5 22 years since it opened, Baan Rim Pa has won more fi ne dining awards than any other. In its cliff side teak house, impeccably prepared Royal Thai Cuisine is just part of a fi ne dining experience.

Mama Mia! Conceptualisations and ingenuity in Italian cuisine come to Nai Harn! Relish an authentic style of a diverse array of favourites and new combinations served in a stylish yet cozy ambiance, or savour pizzas in a separate casual seating area by a wood-fi red oven.

An evening meal must kick off with an aperitif! And so we did, while soaking up the surroundings of the Da Vinci restaurant and bar. Open air, but with enough cover for when the rains come (and with an air-conditioned dining room too), Da Vinci is tasteful, beautifully designed and welcoming. The children’s play area off ers parents the opportunity to relax with a fi ne meal, while keeping their kids in sight.

Tantalizing temptations come from the kitchen with fresh ingredients as signature items in every dish. Our fi rst adventure was the antipasti of Bruschetta, grilled sliced bread with chopped tomato, garlic and olives.

Refreshing and the perfect choice to get us started, it was followed by the primi piatti course of a trio of pastas: Lasagne Al Forno (homemade lasagne in layers with beef and tomato sauce), Spaghetti Gamberi Zucchine Vodka (spaghetti with prawns, zucchini and vodka) and Spaghetti Neri Pomodorini Calamari e Gamberi (black spaghetti with tomato, squid and prawn). Unique tastes and texture combinations, underlining the quality of the ingredients.

Good wine is, of course, essential to a fi ne meal. The Palazzo Della Torre Veronese Indicazione Geografi ca Tipica 2004, Allegrini was the perfect red to complement the fi rst two courses and continued to match the secondi piatti and pizze courses, Scaloppine Al Vino Bianco Con Patate (tender, perfectly cooked fi llets of pork in white wine, served with potatoes). Pizza is a must-have in a traditional Italian restaurant, and Al Proscuitto Crudo (tomato, Mozzarella cheese and Parma ham) is one not to be missed!

Semifreddo All Arancio and Semifreddo All Amaretto (home made orange and amaretto sherberts) were the indulging cap to the meal.

6 How about a luxurious spread of the freshest seafood, meats and vegetables prepared using innovative and unique cooking techniques? An amazing meal that will etch itself in memory for a long time... Combine that with fi ne wines from around the world and a stunning location dining al fresco with views of the Andaman Sea. You’ll be unable to resist!

The recently opened Regent Phuket Cape Panwa boasts an exquisite setting at which to savour such an occasion. Executive Chef Justin Baziuk plans and steers the evening on a culinary journey that begins with sourcing the best and freshest ingredients from all over the world.

Beef has been farm raised and grass or grain fed, the poultry is organic and the seafood caught fresh daily, while produce is obtained from organic farmers. Finger foods, breads and sweets are all made in house.

Chef Justin – renowned for his passion in all aspects of cooking (and indeed his passion in explaining it!) – served an unparalleled array of appetizers, main courses and desserts. Scallops, scotch single malt salmon, blue crab ravioli and foie gras marked the beginning, exhibiting an intricate combination of ingredients, perfect on the palate and elegantly presented.

The main course featured top-notch quality meats from Australia – pedigree Hereford and Black Angus beef and lamb – cooked to medium-rare perfection. Side dishes and fi ne wines were glorious accompaniments.

The irrestible sweet treats included a French-style cheesecake and an assortment of chocolate treasures beautifully crafted. Not forgetting the between-courses palate cleanser: fruit sherbet and Bailey’s ice cream. Perfect!

Top quality ingredients, on which Chef Justin has based some outstanding dishes, together with fl air in preparation and presentation combine to create a memorable occasion. Along with superb hospitality and a peaceful and idyllic setting, the recipe is there for an elegant and unmatched evening.

The newly rebranded Angsana Laguna Phuket, a luxury fi ve-star resort hotel, off ers a choice of fi ne dining experiences, one of which is Baan Talay or ‘House by the Sea’. Just steps away from the beach, diners can savour fresh seafood and traditional Thai dishes prepared in an open kitchen.

Choose from extensive patio seating or in the stylish and spacious interior, boasting accents of traditional Thai décor with earth-toned furniture and meticulously carved traditional Thai wooden panels, while restaurant staff are colourfully dressed in Thai traditional costumes.

Dress smart-casually, or more formally if you prefer. Walk in from the beach, drive and park or catch the shuttle boat across the lagoon. However you arrive, whether with a companion or your family, you can be sure of dining on divine food.

Thai cooking is a dazzling blend of spices, pastes and sauces. Executive Sous Chef Prasong Thaochan selected a fabulous menu of starters, mains and desserts – dishes that represented the distinctive fl avours of Thai cuisine.

