Production of Whisky from raw wheat and concentrate
ethanol using i. hygroscopic salts ii. Benzene
SACCHARINE (sugar containing) materials in which the carbohydrate (the actual
substance from which the alcohol is made) is present in the form of simple directly
fermentable si! and twel"e carbon sugar molecules such as glucose fructose and
maltose# Such materials include sugar cane sugar beets fruit (fresh or dried) citrus
molasses cane sorghum whey and s$im mil$#
S%ARCH& 'A%ERIAS that contain more comple! carbohydrates such as starch and
inulin that can be bro$en down into the simpler si! and twel"e carbon sugars by
hydrolysis with acid or by the action of enymes or malting# Such materials include corngrain sorghum barley wheat potatoes sweet potatoes *erusalem articho$es cacti
manioc arrowroot and so on#
CE+,SE 'A%ERIAS such as wood wood waste paper straw corn stal$s corn
cobs cotton etc# which contain material that can be hydrolyed with acid enymes or
otherwise con"erted into fermentable sugars called glucose#
-heat is one of the carbohydrate rich product widely used for alcohol production# .or
the production of more fermentable carbohydrates wheat is either sprouted or milled and
li/uefied using amylase# %o enhance the production li/uefied product is treated with
glucoamylase enyme#
'any species of Saccharomyces are used for the manufacturing process# 0uring
fermentation yeast uses carbohydrate to produce ethyl alcohol and Carbon dio!ide#
Control of pH during the mashing and fermentation process is important for two reasons1
%he growth of harmful bacteria is retarded by acid solutions and yeast will grow only in
an (slightly) acid solution# %he optimum pH range then is 2#3 to 4#5# Anything below
about 2#6 to 2#2 is detrimental to other (desirable) processes ta$ing place during the
mashing and fermentation# Conse/uently the pH should be chec$ed during the coo$ing
and con"ersion# If it is much abo"e 4#5 it should be reduced by the addition of acid#

%he ethanol produced is accumulated in the media and can be purified by distillation
process# .urther concentration of alcohol can be done by treating with se"eral
hygroscopic salts li$e Ca, CaCl7 CaC,8 and anhydrous CuS,2 etc# Aeotropic
distillation using entriners li$e benene trichloroethylene followed by distillation at
reduced temperature also helps to concentrate the product "ery significantly and hence
lead to formation of sprit# Ethanol is clean burning9 high octane fuel can be produced
from renewable sources and use as alternati"e source of fuel with gasoline#
Carbon dio!ide produced during fermentation can be used for carbonating the product or
collected compressed and used as "aluable byproduct# Residue after distillation also
called as distillers: grain or stillage is used as li"estoc$ feed# ;ood yield of ethanol is
possible by selecting a good strain and maintaining optimal condition# 'ore nutrients
produce unwanted "olatile products#
-ater /uality is one which determines fermentation rate and /uality of product# 7oC to remo"e "olatile impurities# 0iscard 4B initial
distillate of total "olume# .urther distill at 3oC# Collect ?5>5B and discard
remaining final residue# ,bser"e B alcohol in distillate using alcohol meter#

Add calculated amount of any hygroscopic salt to absorb water and $eep ,N# 0istil
at same temperature#
Add 718 proportion of benene to the distillate and further distil at ?oC#
