Hungarian Chicken Paprikash

Heat the oil (or lard) and add one chopped onion, let it fry for one minute or so, don’t make it change colour, then reduce heat and put a lid on to simmer it until soft and transparent. Turn the heat off, add one ts paprika powder to the onion, add cca 0.1 l water, add salt, then turn the heat back on and boil it for 2-3 minutes. Add the chicken pieces (1,2 kg), one green paprika cut in four and one diced tomato then cook it until it’s tender with the heat reduced. If it’s not liquid enough you may add some more water while it’s cooking, just a little as it’s best if the chicken is cooked in its own juices. Boil it until the excess water is evaporated and only a little remains. Add 0.4 kg sour cream and shake-turn to mix then boil it on reduced heat for 4-5 minutes. Add your favourite garnish of noodles, pasta or rice.
