Una visita a sevilla es sin lugar a dudas una experiencia única (e incluso, me atrevería a decir envidiable), donde el mejor consejo que se puede dar es que merece la pena dejarse llevar por los sentidos. Más allá de lo que a primera vista se contempla en la belleza de sus edificios, plazas y parques la ciudad esconde rincones únicos que, como si de un juego se tratara, se pueden descubrir sobre todo si se va despacio. De esta forma, paseando por la ciudad se encuentran colores y aromas desconocidos, que irán marcando las pautas de vuestra estancia. Desde el clásico aroma a azahar al inconfundible olor a especias que se usa para sazonar el pescado. Aquellos que vuelven a Sevilla ya conocen que la agenda cultural de la ciudad es muy activa. Tanto instituciones públicas como privadas ‘compiten’ ofreciendo actividades muy distintas y atractivas para todos los públicos: actuaciones teatrales, exposiciones o conciertos se unen a las fiestas más populares, donde todos están invitados. Y no os sorprendáis si, paseando por sus calles, encontráis modernos puentes o arquitecturas vanguardistas, porque todo ello en Sevilla también tiene su sitio, aunque sea, acompañado de críticas. Y es que esta ciudad, desde siempre, ha sido contradictoria, dicharachera y muy orgullosa. Pero al mismo tiempo, es acogedora y muy alegre, y dispuesta a recibir a todo aquel que viene a visitarla.

la Catedral, el Real Alcázar y el Archivo de Indias forman un conjunto monumental admirable en el corazón de Sevilla. La Catedral y el Alcázar son dos

testimonios excepcionales de la civilización almohade y de la Sevilla cristiana, cuyo arte estuvo muy impregnado de la influencia mora desde la reconquista de la ciudad (1248) hasta el siglo XVI. El antiguo minarete de la Giralda, que influyó en la construcción de numerosas torres en España, y, después de la conquista, en las Américas, es una obra maestra de la arquitectura almohade y se yergue al costado de la catedral. Esta iglesia de cinco naves es el edificio gótico más grande de Europa y alberga la colosal sepultura de Cristóbal Colón. En la antigua lonja, convertida en Archivo de Indias, se conservan fondos documentales inestimables de las colonias españolas en América. Además, el espacio elíptico del Cabildo, creado por Hernán Ruiz, es una de las obras arquitectónicas más bellas del Renacimiento. Los tres edificios personifican perfectamente el español “Edad de Oro”, la incorporación de los vestigios de la cultura islámica, siglos de poder eclesiástico, la soberanía real y el poder de negociación que España adquirió a través de sus colonias en el Nuevo Mundo. Por la integridad y autenticidad que encierra el Complejo Monumental, fue declarado Patrimonio de la Humanidad en 1987.

Together the Cathedral, Alcázar and Archivo de Indias as a series, form a remarkable monumental complex in the heart of Seville. The cathedral and the

Alcázar – dating from the Reconquest of 1248 to the 16th century and imbued with Moorish influences – are an exceptional testimony to the civilization of the Almohads as well as that of Christian Andalusia. The Giralda minaret is the masterpiece of Almohad architecture and influenced the construction of numerous towers in Spain, and, after the conquest, in the Americas. It stands next to the cathedral with its five naves; the largest Gothic building in Europe, it houses the tomb of Christopher Columbus. The ancient Lonja, which became the Archivo de Indias, contains valuable documents from the archives of the colonies in the Americas. Besides, the elliptical space of the Cabildo, created by Hernán Ruiz, is one of the most beautiful architectural works of the Renaissance. These buildings perfectly epitomize the Spanish “Golden Age”, incorporating vestiges of Islamic culture, centuries of ecclesiastical power, royal sovereignty and the trading power that Spain acquired through its colonies in the New World. For its integrity and authenticity, the Complejo Monumental was declared World Heritage in 1987.

EL giraLdiLLo. En lo alto de la torre se alza una gigantesca estatua de la Fe, en forma de mujer con vestidura clásica romana, que lleva en una mano un escudo y en la otra, una palma. Al ser una veleta giratoria se denominó giralda tanto a la torre como a la estatua. Actualmente se conoce como Giralda a la torre y Giraldillo a la veleta.

