Cola Chili con CarneYield: 24 servings

6 pounds BCH RSV beef chuck roast, fat trimmed, cut into ½-inch chunks

3 tablespoons olive oil3 ounces onion soup mix½ cup plus 1 tablespoon IMP/MCC

chili powder3 tablespoons IMP/MCC ground cumin

6 pounds canned chili beans5¼ pounds canned diced tomatoes,

undrained9 cups cola5¾ cups tomato sauce Toppings: sour cream, diced red onion,

sliced green onions, diced avocado, shredded Cheddar cheese, chopped fresh cilantro

1. In large stockpot, sauté beef in oil until browned, stirring frequently. Stir in soup mix, chili powder and cumin; cook 2 minutes, stirring frequently.

2. Stir in remaining ingredients, except toppings, and heat to simmering; reduce heat to medium-low. Cover and cook until beef is tender (about 45 minutes to 1 hour), stirring occasionally. Serve chili with toppings of choice.

Jalapeño CornbreadYield: 24 servings

3 cups SYS CLS yellow cornmeal1 cup SYS CLS all-purpose flour¼ cup SYS CLS granulated sugar1 tablespoon SYS CLS baking powder2 teaspoons IMP/MCC chili powder1 teaspoon sea salt4 large eggs2 cups whole milk½ cup WHLFARM unsalted butter, melted¼ cup light corn syrup½ cup minced jalapeño peppers Nonstick baking spray

1. In large bowl, sift together cornmeal, flour, sugar, baking powder, chili powder and salt. In separate large bowl, whisk together eggs, milk, melted butter and corn syrup.

2. Fold egg mixture into cornmeal mixture; mix until just combined. Fold in jalapeños.

3. Spray 2-inch hotel pan with nonstick baking spray. Pour mixture into prepared pan. Bake at 375° for 22 to 25 minutes or until top is lightly browned and toothpick inserted into center comes out clean. Let cool and cut into squares. Refrigerate in an airtight container.

Natl Past Eggs

Ingredients

1 (10 oz) frozen package, chopped spinach, thawed

4 large firm, ripe tomatoes or 2 bell peppers, or a combination

2 tsp olive or canola oil

½ c chopped onion

2 cloves garlic, chopped

½ c chopped tomato

½ c crumbled Feta cheese or shredded Mozzarella cheese

1 tsp Italian, Mediterranean or Greek seasoning

¼ tsp salt

coarsely ground black pepper to taste

4 Wholesome Farms® pasteurized eggs

3 Tbsp shredded Parmesan cheese

Preparation

Preheat oven to 375°F. Drain spinach well. Squeeze out excess moisture; set aside. Cut top ½ inch off tomatoes. Scoop out pulp leaving ¼-inch shell. Turn over on paper towels to drain. If using peppers, cut in half lengthwise; remove seeds and membrane.

2. Heat oil in medium nonstick skillet over medium heat until hot. Add on-ion and garlic; cook and stir 1 to 2 minutes, until onion is crisp-tender. Add spinach; heat through. Gently stir in chopped tomato, Feta cheese, Italian seasoning, salt and pepper, as desired.

3. Line baking sheet with aluminum foil; spray with nonstick cooking spray (or brush lightly with oil). Arrange tomato shells and/or pepper halves cut side up on baking sheet. Spoon equal amounts spinach mixture into each tomato or pepper. Press lightly to even surface.

4. Break one egg into each tomato cup or pepper half. Sprinkle Parmesan around eggs. Bake at 375°F 25 to 30 minutes, until whites are set and yolks begin to firm, or to desired doneness.

16 oz Pasta LaBella Gobetti3 Tbsp extra virgin olive oil1 Tbsp fresh chopped garlic1/4 cup yellow onions, diced small3 Tbsp fresh basil, chopped1 Tbsp fresh rosemary, chopped1/2 cup white zinfandel3 cups heavy cream3/4 cup Parmesan, grated1/2 cup crumbled Gorgonzola cheeseSalt & black pepper, to taste

DirectionsCook pasta according to package directions. Drain. Heat the olive oil in a large skillet; add garlic, onions and the fresh herbs. Cook for 3 minutes. Add wine, cook 1 minute then add cream. Simmer 3-4 minutes or until the sauce is slightly thickened. Stir in cheeses and simmer until sauce lightly coats the back of the spoon. Salt and pepper to taste. Toss pasta with sauce until evenly coated and serve immediately.

Optional: Top with cooked pancetta.

4 5 to 6-ounce Boneless Pork Loin Chops, cut ¾” thick2 teaspoons olive oil½ teaspoon grated orange peel

Moroccan Rub:2 teaspoons smoked paprika1 teaspoon ground coriander½ teaspoon fi ne sea salt½ teaspoon ground cumin8 teaspoon ground cinnamon8 teaspoon freshly ground black pepper

1. Pat pork chops dry with paper towels. Combine oil and orange peel; rub on both sides of pork chops.

2. For rub, combine paprika, coriander, salt, cumin, cinnamon, and pepper; rub evenly on both sides of chops.

3. Preheat gas grill to medium for direct grilling. Grill chops, uncovered, for 8 to 9 minutes or until instant-read thermometer inserted near centers reads 145°F, turning chops over halfway through grilling. Transfer chops to serving platter. Loosely cover with foil; let rest for 3 minutes.
