As the inventor, I am thrilled to say that your fun, delicious and healthy journey is about to begin. It all starts in your freezer with some frozen bananas. Bananas are a perfect food in many ways. Not only are they fat free with no sodium or cholesterol, but they contain a high dose of potassium, which is an essential ingredient in keeping your heart and nervous system in good shape. Bananas are also a great source of dietary fiber. Being healthy never tasted so good!

You’ll find more than a dozen recipes in this book, but your creativity can take you wherever you want to go—Mixed Berry Yonanas, Cherry Chocolate Yonanas and even a Peanut Butter & Jelly Yonanas. After years of experimenting I can share with you an important tip—start with ripe bananas. Cheetah-spotted bananas will enhance the flavor of your Yonanas significantly. I have found that Yonanas is a tasty way to utilize those ripe fruits that would normally garner a scowl from your finicky five-year old (or that finicky 40-year old for that matter).

My passion for healthy foods led me to the natural foods industry, a catering business and culinary school. After creating programming to promote better nutrition for school kids across the country, I realized that good food makes life great and good food that is healthy makes life even better. When you make Yonanas, you are transforming bananas and other fruits into a powerful and life-enhancing treat. Think of it as healthy ice cream that you can eat at breakfast, lunch, dinner or anytime. That’s just bananas you say? No that’s Yonanas!

PUMPKIN PIEIngredients: 2 frozen ripe bananas, 3 oz frozen spiced pumpkin (recipe below), 1⁄3 cup ginger snap cookies (crumbled)

1. Insert one frozen banana2. Add 3 oz frozen spiced pumpkin (3 frozen

cubes)3. Insert second frozen banana4. Stir in bowl to combine5. Sprinkle crumbled ginger snap cookies on top

SPICED PUMPKIN CUBESIn a bowl combine one 15 oz can pumpkin puree with 1 tsp vanilla extract, 1 tsp ground cinnamon and 1⁄2

tsp ground nutmeg. Spoon spiced pumpkin puree into ice cube trays and freeze. One spiced pumpkin ice cube is approximately 1 oz. Makes approximately 15 cubes.

KEY LIME Ingredients: 2 frozen ripe bananas, 1 tbsp lime zest (zest of one lime) 1⁄3 cup cinnamon graham crackers (crumbled)

BLACKBERRY VANILLA BEANIngredients: 2 frozen ripe bananas, 2 vanilla beans, 3⁄4 cup of frozen blackberries, 1⁄4 cup of pistachios (crushed)

1. Split 2 vanilla bean lengthwise and scrape seeds from vanilla bean

2. With a knife spread the vanilla seeds over one frozen banana

3. Insert one frozen banana4. Add 3⁄4 cup frozen blackberries5. Insert second frozen banana6. Stir in bowl to combine7. Top with crushed pistachios

other great ideasSTRAWBERRY-KIWI YONANAPOPSIngredients: 4 frozen ripe bananas, 1 cup frozen strawberries, 1 kiwi peeled and sliced into 4 (1⁄4 inch) slices1. Alternate inserting frozen bananas and

frozen strawberries into Yonanas maker to create Strawberry Yonanas (see page 5)

2. Scoop strawberry mixture into a pastry bag with round tip or a freezer bag (If using a freezer bag cut tip of corner after filling with Yonanas)

3. Pipe Yonanas into Yonanapop molds filling 3⁄4 of the mold

4. Gentle tap filled Yonanapop molds on counter-top to release air bubbles

5. Insert sliced kiwi directly into each mold6. Fill the rest of the molds with Strawberry

Yonanas and place plastic sticks into molds7. Freeze overnight8. To release Yonanapops, tip the molds on

its side and run the molds under warm water for 10 seconds and Yonanapops should remove easily