EL giraLdiLLo. On top of the bell tower of the Giralda there is a statue portraying Faith in the form of a woman dressed in traditional Roman clothes. She is carrying a shield in one hand and a palm leaf in the other. As this statue is a rotating weather vane both the tower and the statue were named ‘Giralda’ , derived from the Spanish word ‘girar’ meaning ‘turn’. Nowadays, the bell tower is referred to as the Giralda and the wind vane as the Giraldillo.

Una de las últimas aportaciones del arte almohade en Sevilla, la Torre del Oro, constituía el último baluarte del lienzo de

muralla que arrancaba desde el Alcázar. Muchas leyendas intentan explicar el nombre de la torre, como la de los reflejos del sol en los azulejos que presuntamente la recubrían o la que alude a los cabellos de una dama que el rey don Pedro hubiera encerrado en el edificio. Sin embargo, se la llamaba del Oro por su importancia, igual que existía otra de la Plata. Construida en el primer tercio del siglo XIII, tiene una docena de lados y está rematada por un último cuerpo circular que fue añadido por Sebastián Vander Borcht en 1760. En la actualidad se encuentra en su interior un museo naval con grabados, cartas marinas, maquetas, instrumentos antiguos de marear y documentos históricos. En la torre se traza una imagen de la historia naval de Sevilla, de la importancia del río Guadalquivir y de la huella de numerosos marines ilustres.

One of the later examples of Almohad art in Seville, the Golden Tower is the last bastion of the fortified wall which

began at the Alcazar. There are many legends as to the origin of the tower’s name. Some say it refers to the reflections of the sun on the tiles which supposedly covered it, while others claim it was the golden hair of a damsel which King Pedro locked up in the building. The fact is that it was called the Golden Tower because of its importance in comparison to the nearby Silver Tower.

Built at the beginning of the 13th Century, the tower has twelve sides. The highest part of the tower was added by Sebastian Vander Borcht in 1760. Today it is a naval museum with engravings, letters, models, antique navigational instruments and historical documents. The museum also has information regarding Seville’s prestigious naval history, the importance of the Guadalquivir River and the routes of various famous navigators.

Con una superficie de 1.400 metros cuadrados, el Castillo de San Jorge alberga una exposición sobre la Santa Inquisición en España dividida en dos plantas. En la planta alta está la Sala Sensorial que, comprendida en tres espacios: el juicio de valor, el abuso de poder y la indefensión de las víctimas, traslada al visitante las mismas sensaciones que experimentaban los procesados por la Inquisición. En la planta baja encontramos diferentes zonas temáticas: la Barbacana, la Pasarela Interpretativa, el Teatro Multimedia, la Galería de Personajes, y el Muro de la Reflexión, con ciertos artículos de la Declaración de los Derechos Humanos.

With a surface area of 1,400 square metres, the San Jorge Castle offers an exhibition about the Holy Inquisition in Spain divided into two levels. The upper floor is the Sensorial Level which consists of three spaces: The Trial, The Abuse of Power and the Defencelessness of the Victims; which transmit to visitors the selfsame sensations experienced by those charged by the Inquisition. The lower floor also has various different spaces: The Barbican, an Informative Walkway, The Multimedia Theatre, the Gallery of Key Figures and the final stop is before the Wall of Reflection, which recalls basic articles of the Universal Declaration of Human Rights and which offers an opportunity for visitors to consider how many of these are violated.

El coso del Baratillo comenzó a construirse en 1761, siguiendo el proyecto de Francisco Sánchez de Aragón, y lo finalizó en 1881 el arquitecto Juan Talavera y de la Vega. Su aspecto externo es de estilo tardo-barroco apuntando ya hacia el clasicismo. En su Museo se exponen fondos relacionados con la propia historia de la Corporación nobiliaria que es pro-pietaria de esta Plaza de Toros: la Real Maestranza de Caba-llería de Sevilla, así como numerosos objetos relacionados con la fiesta de los toros. La temporada taurina se inicia el Domingo de Resu-rrección, continúa con las corridas de la Feria de Abril y el Corpus, y concluye, tras la Feria de San Miguel, con la tradicional corrida del día 12 de octubre.

