Energy Bombs 150g pitted dates 2tbsp coconut oil 125g ground cashews* 25g sesame seeds 2 tsp raw cacao powder Cook the dates on a low heat in about 150ml water until they are soft and gooey. They should break down really easily so you can just mash them up with a spoon. Whilst still warm mix in 2 tbsp coconut oil and stir through until melted. Take off the heat and scrape into a mixing bowl. Add the cashews (or alternative), sesame seeds and cacao powder and mix together thoroughly. When mixed put in the fridge for about an hour to chill. Remove and roll into walnut size balls (should make about 20). Roll the balls in desiccated coconut or sesame seeds according to taste. *grind in a blender but don’t worry if not perfect! 2 tsp raw cacao powder