Starters included Yam Som Poo Nhim, a pink grapefruit salad with crisp soft shell crab and tamarind sauce and Yam Nhua Yang, BBQ beef sirloin salad with crunchy vegetables in Thai spicy sauce.

The main course included a medley of two curries, fi sh and vegetable: Gaeng Garee Gai, chicken in yellow curry with potatoes and onions; Geang Phed Ped Yang, grilled duck breast, red curry, baby aubergine, lychee, sweet basil and port wine grapes; Pla Rhad Prik, crispy fresh fi sh with spicy garlic, chili and tamarind sauce and Nhor Mai Farang Phad Goong, stir-fried asparagus with shrimps in oyster sauce.

Skilfully prepared, beautifully presented and served with a smile, our dinner so far lived up to the high standards in everything it does that Angsana is renowned for.

And for dessert, we were lucky with our timing and were treated to the classic and ever popular seasonal Thai sweet, Khaow Nhiew Ma-Muang, ripe mango and sticky rice, with the subtle fl avour and texture of added coconut milk. Simply – as always – delicious!

This idyllic beachside setting off ers a superb venue to sample top-notch Thai cuisine prepared by a highly skilled team of chefs and served with typically warm Thai hospitality.

Dine on Italian food right on the beach! Savour authentic regional dishes while sitting alfresco on the terrace with a view to the ocean – or opt for the classic Italian atmosphere of the indoor dining area if fresh sea air is not your scene or the if weather has decided to be unco-operative.

Tucked away on Surin Beach, Cefalù off ers not only a spectacular setting to enjoy a seaside meal, but also superb Italian fare with an extensive wine list to match. Owner and Chef Duilio and his team have a strong reputation for preparing delicious dishes using only the freshest and highest quality ingredients – served of course with utmost care and attention to detail.

Two starters that are a ‘must try’ are the Crostino al Prosciutto di Parma or sliced bread with Parma ham and mozzarella cheese and the Tartare di tonno or fresh tuna tartare with toasted bread. The salty taste of the dry-cured pork and the milky taste of the fi rm cheese ball complement each other perfectly. Delightful in the way it was presented, the tuna was moist and succulent.

On our visit to Cefalù’s, Duilio’s main course recommendations were outstanding. He suggested Lasagne al forno (al ragù) or homemade lasagna with meat and Ravioli polpa di granchio e gamberetti or ravioli fi lled with crab and shrimps served with lobster bisque. The lasagna was meaty and moist and spiced perfectly – just like ‘mama used to make’ and the seafood ravioli was heaven for the taste-buds and a treat for the eyes.

Naturally, an Italian dinner cannot exist without the perfect wine and here Cefalù’s notches up a healthy score with its extensive wine list, featuring (of course) a solid selection of Italian wines.

Dessert was a creamy Panna Cotta topped with cherries and a spongy Tiramisu, traditional Italian desserts and absolutely delicious.

Cefalù’s off ers a casual dining experience with superb food with an unbeatable beach location. Truly magnifi co!

Live music a few nights with great live bands performing including a female singer who covers hits from the 1960s every Tuesday to Saturdy. Saneaha is defi nitely more upmarket than Rom Dee , so a bit more expensive; small beers are 100 Baht. Try their spring rolls − their signature dish!

Luang Pho Chaem Rd, 200m from Chaofa East Rd.This small Restaurant is open for lunch and dinner and does a range of delicious Thai food , beer and soft drinks at reasonable prices. You can eat inside or outside in their garden . They also do take-away for those in a hurry!

Huean Phu ChiangKwang Rd, on the left before Bann Prang Tong. Simple restaurant with a Thai nort hern style décor. Their tasty 'Nam Prik Ong' pork with a spicy tomato sauce , served with ot her fresh vegetables on the side is a must to try. The famous Nort hern Thai noodle soup in curry called 'Kao Soi' served with pickles, red onion , chili oil , a piece of lime is the best for only 40 baht. And when the owner not too busy you can enjoy live music from his nort hern instrument.

Tropical Phuket is most famous for its beaches,

but to experience the real heart and soul of

the island it’s essential to delve into its local

food culture.

Throughout Thailand, eating is a joy and an all-day topic of conversation; Phuket is no exception. When Thais are not busy eating they’re often talking about their last meal... or their next one. It’s possible that, if people were to learn the vocabulary for Thai food only, they’d be able to follow 80% of the chatter here in Phuket!

Fresh fare is inexpensive and easy to fi nd and, with so many roving motorbike food carts, lazy gourmets could just stay home or fi nd a shady spot along the road and wait for the food to come to them!