Seville’s Baratillo Bullring started to be constructed in 1761 according to the project by Francisco Sánchez de Aragón and was finished in 1881 by the architect Juan Talavera y de la Vega. Its exterior shows the style of the Late Baroque and early Classicist period. Inside its Museum there are exhibits related to the history of the Noble Order which is the owner of the Bull-ring: ‘La Real Maestranza de Caballería de Sevilla’, as well as numerous objects associated with the art of bullfighting. The bullfighting season begins on Easter Sunday, continuing with bullfights through the April Fair and Corpus Christi, and concludes following the Fair of San Miguel with the traditional bullfight on 12 October.

Don MiGUEL MaÑara. El Venerable siervo de Dios Miguel Mañara nació en Sevilla en 1627. Tras la muerte de su esposa entra en una profunda crisis moral y dedica su vida a los pobres, para los que construye el Hospital, que funciona desde 1672 hasta el día de hoy, siendo actualmente una casa de acogida de ancianos sin recursos.

Don MiGUEL MaÑara. The Venerable Servant of God, Miguel Mañara, was born in Seville in 1627. Following the death of his wife he suffered a profound moral crisis and decided to dedicate his life to the poor, building the Hospital which has carried out its functions ever since 1627 and which is currently a shelter for the elderly in need of aid.

el recorrido turístico comienza ya en la propia fachada, de gran elegancia y belleza decorativa. En su interior

la visita nos guía hacia una ruptura con el presente que comienza en el doble patio, de gran belleza y diáfana luminosidad. En él se sitúan dos fuentes en las que se disponen esculturas de la Misericordia y la Caridad, obras del siglo XVII. En los muros del patio se encuentra un conjunto de paneles de azulejos holandeses, que muestran pasajes de la Biblia. Pero el gran valor artístico se encuentra en el interior de la iglesia. Algunas de las obras de arte que destacan de su interior son las Postrimerías o Jeroglíficos de la Muerte, dramáticas y terribles representaciones de la muerte realizadas por Valdés Leal y el conjunto completo de pinturas de Murillo, representando Obras de Misericordia, seis en total. En el Presbiterio se sitúa el impresionante Retablo Mayor, de intenso barroquismo, realizado por Pedro Roldán, Bernardo Simón de Pineda y Valdés Leal, que plasma la séptima obra de Misericordia: enterrar a los muertos. La visita al monumento sigue con la Sala de Cabildos, estancia del s. XVII donde todavía hoy se reúne la Hermandad, con obras de Zurbarán, Pedro de Camprobín, Valdés Leal, y donde se unen la arquitectura gótica de las Atarazanas con el esplendor del barroco clásico sevillano. Al final, se puede descansar en el bello Patio de los Rosales, jardín enmarcado entre arcos de las Atarazanas, donde están conservadas las rosas que plantó en vida Miguel Mañara. El recorrido puede completarse con la Visita de la Galería Alta (previa cita), donde se encuentra una parte importante de la colección pictórica de la Hermandad, así como estancias privadas como la Biblioteca, Sala Alta de Cabildo o Coro, desde donde se disfruta de una visión única de la Iglesia.

