Pictures: DAVE SWIFT WHEN MasterChef contestants are rewarded with a visit to Nathan Darling’s kitchen, it’s a big clue to the calibre of his cooking. Darling is the chef at Sails restaurant at McMahons Point and, as one of Sydney’s top chefs, he was featured in an episode of MasterChef last week. As a reward, aspiring cooks from the show got a chance to see Darling at work and sample a three-course lunch. Darling has impressive credits as a chef, including eight years at the Watermark at Balmoral, two years at the luxury Bannisters resort and four years at Otto. ‘‘I came out to Australia on a working visa from the UK and fell in love with the place – the rest, as they say, is history,’’ Darling said. Darling says his style of cuisine is ‘‘light and fresh’’ and he avoids an excessively rich menu. ‘‘I don’t want people feeling so full they can barely walk out of the restaurant,’’ he said. The restaurant occupies a rare and spectacular water- front position, with a view across to Luna Park, the Har- bour Bridge, city and Opera House. Part of the visual entertain- ment at the restaurant is the harbour ferry churning into the wharf only metres away. However, as all restaurant patrons recognise, a great water view doesn’t let the chef off the hook. We tried two entrees – in- cluding the seared scallops with bassan fritter, mint yoghurt, cucumber, coriander and tumeric oil – which were the perfect promise of an im- pressive dining experience. The pan-fried barramundi with roasted Yamba prawns was fresh and flaky, balanced with a delicate crust, fennel and roman beans. For those who like meat with a meal, the aged rib eye was glorious – tender, generous and addictive. As for dessert, if you are a fan of creme brulee, the Sails ver- sion is arguably the best. The restaurant also has a tasting menu which, if you fancy yourself as a MasterChef judge, offers you the chance to sample multiple dishes. The wine list is impressive and carries predominantly Australian, French and Italian wines, with select and interest- ing choices from vineyards in Portugal, Spain and Austria.
