stick unsalted butter, melted • ½ cup currants
Total Time: 55 min: Prep: 15 min | Cook: 40 minLevel: Easy | Yield: 6 servings
Preheat the oven to 400 F.
Whisk together the flour, sugar, baking soda, cream of tartar and salt in a large mixing bowl.
Stir in the buttermilk and 3 tablespoons of the melted butter, using a fork, then stir in the currant combined, the dough should come together. Turn the dough out onto a floured surface. Knead g a few turns until the dough can be shaped into a 6-inch round (do not over-knead).
Place the shaped dough into a cast-iron skillet or sheet tray. Cut an “x” into the top of the round l knife.
Bake until the center has cooked through (testing with a skewer), about 40 minutes. Slather with remaining tablespoon melted butter.

Try to think of a women-only sport. You could argue for dance teams, synchronized swimming and cheer leading (though there are male cheerleaders). What about an unchoreographed contact sport, right here in Arkansas?
According to their website, Central Arkansas Roller Derby (CARD) is an all-female, flat track roller derby league based in Little Rock that is made up of women ranging from 20 to 40 years of age. The basics of the game are as follows:
Each team fields up to five skaters per two-minute playing segment, called a ‘jam.’ Blockers play both offensive and defensive roles in a defined ‘pack’ on the oval track. Jammers score points for their team by lapping opposing players. Skaters may be penalized for committing a foul. Teams skate short while they have one or more players serving a penalty. A team’s full lineup for a jam consists of one Pivot, three Blockers and one Jammer.
CARD is one of more than 500 flat track roller derby leagues worldwide, according to the Women’s Flat Track Derby Association (WFTDA). Two teams, the Rock-n-Renegades and the Big Dam Rollers, have members from all over central Arkansas and have regular bouts (games) at Skate World in Little Rock.
Amy Westerman, a Jammer for the Big Dam Rollers team, says the sport is definitely growing in number of leagues – and in number of spectators. “There are rumors that roller derby will be added to the X Games soon! I believe the reason for this gain in momentum has to do with the fact that people are realizing this is a real sport. The roller derby of today is very different from the fake televised roller derby of the 1970s. This sport is full of rules, structure, and is taken seriously by everyone who plays.”
Besides burning calories and toning muscles, roller derby introduces you to more than 40 friends from all walks of life – lawyers, teachers, students, chefs, stay-at-home moms and more. “You quickly learn that you can befriend and support people who have different views and opinions because these women are your team. They have your back.”

This Valentine’s Day you will probably either send or receive a Valentine from someone. More than a billion are expected to be given away in the United States alone. But just like many of our holidays, there’s a lot more behind it than just cards and gifts. Throughout the world, February 14th is often celebrated as “Valentine’s Day.” What is the truth about “Saint Valentine’s Day”? And what did Saint Valentine have to do with love notes and affection? The history of Valentine’s Day is obscure and shrouded in mystery due to various fanciful legends.
In the early martyrologies, three different Saint Valentines are mentioned, all sharing February 14 for a feast day. Unfortunately, the historical record is sparse and which St. Valentine Pope Gelasius I intended to honor remains a mystery. Most scholars believe that the St. Valentine of the holiday was a priest who attracted the disfavor of Roman emperor Claudius II around 270.
In the third century, Emperor Claudius II Gothicus ruled the Roman Empire. He was nicknamed Claudius the Cruel because of his harsh leadership and his tendency for getting into wars and abusing his people. In fact, he was getting into so many wars during the third century that he was having a difficult time recruiting enough soldiers. According to legend, Claudius II had prohibited young men from marrying, claiming that bachelors made more efficient soldiers. Valentine continued to secretly perform marriage ceremonies but was eventually apprehended by the Romans. It is said that he was arrested, condemned to death for his faith, beaten with clubs, and finally beheaded on February 14, AD 270. Archaeological digs in the 1500s and 1800s have found evidence of the tomb of St. Valentine. His relics now reside in the Church of St. Praxedes.
The second St. Valentine was Bishop of Interamna (located about 60 miles from Rome). According to legends, he was imprisoned by Claudius and fell in love with the daughter of his jailer. Before he was executed for refusing to renounce his religion, he allegedly sent her a letter signed “from your Valentine”. The third Valentine suffered martyrdom in Africa. However nothing further is known about this Saint.
Others claim that the Christian church may have decided to place St. Valentine’s feast day in the middle of February in an effort to “Christianize” the pagan celebration of Lupercalia. From Feb. 13 to 15, the Romans celebrated this fertility festival.
To begin this festival, young girls’ names were written on slips of paper and thrown into jars to be picked out by the boys. Chooser and chosen would then be partnered for the duration of the festival. Such arbitrary pairing often resulted in lasting relationships. Later, members of the Luperci, an order of Roman priests, would sacrifice a goat, for fertility, and a dog, for purification. They would then strip the goat’s hide into strips, submerge them into the sacrificial blood and take to the streets, gently slapping women with the hide. Surprisingly enough, Roman women welcomed the touch of the hides because it was believed to make them more fertile in the coming year. While Lupercalia survived the initial rise of Christianity, Pope Galesius outlawed the festival towards the end of the 5th century. The lottery system was then banned as being un-Christian and the Pope did his best to make people forget about other un-Christian ideas such as fertility. He then decided to dedicate the Eve of Lupercalia to the long-dead priest, Valentine.
When looking back historically, most people will cite Christianity for Valentine’s Day’s origins. However, the first recorded instance of associating Valentine’s Day with romantic love comes from Geoffrey Chaucer in 1382, from his “Parlement of Foules“ (Written to honor the first anniversary of the engagement of King Richard II to Anne of Bohemia). His poem states,
“For this was Saint Valentine’s Day, when every bird cometh there to choose his mate.”
In medieval France and England it was believed that birds mated on February 14. Hence, Chaucer used the image of birds as the symbol of lovers in poems dedicated to the day. In Chaucer’s “The Parliament of Fowls,” the royal engagement, the mating season of birds, and St. Valentine’s Day are related.
Over the centuries, the holiday evolved, and by the 18th century, gift-giving and the exchange of hand-made cards on Valentine’s Day had become a common tradition in England. Hand-made cards of lace and ribbons eventually spread to the United States but did not become widespread until the 1850s, when Esther Howland began mass producing them. Today of course, Valentine’s Day has become a booming commercial success. According to the Greeting Card Association, 25% of all cards send each year are Valentines.
The Christian legends, the memories of the Roman Lupercalia & folklore beliefs in Britain and France that the 14th of February marked the beginning of the mating season amongst birds have ensured that this day would persist in the imagination as a day of love.