There’s no shame in eating cheaply here. We’ve seen prominent local people happily slurping up 30-baht noodles at no-name stalls. Immaculately dressed offi ce ladies can be seen at street-side food shops tucking into a plate of khao kha moo (stewed pork leg), designer handbags delicately balancing on a plastic stool beside them.

Takeaway is popular too. Most food vendors will bag their off erings and condiments with great skill and lightning speed. Their ability to cinch a plastic bag airtight with a quick wrap of a rubber band is impressive – we’ve never had a leaky bag of fi sh sauce yet!

Here’s a sampling of some of our favourite cheap Phuket dishes, none of which will cost you more than 50 baht:Hokkien noodles. When served in a soup, this is a refreshing dish with noodles, thinly sliced pork, shrimp and an egg-noodle dumpling stuff ed with herbed minced pork. Also in demand for the lunch crowd are ‘dry’ Hokkien noodles, usually stir-fried with a mix of pork and seafood.

Dim sum. You usually need to arrive early in the morning to avoid missing out on the best of these tiny servings of steamed pork, seafood and vegetables. You pay by the bowl, about 10-15 baht

per serving. To fi nd a dim sum shop, look for an open restaurant with either huge metal pots with rounded lids or stacks of bamboo steamer bowls.

Kanom jeen. This is a Phuket breakfast favourite, and it should be noted that “some assembly is required” to fully enjoy this dish. You fi rst need to select your curry – beef, chicken, fi sh, crab – which is put into a bowl with rice noodles. Then you’ll fi nd a selection of crunchy vegetables including radish, sprouts and green beans, plus sauces, spices and herbs at your table, which you add and mix according to your taste. Artful eating at its best.

Haw mok. This spicy crab mousse cake, steamed and served in banana leaf, makes for a rich and zippy complement to any meal, especially kanom jeen.

Roti. A Thai-style fried pancake served either sweet with banana and sweetened condensed milk or savoury with a small curry dish at the side. It was an early-morning beef curry roti that convinced us of something that the locals have long known: spicy breakfasts are a true delight.

Satay. Grilled lightly curried meat (usually pork) on a stick served with a spicy peanut sauce plus a side of sliced onion and cucumber soaked in vinegar. If you turn up at a party with a bagful of satay, you’ll be very popular indeed.

And no meal is complete without a selection of sweets or snacks! Here are some of our top choices:

Salapao (steamed Chinese buns stuff ed with BBQ pork or bean), khao tum mud (banana and sticky rice wrapped in banana leaves – only 8 baht per piece!), kanom krok (little round servings of coconut pudding, often topped with corn), kanom buang (crispy wafer with coconut cream and shredded coconut), sangkaya fuk tong (pumpkin and coconut custard), khao lam (sticky rice in bamboo – the black rice variety is our favourite), sakoo (steamed tapioca balls stuffed with pork and peanut, served with lettuce and chili). There’s one sweet that’s almost too pretty to eat: luk chub, a sugary bean candy skilfully shaped to look like tiny fruits, vegetables or chillies.

These are just a few of the endless choices of fresh ’n’ cheap eats on sale around the island. With only a few baht to lose if you don’t like a particular snack or meal, there’s no excuse not to be an adventurous and exploratory eater in Phuket.

About Master Chef ShiraishiJapanese Master Chef Shiraishi began his long career at the age of fi ve helping his mother and father in their family restaurant in the village of Kumamoto, on Kyushu Island.

At the age of 19, Shiraishi left home to become an apprentice chef in Osaka where he fully qualifi ed as a Sushi Chef.

Method: Sushi RiceWash the sushi rice thoroughly fi ve times before cooking. While the rice is cooking, blend the rice wine vinegar with sugar and salt and stir it until the sugar dissolves.

Mix your cooked sushi rice with the freshly prepared vinegar blend and continue stirring until the rice has cooled down.

Method: California MakiCalifornia Maki gets rolled inside out, so you fi rst have to cover your Sushi rolling mat with plastic wrap. Next, carefully break the Nori seaweed into half and place it towards the bottom of the Sushi mat.

Spread a handful of cooked Sushi rice evenly onto the Nori, making sure all the edges are covered with a thin layer. Then fl ip the Nori over so that the rice is at the bottom facing down and the Nori is facing up.

Next, lay out all the ingredients, including crab stick, prawn, avocado and cucumber strips along the bottom edge of the Nori, side by side and lengthwise. Top them with spicy mayonnaise.

To form the California roll, use your bamboo mat and roll the bottom edge of the Nori over the fi lling in the center. Gently apply pressure and tuck the fi lling in fi rmly as you shape and seal the sushi roll. To fi nish, cover your sushi roll with orange shrimp roe and cut it into eight pieces.

When serving, be sure to add a little spice to your California roll with wasabi, soy sauce and pickled ginger as garnish.
