I had the most wonderful trip of a lifetime starting Friday, October 25th. Brenda, a very close friend of the family, picked me up after work and off we mo-tored to Merrimack, NH. We arrived there at 10:00 PM, tired, but happy. We decided to stay in a motel instead of at my son Michaels, because he has a house full of company and Brenda and I are two peas in a pod, early to bed & Early to rise!

We spent all our waking hours with the family and I got to hold my newest Great Granddaughter, Maddy, born September 16th, played with the boys, Brody and Gavin, both four. Bayleigh, my other Great Granddaughter is a very special young lady of six, so we just sat and talked and laughed. She told me all about school and her teachers.

Besides having so much fun with the Great Grandchil-dren, my precious Daughter-in-Law, Deb, went out of her way to make me all the special Syrian foods that I crave. Have a wonderful family in NH, but don’t have to go that far. I have a great Daughter, Ginny, and hubby, Mitch and son Brian in Mertztown. Arriving home safe and sound on Monday, October 28th. The trip was such a success that I’m already to go again.

P.S. Deb was also thoughtful and sent blueberry buckle and cookies to the staff who really appreciated her efforts. They were delicious Deb. I know because your kind Mother-in-Law shared some with me. That is what’s nice being her younger “sister”!

What a change in prices! Halloween is over and now we think of Thanksgiving. Last year on November 16th we had 6-8 inches of snow! I’m so thankful for everything.

MEMORIES OF CHRISTMAS LONG AGO. When I was a little girl, I came to live with my Grandmother who lived next door to us. My Mother got very sick . I lived with my Grandmother from the age of six until the age of fifteen. Unlike today, we didn’t see the Christmas tree until Christmas morning. My Brother Floyd, and my two cousins, Cathy and Sam enjoyed every Christmas with us. Under the tree were many gifts for all of us. One year my Grandmother got me a doll carriage and a beautiful doll. When I was twelve my parents got me a beautiful gold ring with an amethyst, which I still have to-day. The last gift that I ever got from my Grandmother was a class ring. I graduated six months later from Liberty High School. She had passed away four days after Christmas on my Father’s birthday. Bethlehem was lit with many lights on both sides of the city. On the South Side many of the streets had lights that were strung across the streets from curb to curb. This was done at each intersection. The streets included Third Street, Fourth Street, Wyandotte, Main, and New Streets. Also the bridges, the Hill to Hill Bridge and the Heights Bridge. On North Bethlehem, New Street and Main Street to Bridal Path Road. Union Blvd. and Broad Street from Center Street to the street that separates Bethlehem and Allentown. Merry Christmas and Happy New Year to all. P.S. Above all is the Beautiful Star that shines brightly on South Mountain. During the Easter Season the star becomes a Cross. Also, we have the Beautiful Christ-mas from the Bach Choir.

Our volunteers are such a wonderful gift to Cedarbrook. Our residents love to see their smiling faces and enjoy visiting each volunteer. They add so much joy in to the days of our residents and staff. Cedarbrook is so thankful to have each and every volunteer. Be the gift of love and happiness to a Cedarbrook resident. Volunteer.

Cedarbrook Allentown is looking for volunteers to help in our Gift Shop. Mondays or Thursdays every week from 12:30-3:30. Just helping our residents with their purchases. Register experience is helpful. Training will be provided.

Volunteers are needed to transport residents to in-house activities, entertainment, and church. This is generally a 2 hour shift. Days, evenings, or weekends.

Santa Photos – Tuesday, December 10th, volunteers are needed 1:00-3:00

Meet our staff and residents at Walmart for a shopping trip or at the Wind

Creek Casino for a fun day out. Call for dates/times. Escort residents to our in-house beauty shop, Tuesdays 9:00-12 noon.

Residents love being pampered by our beauty shop and your help would mean so much to them.