But few St. Patrick’s Day revelers have a clue about St. Patrick. “The modern celebration of St. Patrick’s Day really has almost nothing to do with the real man,” said classics professor Philip Freeman of Luther College in Iowa. So who was the man behind St. Patrick’s Day?
For starters, the real St. Patrick wasn’t even Irish. He was born in Britain around A.D. 390 to an aristocratic Christian family with a townhouse, a country villa, and plenty of slaves. What’s more, Patrick professed no interest in Christianity as a young boy. At 16, Patrick’s world turned upside down. He was kidnapped and sent overseas to tend sheep as a slave in the chilly, mountainous countryside of Ireland for seven years. During these horrible times, he got a religious conversion while he was there and became a very deeply believing Christian.
According to folklore, a voice came to Patrick in his dreams, telling him to escape. He found passage on a pirate ship back to Britain, where he was reunited with his family. The voice then told him to go back to Ireland. He gets ordained as a priest and returns to Ireland to convert the Irish to Christianity. His work in Ireland was tough—he was constantly beaten by thugs, harassed by the Irish royalty and admonished by his British superiors. Perhaps the most well known legend is that he used the three leaves of a native Irish clover, the shamrock, to explain the Christian holy trinity: the Father, the Son, and the Holy Spirit.
After he died on March 17, 461, Patrick was largely forgotten. But slowly, mythology grew around Patrick, and centuries later he was honored as the patron saint of Ireland. Since around the 9th or 10th century, people in Ireland have been observing the Roman Catholic feast day of St. Patrick on March 17. Interestingly, however, the first parade held to honor St. Patrick’s Day took place not in Ireland, but in the United States. On March 17, 1762, Irish soldiers serving in the English military marched through New York City. Along with their music, the parade helped the soldiers and fellow Irishmen serving in the English army reconnect with their Irish roots.
In 1848, several New York Irish Aid societies decided to unite their parades to form one official New York City St. Patrick’s Day Parade. Today, that parade is the world ‘s oldest civilian parade and the largest in the United States, with over 150,000 participants. Each year, nearly 3 million people line the 1.5-mile parade route to watch the procession, which takes more than five hours. Boston, Chicago, Philadelphia and Savannah also celebrate the day with parades involving between 10,000 and 20,000 participants each.
Sometime in the 19th century, as St. Patrick’s Day parades were flourishing, wearing the color green became a show of commitment to Ireland. In 1962 the show of solidarity took a spectacular turn in Chicago when the city decided to dye a portion of the Chicago River green. The tradition started when parade organizer Steve Bailey, head of a plumbers’ union, noticed how a dye used to trace possible sources of river pollution had stained a colleague’s overalls a brilliant green. Why not use the dye to turn the whole river green on St. Patrick’s Day, Bailey thought. So began the tradition.
Today, people of all backgrounds celebrate St. Patrick’s Day, especially throughout the United States, Canada and Australia. Although North America is home to the largest productions, St. Patrick’s Day is celebrated in many other locations far from Ireland, including Japan, Singapore and Russia.
In modern-day Ireland, St. Patrick’s Day has traditionally been a religious occasion. In fact, up until the 1970s, Irish laws mandated that pubs be closed on March 17. Beginning
in 1995, however, the Irish government began a national campaign to use interest in St. Patrick’s Day to drive tourism and showcase Ireland and Irish culture to the rest of the world. Today, approximately 1 million people annually take part in Ireland ‘s St. Patrick’s Festival in Dublin, a multi-day celebration featuring parades, concerts, outdoor theater productions and fireworks shows.

