Recipe of the Week

Beef Goulash Soup

1 lb beef bottom round, chuck,

or rump, cut in 1” cubes

( or use stew beef)

2 Tbspn oil

1/2 tspn salt

1/2 tspn black pepper

1 large onion, chopped thin

2 bell peppers (1 red, 1 green) sliced

2-3 garlic cloves, minced

3 Tbspn sweet Hungarian Paprika (the real stuff)

1 tspn caraway seeds

2 medium potatoes, cut into 1/2 “ cubes

2 medium carrots, cut into 1/2” pieces

3 cups beef broth

2 cups water

1 small can tomato paste

1 tspn finely shredded lemon peel

1/4 tspn marjoram

Shake of Worcestershire sauce

Shake of Tabasco sauce

1 bay leaf

1. In large skillet, brown beef in oil, in small batches.

Drain any fat, season w salt & pepper

2. Put onions, peppers, potatoes & carrots in bottom of

crock pot/slow cooker

3. In bowl, combine beef broth, water, tomato paste, pap-

rika, lemon peel, caraway seed, garlic, marjoram,

Worcestershire, Tabasco

4. Put beef on top of vegetables in pot

5. Pour liquid/spice mix over beef, add in bay leaf

6. Cover & cook on low 6-7 hours

7. Can thicken if desired, with 2 tspn cornstarch & 3

Tbsn cold water, make a paste of this first.

8. Stir & turn to high until thickening occurs, 15 to 20

min

9. Serve in bowls w dollop of sour cream
