At The Chophouse, we are infinitely passionate about our wine.
Every wine that makes it to our list is tasted and analyzed by our sommeliers, We take
great pain to source the finest wines from the best producers, the world over. All our
wines are stored in our temperature and humidity controlled wine cave, at 16°C, the
optimum temperature for storing, the wine reaches its optimum drinking condition ages
gracefully.
Whilst you will find many wines that you are familiar with from well-known regions,
wines that you have tried before and will be comfortable ordering. At The Chophouse we
strive to offer new experiences, we therefore ask you to allow our sommeliers to tempt
you with newly discovered wines, truly remarkable wines from places such as Syria and
the Lebanon, Provence, Sardinia, Umbria and Le Marche to name a few.
Apart the large selection of 30 odd wines available by the glass, we also make use of the
revolutionary Coravin system. Our Coravin allows us to pour wine from a bottle without
ever opening it thus not allowing oxygen to enter the bottle. Simply ask our sommelier
for the list of available wines - this could include a renowned Chateau or exclusive
vintage.
Our sommeliers are trained by the best people and to the highest standards and are fully
knowledgeable about the wines and their respective vintages. They can suggest food
pairings, discussed with our Chefs. We are at your disposal to suggest a wine that will
suit your taste, complement your food and fit your budget. All our wines have been tasted
and we recommend them all, irrespective of price or provenance.

Tamari, La Rioja – Torrontes 13.5% a.b.v. - €25
Versatile and expressive are two key-words to describe this wine. Our Chef first tasted this wine during
an outside wine event which we organised. The marriage with the seabass ceviche dish with grapefruit
and lime was outstanding and brought out the best in both the food and the wine. The torrontes grape,
often compared to Gewurztraminer, produces extremely aromatic wines, especially when grown in such
elevated areas as is customary in Argentina, giving time for the grape to develop a highly aromatic
character. Chef recommends you pair this with the Ceviche or Soft-Shell Crab.

Nicolas Joly, Savennieres, ‘Les Vieux Clos’ – Chenin Blanc - €67
“Truly one of the greatest dry white wines I have ever had the fortune of tasting. Even though it is
sublime just after popping the cork, this is one of those whites that needs decanting, YES DECANTING!
I was lucky enough to try this with Philippe Martinet (the importer) two days after he opened a bottle
and it was just fantastic; hints of chamomile, honey and ripe stone fruits.” Made using Organic and
Biodynamic farming, we recommend this special bottle to our return clients, and suggest they inform
us to open the bottle the day before to drink in order to show its true colours. Try as an aperitif on its

Markus Divinus -Merlot / Cabernet Franc / Sangiovese, 14% a.b.v. - €72
A hidden Maltese Gem! A full-bodied wine with true character – a true heavyweight. This local wine
gives you the ripe red fruit notes from Merlot coming from 20-year-old vines, mixed with the robust
character of the Cabernet Franc and Sangiovese grapes. The only downside to this wine is that only
300 bottles are made each year, so drink up and enjoy.

Châteauneuf du Pape comes from the Southern Rhone region in France. The famous mistral winds and
Mediterranean, hot, dry, sunny weather make the wine unique, giving it, character. With its full bodied,
mature and high levels of tannin, Châteauneuf du Pape pairs well with red meats especially beef and
lamb. This means that it combines well with most of dishes on the Chophouse menu. The great thing
about Châteauneuf du Pape is that most of the wines do not need to be aged before they can be enjoyed,
even though they are probably at their best between 8 and 12 years.

Fontanafredda, Barolo, 'Serralunga' - Nebbiolo 14% a.b.v. - €69
A lover of everything Italian, our managing director suggests this fantastic Barolo from
Serralunga. Made from the King of Piemontese grapes, Nebbiolo, this wine is high in tannin
in it’s youth, making it a perfect partner for some of our aged meats. With aromas of roses
and violets, this wine is highly seductive.

Donnafugata ‘Tancredi’ - Cabernet Sauvignon / Nero d’Avola / Tannat - €60
“I tried this wine for the first time when I visited the Donnafugata estate. A lovely red and
dark berry fruit bouquet. I loved the hints of coffee and chocolate. Well balanced tannins,
long finish. Try this with some aged meats!” An interesting blend of Cabernet Sauvignon, the
local Nero d’avola grape and Tannat, a grape native to South-West France but which has
now found it’s home in Sicily, this wine can offer something unique.

Johnny R. Saadé, ‘Bargylus’ – Syrah / Cabernet Sauvignon / Merlot, 15.5% a.b.v. - €70
“Non avevo mai provato vini Siriani prima…ne sono dispiaciuto….La bottiglia di Bargylus
non si presenta elaborata troppo, ma lo stile della scritta nera sull'etichetta Bianca, salta
subito all'occhio. Avrei risaltato di piu la provenienza, alquanto particolare e significativa,
in questo momento storico”.
Massimo had the same reaction as anyone else that we have offered this wine to. “Syria?
Really?” a question we have become accustomed to hearing – wine in the middle east has
been produced since biblical times. What is even more predictable is the reaction once they
take that first sip. With a mind-boggling 15.5% alcohol volume this wine is not for the faint
hearted!