The best thing about this part of your workout is that you can do your cardio exercise around your neighborhood, on a treadmill at home, or at the gym if you choose.

Rock Town Distillery is the first legal distillery in Arkansas since prohibition. Phil Brandon opened Arkansas’ only distillery in 2010 after becoming a casualty of Verizon’s takeover of Alltel. “I was working at Alltel, enjoying life. Alltel was doing great, and then Verizon bought us. Suddenly it became very apparent that a lot of jobs were going away. Mine was one of those.”
If Brandon wanted to stay in his career field, he’d have to move out of state. But he refused to leave his Arkansas roots. With an appreciation for whiskey and an enterprising spirit, he founded Rock Town Distillery. “It was just something that I had a passion for,” he said. After doing a lot of research, experimenting with recipes, and remodeling a 1950s-era warehouse, he opened the distillery in 2010, and already his products have won awards.
The main goal for Brandon was to make sure ever y possible element used to make Rock Town’s spirits comes from Arkansas. The white oak barrels the distillery uses come from a fourth-generation company in Hot Springs. “The wheat we use is soft bread winter wheat that’s farmed in southeast Arkansas. The corn we use is also Arkansas corn,” Brandon said. “For our bourbon we use corn and wheat, and for our vodka and gin, it’s all wheat. In the gin, we use seven organic botanicals, and we vapor infuse the gin to give it the juniper flavor that makes it distinctly gin,” Brandon said. “It’s a different flavor profile than you can get anywhere else, but that’s what we want to be — we want to be different.”
Everything done at Rock Town is similar to the old days when distilleries were all just farm distilleries, and they distilled what they had left over at the end of the year. If they had grains they hadn’t sold, they would distill them. That way they could have something to drink throughout the winter.
Visitors can tour the distillery 7 days a week to discover the process of making spirits from grain to glass. On tour, guests learn how small batches of Arkansas-grown wheat and corn are ground, cooked, and fermented. Gin and vodka can be distilled relatively quickly, but Rock Town’s bourbon is aged six to eight months in oak barrels to produce its distinctive flavor and golden hue. “When the whiskey goes in the barrel, it’s clear and at the end of six months or so, it’s a nice golden brown,” Brandon said.
With the distillery rapidly growing, Rock Town devised the ingenious idea of bottling parties. Whenever Rock Town is ready to bottle a new batch of one of their spirits, they send out a mass e-mail, and the first ten to twelve respondents are invited to partake in a night of bottling, pizza and cocktails. Phil likes that the bottling parties are not only a creative answer to having a small staff of four, but also serve as community builders. Having been born and raised in Little Rock, community is important to Phil. “One of the things about our bottle is we hand sign every bottle. So we put a batch number, a bottle number and a name. We let people come in and help us, and they get to sign bottles as they go out the door, so they can go out to a bar or restaurant and say ‘Hey, that’s my bottle on the shelf. I did that.’”
In March 2013, Rock Town was awarded the rating of “Exceptional – Gold Medal” for both our Arkansas Young Bourbon and our Hickory Smoked Whiskey by the highly respected Beverage Tasting Institute in Chicago.
On March 21, 2013, Rock Town Bourbon was awarded Best Bourbon (no age statement) at the World Whiskies Awards in London, England. The World Whiskies Awards had more than 300 whiskies battling it out during three intensive blind tasting rounds, for the coveted title of ‘2013 World’s Best Whiskies’.
On March 24, 2013, Rock Town Bourbon won the top award of Double Gold Medal in the ‘Small Batch Bourbon up to 10yrs Old’ category at the San Francisco World Spirits Competition. More than 1,400 spirits from 63 countries were judged this year.
“Receiving these accolades really is a testament to the hard work, dedication and craftsmanship we put into our whiskies,” said Phil Brandon. “We’re very proud of the fact that we use locally sourced Arkansas grains to make world class whiskies”.
Rock Town Distillery now offers two types of Vodka, Hickory Smoked Whiskey, Bourbon Whiskey, Gin, Arkansas Lightning (Moonshine made right!), and a variety of flavored Lightning including Apple Pie, Peach, Blackberry Cobbler, Grape, and Hot. Rock Town products are now available in 7 states as well as in the United Kingdom. While the Rock Town staff is definitely keeping themselves busy, “We are still making it happen one day at a time,” Brandon said. “But when you decide to pursue something you want to be passionate about, working 12 hours a day isn’t so bad because it’s what you want to do.”
