THE ORIGINS Wine has grown to be an esteemed drink of choice to diners, a passion to Sommeliers and other connoisseurs, a labour of love to the Winemakers but do we ever stop and ask - where did it all begin? Who discovered wine? For it is not an invention. It is fascinating to note that the origins of the wine predates written records and modern archaeology is still uncertain about the details of the first cultivation of wild grape vines, history will have China Circa (7000BC), Georgia (6000BC) etc. what I found even more captivating is the myths and fables around the discovery of wine, first the Greek mythology, Dionysus, son of Zeus and his mistress Semele ‘Invented’ wine while living in mount Nysa (I am sure we have heard of Dionysus the God of Wine), now we know why. Then there is the Persian woman and the Persian Princess, fascinating, may I then add that as you enjoy a glass of your favourite wine, raise it up and give a nod to the Persian Princess, Dionysus, Noah or whomever in thanks that the wine you love so much was even discovered. So how did it all begin in South Africa? What we see today as our pride and joy, the Cape Winelands, started as a humble mid-point supply station, fort and farming community, commissioned by Jan Van Riebeeck in 1652 under the command of the Dutch East India Company. The first wine to be produced was a mere 15lt on 2 February 1659 from French Muscadel grapes and so began the journey to capture the imagination of the winemaking world, the passion of yesteryear to today’s finest winemakers and the inspired Sommeliers to explore and recite ‘the poetry of wine’. It is an honour to compile this list, a blessing to be offered the privilege to express my profound love for the profession I chose. ‘Now, go on, eat your food with gladness and drink your wine with a joyful heart, for it is now that God favours what you do’ - Ecclesiastes 9:7. A bottle of wine is Chosen to Hallmark an occasion, celebrate it, from the centre of the table it draws us in, pulls us together, it reminds us to raise a glass, to share a sip, to drink together for this is the beginning of knowing and becoming known by one another. People love the freedom of choice and that is exactly what we aim to provide, a wide range to choose from. Wines from lesser known winemaking countries, older vintages, half bottles, auction wines to rare finds - indulge.

As Signature Restaurant grows as a dining destination of choice, we have meticulously chosen the best available quality from around the world, and of course locally. Remember, there is no great meal without a great wine hence we have suggested some pairings, better still, experiment. Light wines light meals, robust wines with heavy meals. As poetic as it might be, wine is like art, therefore venture out and find wines that you like. We invite you to visit our temperature controlled Vinotique where you will be spoilt for choice.

These awards are a popular symbol to restaurants and patrons. To restaurants, they are a symbol of excellence and achievement, to the patrons the awards imply that an establishment has a great selection of original wines and will ensure an all round dining experience.

A Diamond award represents a score over 90%, a Platinum award a score of 81% to 90%, a Gold award a score of 71% - 80% and a Silver award a score of 60% - 70%.

We often see stickers on wine bottles which look really decorative but never give much in termsof meaning, we will therefore give a brief explanation to some of them - browse through. PLATTER GUIDEThe platter Guide was conceived in 1978 by John and Erica Platter (once known as The John Platter). This is a comprehensive, up to date and authoritative guide to who is who and what is what in the cape wine lands. It features countless producers, negociants and brands. This is a reference guide which also saves to 'advise' on the quality of the wine. The rating ranges from half star (Very Ordinary) to 5 star (Superlative - a South African Classic) to this end most of the wines we list fall between 3.5 stars (Very good / Promising) to 5 stars.

THE MICHELANGELO INTERNATIONAL WINE AWARDSThe need to have South African wines adjudicated by international experts was the compelling factor in the formation of these awards, only the internationally accredited wine judges serve on the judging panels. The aim is to identify wines which will fare well in world markets. The Michelangelo uses the 100-point judging system which is very accurate as it allows each entry to be judged according to the varietal's characteristics based on sight, smell and taste VERITAS AWARDSThis award gives recognition to wines of exceptional quality. The distinctive VERITAS symbol of excellence serves as an authoritative quality guideline for wine connoisseurs. The judging panel includes winemakers, researchers, academics and merchants who are all required to have a wine judging certificate from the university of Stellenbosch, a Cape Wine Masters or similar accreditation OLD MUTUAL TROPHY WINE SHOWThis is South Africa's premier wine competition that recognizes top local wines and winemakers, it honours the excellence in the winemaking industry. The medals range from bronze = 70 to 79 points (good to very good), Silver = 80 to 89 points ( excellent, wine of distinction) and Gold = 90 points and above( superlative, world class). The gold medal wines in each class go through to the Trophy judging where all the panelists re-assess them from freshly opened bottles. TOP 100 SA WINESThis is a premium brand based around many of SA's finest wines and vineyards. This is very objective, independent and professional rating of South Africa's entered fine wines. It aids vineyards to position their winning wines with clarity, vigour and integrity. It helps the consumers to buy better wine and get best value.

ABSA TOP 10 - PINOTAGEThis has become the means of benchmarking the best wines made from South Africa's Signature Grape, Pinotage and has seen the sales of Pinotage increase by 10% while doubling the exportsof Pinotage.

THE WARWICK ESTATE

This is a family owned and run winery Overseen by Michael Ratcliffe who is the third generation member and the managing director. From 1771 till 1902 the farm was known as ‘De Goede Sukses’ till Colonel William Alexander Gordon bought and renamed it Warwick as a tribute to his regiment. Stan Ratcliffe purchased Warwick on 1 April 1964 paving the way to Norma Ratcliffe producing their first handcrafted Crafted Cabernet Sauvignon in 1984 followed by the first production of Warwick Trilogy in 1986.

Signature Restaurant presents Warwick Wines, Then and Now.Wine is a living object, a bottle of wine lives, breathes, evolves, matures then reachesits prime then ‘returns to the maker’, for that reason we have conveniently left out the tasting notes. Explore!

The Rhône Region of France has 22 grape varieties allowed in the Rhône AOC, of which about half is red. The main players being Syrah(Shiraz), Grenache and Mourvedre.
