CANTARELLI

The firm, founded in 1876, deals with the seasoning, in underground warehouses built in the same period and inside them the Parmigiano-Reggiano cheese grows old according to the best tradition.

The real peculiarity, that makes Cantarelli substantially different from others is the system of natural seasoning, still practiced in antique stone wall structures built at the end of 1800, where the cheese matures in a natural balance of temperature and humidity.

PECORINO TOSCANO DOP

In his chronicles Plino il Vecchio tells a story about a cow’s milk cheese called Lunese, called such because it originated in the Etruscan city of Luni.

This was the DPO Tuscan Pecorino protected by Consortium since 1986 with the aim of monitoring all of the phases of the production cycle from the transformation of the milk.

Tuscan Pecorino is a cheese with unique characteristics, distinguishing it from other seemingly similar products. The flavor is decisively sweet, there are notes of acidity, although this does slowly diminish. The Tuscan Pecorino is a sweet cheese, with a “subtle personality”.

The Cinta Senese has been present in Siena since 1300, as many paints show us. The pig is black with a white stripe along it’s back, along it’s shoulders and on its legs. It is a pig that cannot be bred in pig stys but only in a natural state. It eats acorns, chestnuts, roots, tubers, grass and truffles. Only during the cold months is it given barley, maize and beans according to the rules of the consortium Compagnia della Cinta Senese. The meat, which is naturally fat, has an aroma of the woods where it has pastured.

San Nicola dei Miri

Conserve San Nicola dei Miri were born with the idea of setting up a small laboratory producing old-style fruit and vegetable preserves using old recipes and the traditional artisanal methods belonging to the rural tradition of the family. The choice of raw materials is for premium quality freshly-picked produce. All preserves are made according to old Grandma’s recipes, that today her daughter Maria still follows and conveys to the young ladies that work with her in the production. The jars are filled by hand, checked one by one, and with no artificial preserves, so that we can find in them the authentic flavor of the garden.

Bottarga is one of the true gastronomic gems to hail from Italy. Bottarga is the egg sack of Mullet fish. The roe is prepared by salting, pressing and drying for up to 6 months in cool well aired rooms.

The best way to eat bottarga is raw. Sliced thinly and drizzled with good unfiltered extra virgin olive oil and lemon it makes a delicious, fresh and clean tasting antipasto. It also tastes, for the more profligate, wonderful with pasta. Crumble the bottarga and sauté lightly in olive oil, add chilli, parsley and lemon juice, this is then stirred into the al dente linguini.