Tuesday evening programs such as: games, crafts, or music, scheduled

6:30 - 8:30

Saturday afternoons a wide variety of activities and entertainment 1:30-3:30

Sunday afternoons for church 1:30-3:30

Merry Christmas Everyone!!! What an exciting time of the year! This is the time of year that we celebrate Immanuel - Christ with us! We read in Luke 2:8-12, “There were shepherds living out in the fields nearby, keeping watch over their flocks at night. 9An angel of the Lord appeared to them, and the glory of the Lord shone around them, and they were terrified. 10 But the angel said to them, “Do not be afraid. I bring you good news that will cause great joy for all the people, 11Today in the town of David a Savior has been born to you; He is the Messiah, the Lord. 12This will be a sign to you; You will find a baby wrapped in cloths and lying in a manger” (NIV). Why is this good news? Who is this joy for? Is it just for the rich, the healthy, the employed, the homeless, the outcast? It is good news for everyone, no matter your walk of life. No matter your situation, this good news is available to you! The shepherds could not wait to share this news; the good news that the Messiah has come for all people. Just as God promised! How amazing that God Himself would come to His own creation in the form of a man, a vulnerable defenseless child at that. Jesus was not born to royalty in a beautiful palace, rather, He was born to a young teenage girl in a barn. Picture this scene in your mind. Jesus, surrounded by animals, the smell of manure in the air, laying in a common feeding trough, and this is the long-awaited Messiah! Scripture tells us that Jesus did not come to be served but to serve. We see this from His humble birth to His death on the Cross. This is true love, “For God so loved the world that he gave his one and only Son, that who-ever believes in him shall not perish but have eternal life” (John 3:16). This is what we celebrate at Christmas. This is the reason we can have joy and praise upon our lips. The greatest gift we could ever have this Christmas is Jesus, Christ in us, the hope of Glory! (Allentown, PA)- Cedarbrook Senior Care and Rehabilitation Center held its first ever “Celebrating Excellence” Awards Ceremony today where it honored three of its outstanding staff members – a CNA (Certified Nursing Assistant) who won a distin-guished statewide award and two staff members who won internal C.H.O.I.C.E.S Awards, which are named after Cedarbrook’s mission of “A Community with Heart Offering Individualized Care and Excellent Service”. The C.H.O.I.C.E.S awardees were James Leibensperger, who works in environmental services and Amber Surman, a medical social worker. James works at the Cedarbrook Allentown facility and Amber works at the Cedarbrook Fountain Hill facility. They both nominated by their peers for the award. The ceremony was capped off with awardee Lindsey Ruff receiving a statewide honor. Ruff was recently selected by the Pennsylvania Coalition of Affiliated Healthcare and Living Communities (PACAH) as the CNA of the Year in Pennsylvania. PACAH represents over 143 organizations, including County nursing homes, Veterans homes, nonprofit facilities, private homes, and other businesses throughout the state. “Cedarbrook is blessed with caring and dedicated staff like Lindsey, James, and Amber. It is no coincidence that the awardees work in positions that are very involved in the lives of our residents on a daily basis despite being in very different depart-ments. It takes excellence from every department working in collaboration to produce high quality service. We are very thankful to have so many outstanding employees at both of our Cedarbrook Campuses,” said Cedarbrook Administrator Jason Cumello. The PACAH CNA award was initially accepted by Cumello on Lindsey’s behalf at the recent statewide PACAH conference in September in Pittsburg. Thousands of CNAs work at PACAH affiliated facilities. The attendees at Cedarbrook’s jovial “Celebrating Excellence” event on 10/30 included staff, residents, and County and State dignitaries. “Today is a day of recognition, a recognition that is the people who make up Cedarbrook and who serve its residents that matter most. Cedarbrook is where it is today, because of its nurses, aides, kitchen crews, housekeepers and physical therapists (to name a few) who provide residents with comfort, care and compassion during the golden years of their lives,” said Lehigh County Executive Phillips Armstrong. Armstrong praised Cedarbrook for its quality ratings and its recent designation by Newsweek as one of the top skilled nursing facilities in the State of Pennsylvania. These ratings are arriving at a time when Lehigh County is making further investments in the longevity of the county home, ensuring it remains for future generations. Lehigh County recently took out 46.7 million bond to finance the construction of a new wing.

Our PC Specialist will assign a unique username and password, which must be kept confidential. Visitors may request access at the switchboard. Usernames and pass-words for visitors will automatically expire after three days.

Birds are remarkable creatures! There are about 9,500 species of living birds scattered around the world - including the Arctic and Antarctic. Many are stunningly beautiful - vivid in all manner of colors.

Three of the most unusual species are found on the island of New Guinea. They are poisonous. They are not venomous, like a rattlesnake, but have a very toxic chemical on their feathers, which probably serves to deter predators.

You have the right to say who may or may not have access to your nursing facility for the purpose of visiting with you. This includes your family, relatives, or others. Also, you have the right to immediate access by your attending physician or any representative of the federal Department of Health and Human Services, the state Departments of Public Welfare and Health, and the Department of Aging Ombudsman Program. Organizations or individuals providing health, social, legal, or other services may, with your consent, have reasonable visits with you.

that Cedarbrook will participate with all three Health plan providers under Community Health Choices. You may select any one of the three choices.

UPMC (University of Pittsburgh Medical Center) Amerihealth PA Health & Wellness Announced their will be four new

County Commissioners starting in 2020. Director of Nursing, Teresa Samuels,

reminded all residents we are in high flu season and flu shots are still available for anyone who needs. Please be mind-ful of hand washing, covering your mouth when coughing, and if you are not feeling well please report it to your nurse as soon as possible.

Life Enrichment Department announced activities for the month of November.

The next meeting will be held on Monday, December 9, 2019 at 2:00 p.m. in the Auditorium.