us on a journey into the past, starting with the striking and luminous double courtyard. Here you will find two fountains with sculptures of Mercy and Charity which date from the 17th century. The walls of the courtyard are decorated with a series of Dutch ceramic panels depicting scenes from the Bible. However its greatest artistic wealth is to be found in the interior of the church. Art works which stand out in its interior include the Hieroglyphs of Death, dramatic and terrifying representations of Death painted by Valdés Leal, and a complete a series of six paintings by Murillo which represent the Acts of Mercy. The Presbytery houses the impressive Main Altarpiece. This intensely Baroque work by Pedro Roldán, Bernardo Simón de Pineda y Valdés Leal represents the Seventh Act of Mercy, burial of the dead. The visit continues with the Chapter Hall, which dates from the 17th century and is still used for meetings of the Brotherhood. It is decorated with works by Zurbarán, Pedro de Camprobín and Valdés Leal and combines the Gothic architecture of the Royal Shipyards with the splendour of the classic Seville Baroque style. Finally, rest a while in the beautiful Courtyard of the Rose Bushes, which is framed by the arches of the Royal Shipyards and conserves rose bushes which were planted in the time of Miguel Mañara. It is also possible to visit the Upper Gallery (by appointment), which houses much of the brotherhood’s art collection, along with private quarters such as the Library, the Upper Chapter Hall and the Choir, which offers a unique view of the church.

El antiguo convento de la Merced pasó a ser museo de Bellas Artes en 1839. Desde entonces,

y debido a la extraordinaria riqueza de sus fondos, se ha convertido en la mejor pinacoteca de España, después del Museo del Prado. La actual entrada es una gran portada que tiene, en la hornacina, una Virgen de la Merced, junto a otros personajes. El vestíbulo de en-trada y los claustros muestran una rica y variada colección de azulejos sevillanos. Los fondos del Museo sevillano son herencia del expolio artístico sufrido por la ciudad hispalense en la primera mitad del siglo XIX por agentes extranjeros. La colección actual de pinturas se divide en dos núcleos principales: el del barroco sevillano y las obras correspondien-tes al romanticismo y al costum-brismo. Además de importantes pinturas de las escuelas sevillanas, valenciana y catalana del siglo XV y la presencia de buenos ejemplos de pintura flamenca, una de las obras maestras del Museo es, sin duda, el retrato de ‘Jorge Manuel’, pintado por su padre, El Greco.

The former convent of Merced Calzada was restored to create this magnifi cient Fine Arts

Museum in 1839. Since then, and thanks to its impressive collection, it has earned the status of one of the most important art collections in Spain after the Prado Museum. � e entrance to the museum is a beautiful archway that contains

the image of the Virgin of Mercy alongside other characters in a vaul-ted niche. � e entrance hall and the cloisters contain a rich and varied collection of tiles from Seville. � e museum’s collection com-prises the works which survived the artistic pillaging by foreign exporters that took place in Seville in the fi rst half of the 19th Century. � e current collection of paintings is divided into two sections: Baroque Seville and secondly a section dedicated to romantic and typical images. Apart from works belonging to famous schools of Seville, Valencia and Catalonia in the 15th Century, there is also a collection of Flemish paintings. One of the gems of the museum is undoubtedly the ‘Portrait of Jorge Manuel’ which was painted by his father, El Greco.

El antiguo convento de la Merced pasó a ser museo de Bellas Artes en 1839. Desde entonces, y

debido a la extraordinaria riqueza de sus fondos, se ha convertido en la mejor pinacoteca de España, después del Museo del Prado. La actual entrada es una gran portada que tiene, en la hornacina, una Virgen de la Merced, junto a otros personajes. El vestíbulo de en-trada y los claustros muestran una rica y variada colección de azulejos sevillanos. Los fondos del Museo sevillano son herencia del expolio artístico sufrido por la ciudad hispalense en la primera mitad del siglo XIX por agentes extranjeros. La colección actual de pinturas se divide en dos núcleos principales: el del barroco sevillano y las obras correspondien-tes al romanticismo y al costum-brismo. Además de importantes pinturas de las escuelas sevillanas, valenciana y catalana del siglo XV y la presencia de buenos ejemplos de pintura flamenca, una de las obras maestras del Museo es, sin duda, el retrato de ‘Jorge Manuel’, pintado por su padre, El Greco.

