Spices are exotic, mysterious, and even sexy. They evoke sensations of
love at first sniff. So why are so many pantries limited to paprika, oregano,
cinnamon, salt, pepper, and maybe a generic curry and chili powder?
Broaden your world with sunshine-like aleppo pepper, sultry urfa biber,
nutty fenugreek seed, and tart sumac with the help of World Spice at
Home: New Flavors for 75 Favorite Dishes by Amanda Bevill and Julie
Kramis Hearne (Sasquatch Books; $24.95; October 2014).
This must-have cookbook helps enhance everyday dishes like chili,
grilled salmon, or carrot cake with unexpected spices to create exciting new
flavors. World Spice at Home unites the talents of Seattle’s World Spice
Merchants owner Amanda Bevill with chef, author, and cooking teacher Julie Kramis Hearne. The opening Spice
Pantry 101 chapter lets readers in on all the tips and techniques they’ll need to know about storage, shelf life,
grinding, toasting, infusions, and more. Also included are instructions for assembling over a dozen spice blends
that are then used in dishes that range from everyday to exotic.
Seventy-five recipes are organized by type of dish (small bites, soups and stews, vegetables and grains,
shellfish and seafood, meat and poultry, sweets and breads, and finishing touches) but can also be searched by
spice blend. Craving sweet and savory besar? There’s Golden Butternut Squash Soup, Gingerbread Cake, or
Maple Glazed Pork Chops. With ras el hanout, readers can make Spiced Apple Butter or Kale Tabbouleh with Ras
el Hanout and Pomegranate Seeds.
The power of these spices is evident in the fact that they were once able to command gold and jewels in
trade. Thankfully, spices are a little more affordable these days, allowing readers everywhere to easily add new
colors and flavors to their menu with recipes from World Spice at Home.

About the Authors
Amanda Bevill: It is unlikely that anyone could have predicted my future as a spice merchant, but the
signs were all there from the beginning. My interest in plants started at the ground level in
childhood—with my hands in the dirt, always checking out the twigs and stems. This led to a degree in
botany and organic chemistry, followed by several years
in the medicinal herb industry. One day, I turned left
instead of right on the sidewalk and my nose led me into
“the spice shop” on the Seattle waterfront and it was love
at first sniff. I began spice hunting in earnest and the
kitchen became my new research lab. As owner of World
Spice Merchants, my passion for all things botanical has
come full circle and I am pleased to share this glimpse
into our world of spices with you. Visit us in Seattle, or
online at WorldSpice.com.
Julie Kramis Hearne: Not a day goes by when I am not
thinking about food and different things I want to try.
I have been cooking professionally for over twenty years now, and I co-authored The Dutch Oven Cook-
book and Cast Iron Skillet Big Flavors. I am always cooking, shopping at the market, or in the kitchen,
learning something new. When I open the door and step inside World Spice Merchants, the aromas over-
whelm me and draw me along the path of exploration. Large glass jars containing magic flavors line the
walls. Labels with strange names invite curiosity. We hope to open a new world of flavors in your
kitchen.