3/4 tsp ground nutmeg

3/4 tsp salt

1/3 cup dark rum, or 2 Tbsp rum extract

3 medium bananas, diced

1/4 cup brown sugar

1-1/2 Tbsp ground cinnamon

1-1/2 cup toasted walnuts, chopped Bake the cinnamon rolls according to the package direc-tions and allow them to cool. Set icing aside. Whisk to-gether the eggs, milk, sugar, vanilla, ground nutmeg, salt and rum (or rum extract) in a medium mixing bowl. Cut all of the cooled cinnamon rolls into quarters and put the quarters in a large mixing bowl. Add the egg mixture and the bananas, then toss everything together. Allow to sit for 15 minutes, tossing again halfway through the time. Combine the brown sugar and cinnamon in a small mixing bowl. Spray a deep, 11” x 7” casserole dish with nonstick baking spray and place half of the cinnamon roll mixture in the casserole dish. Top will the brown sugar mixture and the walnuts, then add the rest of the cinnamon roll mix-ture. Cover the casserole dish with aluminum foil that’s been sprayed with nonstick baking spray. Bake for 1 hour then remove the foil and bake for another 15 minutes. Remove the casserole from the oven and allow to cool for 30 minutes. Warm one of the containers of icing in the microwave for 10 seconds, then pour it over top of the bread pudding. Use the remaining container of icing to serve on the side.

CAKE

1 cup blueberries

2 Tbsp flour

1 box pound cake mix

2/3 cup water

2 eggs

5 Tbsp room-temperature butter

1/8 cup + 2 Tbsp sour cream

Zest of half a lemon SAUCE

3 cups blueberries

1/4 cup sugar

1/8 cup water

3 Tbsp lemon juice

Zest of half of a lemon

Preheat the oven to 350 degrees F. Lightly grease a loaf pan. Set aside. To prepare cake, toss the blueberries with flour in a bowl. Set aside. Put the remaining ingredients into a food processor and process for 3 minutes. Scrape the sides and process for 3 more minutes. Stir the flour-coated blueberries with a spatula. Pour the batter into the prepared pan and bake for 45-55 minutes. To make the sauce, place all the ingredi-ents into a food processor and process for 4-6 minutes. Drizzle the sauce on top of the sliced pound cake. Top with whipped cream, if desired.

INGREDIENTS:

3oz. Butter, divided

3 cups sliced yellow onions

1 tsp minced garlic

2 tsp chopped fresh thyme

1/3 cup dry red wine, such as Cabernet

4 lbs Yukon gold potatoes, peeled and cut into quarters or eighths (depending on size)

1-1/2 cups heavy cream

1 (1-oz) envelope dry onion soup mix

2-1/2 tsp salt

1/2 tsp black pepper

1 cup grated Gruyere cheese DIRECTIONS: Melt 1 oz of butter in a large skillet over medium-low heat. Add the onions and cook for 20-25 minutes, stirring occasionally, until they’re golden brown. Add the garlic and thyme to the onions and cook for 1 minute. Pour the red wine into the skillet to deglaze, then simmer until almost all of the wine is evaporated, about 3-5 minutes. Set aside. While the onions are cooking, add the prepared potatoes to a large stockpot filled with water. Bring the water to a boil and cook over medium-high heat until the potatoes are fork tender, about 10-15 minutes. Meanwhile, add the heavy cream, onion soup mix, salt, and pepper to a small saucepan and cook over medium-low heat until the butter is melted and the heavy cream is hot, about 2-3 minutes. Drain the potatoes and place them in the bowl of a stand mixer (you can also use a hand mixer and mixing bowl). Add the hot cream mixture to the potatoes and whip until combined. Gently fold in the caramelized onion mixture and the Gruyere cheese until melted, then serve.

Although we discourage residents from keeping money and valuables in their room, we realize that many of you will choose to do so. Therefore, we would like to offer these tips to help you keep your money and valuables safe from loss or theft. Since you have access to the money in your account during normal business hours Monday through Friday, we suggest that you only withdraw the amount you need for immediate use. If you need larger sums of money for gifts or to reimburse your family members for purchases made on your behalf, we suggest that you contact Financial Services to arrange for payment by check. If you choose to keep money and valuables in your room, we highly recommend that you secure such items in the locked drawer of your bedside cabinet. Keep your key with you, or keep your key out of sight in a safe place. As soon as you realize that your money or property is missing, it is important to report it immediately to the Charge Nurse. Cedarbrook will not assume responsibility for replacing missing property kept by residents on their person or in their room. However, we will take action to investigate, and to try to recover your property if possible. Finally, we ask that you help us maintain a current inventory of your personal property. Any property that you purchase or receive during your stay should be added to your Valuables Received After Admission Form, includ-ing a description of the property. This information is essential when trying to locate missing items.