Museum in 1839. Since then, and thanks to its impressive collection, it has earned the status of one of the most important art collections in Spain after the Prado Museum. The entrance to the museum is a beautiful archway that contains

the image of the Virgin of Mercy alongside other characters in a vaul-ted niche. The entrance hall and the cloisters contain a rich and varied collection of tiles from Seville. The museum’s collection com-prises the works which survived the artistic pillaging by foreign exporters that took place in Seville in the first half of the 19th Century. The current collection of paintings is divided into two sections: Baroque Seville and secondly a section dedicated to romantic and typical images. Apart from works belonging to famous schools of Seville, Valencia and Catalonia in the 15th Century, there is also a collection of Flemish paintings. One of the gems of the museum is undoubtedly the ‘Portrait of Jorge Manuel’ which was painted by his father, El Greco.

Antiquarium-Metropol Parasol

S ituado en la planta baja del Metropol Parasol, Antiquarium es un museo con restos arqueológicos desde la Roma imperial en el siglo I d.c hasta la época almohade, en el siglo XII d.c. El

visitante puede encontrar aquí antiguas casas, conducciones de agua residuales, una factoría de salazones de pescado (siglo I) o mosaicos de los siglos II, III y VI. En total, 4.500 metros cuadrados con restos de la Sevilla romana, visigoda y almohade. Y todo ello a los pies de una de las obras arquitectónicas más vanguardistas de Sevilla. Las ‘Setas’ (Espacio Metropol Parasol) son un lugar de encuentro, ocio y cultura en el centro de Sevilla, que consta de una plaza de abastos (mercado), el mencionado museo arqueológico (Antiquarium) y un paseo-mirador que ofrece unas imponentes vistas de la línea de cielo de la ciudad.

Ya con la conquista de la ciudad por Fernando III de Castilla, el Santo, se establecieron 24 parroquias, en su mayoría aprovechando las mezquitas existentes. La Iglesia de Santa Ana (E-5), en Triana, fue la primera construida de nueva planta, a finales del siglo XIII, y cuenta la leyenda que fue mandada construir por Alfonso X el Sabio tras la curación de una enfermedad en sus ojos. Otras iglesias, como la de Santa Cruz (C-5) y Santa María la Blanca (C-5), surgieron en el siglo XIV a partir de sinagogas preexistentes. Debido al crecimiento de la ciudad extramuros aparecieron en el siglo XVI los templos de San Bernardo (B-5) y San Roque (B-4) y, ya en el siglo XVII, se funda la O en Triana (F-4). Conocer las distintas iglesias de Sevilla requiere tiempo y atención por el número de templos y por la riqueza de cada uno de ellos. Es posible una aproximación a las más altas cotas del arte gótico a través de la Santa Catedral de Sevilla (D-5), pero también hay diseminados por la ciudad numerosos ejemplos de arte mudéjar, renacentista y, sobre todo, barroco. MONASTERIOS Y CONVENTOSPor otra parte se encuentran los monasterios y conventos, que se propagaron con especial viveza en el siglo XVII guiados por el puso contrarreformista. En 1671 podían contarse 45 monasterios de frailes y 28 conventos de monjas de las distintas órdenes. Las iglesias de San Jacinto (F-5), La Magdalena (E-4) y Capuchinos (B-3) pertenecieron en su día a estos cenobios. Entre los hospitales religiosos sobresalen el de las Cinco Llagas (hoy sede del Parlamento de Andalucía, C-1) y el de la Caridad (D-5, más información en página 9). En cuanto a capillas y ermitas, también significativas en número, destacan la Capilla de los Marineros (E-5) y la Capilla del Patrocinio (F-4), ambas con gran protagonismo en Semana Santa. The “Most Noble, Most Loyal, Most Heroic, Unconquered and Marian City of Seville”,

as its long title proudly proclaims, harbours astounding historic and artistic heritage in its churches. Following the city’s conquest by St Ferdinand III of Castile, 24 parish churches were erected, the majority of which took advantage of the structure of existing mosques. The Church of Santa Ana (E-5) in Triana dates from the late 13th century and was the first newly built church. Legend has it that Alfonso X the Wise ordered its construction following his recovery from an eye illness. Other churches such as Santa Cruz (C-5) and Santa María la Blanca (C-5) were established in the 14th century on the site of previously existing synagogues. Due to expansion beyond the city walls the churches of San Bernardo (B-5) and San Roque (B-4) were built in the 16th century, and La O in Triana in the 17th century (F-4). A tour of the different churches of Seville requires time and a little preparation due to the sheer number of churches and the wealth of attractions to be found inside them. You can appreciate the peak of Gothic art in Seville Cathedral (D-5), but there are also numerous examples of Mudejar, Renaissance and above all Baroque art.

MONASTERIES Y CONVENTSMany monasteries and convents also sprang up, particularly in the 17th century during the Counter-Reformation. Seville once had 30 convents and was known as the convent city. Their dominant presence in Seville society is evident from the many references in

the city’s legends and historical figures, with the mark of religion being present both in fiction and reality. Key figures include St. Angela of the Cross, who died in 1932 and was canonised in 2003, and whose incorrupt body may be visited every 2 March in the Mother House of the Sisters of the Cross. Doña María Coronel, meanwhile, threw boiling oil over her face to avoid the persistent advances of King Pedro I The Cruel, and Doña Inés was courted by Don Juan. Nowadays there are 19 cloistered convents in Seville. In general, the nuns from all over Spain living in Seville’s convents devote their time to prayer and work (“Ora et Labora” in the words of St. Paula) whether embroidery, picture framing, gardening, darning, sewing, and particularly at this time of year the famous convent sweets and confectionery. These delicious traditionally made products can be purchased in the convents themselves or in specialist stores.

Sevilla llegó a tener treinta conventos y fue conocida como la ‘ciudad conventual’. Su presencia en la sociedad sevillana queda de manifiesto acudiendo

al corpus de leyendas sevillanas y de figuras históricas de la ciudad, lo mismo en la ficción que en la realidad se percibe la huella de las religiosas. Desde el fervor que despiertan personajes como Santa Ángela de la Cruz, fallecida en 1932 y canonizada en 2003, cuyo cuerpo incorrupto es visitado cada 2 de marzo en la Casa Madre de las Hermanas de la Cruz, hasta Doña María Coronel, quien se arrojó aceite hirviendo al rostro para acabar así con el acoso del monarca Pedro I el Cruel, o la doña Inés cortejada por Don Juan. En la actualidad se conservan diecinueve conventos de clausura. Entre las que congregaciones en activo destacan las agustinas de San Leandro y las franciscanas de Santa Inés. En general, las monjas de toda España que viven en los cenobios hispalenses viven entregadas al rezo y al trabajo —aquel “Ora et Labora” de Santa Paula—, ya sea en el bordado, encuadernación, recolección de hortalizas, zurcido, confección de ropa o, por estas fechas, los famosos dulces y confituras de convento. Son elaborados de forma artesanal y se pueden adquirir en el propio convento o en establecimientos especializados.

Desde noviembre puede encontrarse en cualquier esquina los tradicionales puestos ambulantes de castañas asadas, muy propios de estas fechas, y junto al Archivo de Indias se despliega la clásica Feria del Belén, donde es posible hacerse con todas las figuras y detalles que se requieren para reproducir el Nacimiento de Cristo, que es en definitiva la esencia del belenismo. Las calles principales del centro se iluminan para envolver al paseante.

The light of fireplaces and the characteristic smell of burning firewood inevitably brings to mind one of the most deeply rooted festivals in seville,

which makes its appearance at this time of the year: Christmas. seville province receives this festive season with open arms through its many centenary traditions and colourful celebrations. it is after 8 december, the feast of the immaculate Conception, that Christmas can truly be sensed in the air, when the towns begin to decorate their streets with spectacular Christmas lights, decorations and nativity scenes. The tradition of nativity scenes is deeply rooted in the towns of the province. many homes are decorated with these small figures which recreate the moment of the birth of Christ (with some even opening their doors to visitors). yet in some cases this tradition goes even further: more and more towns are creating living nativity scenes, whereby the locals dress in period costumes to re-enact these scenes from the Bible in the streets of their home town, for example in lora del río and albaida del aljarafe. The churches of these towns also represent the coming of the messiah with their own particular traditions, such as the Brotherhood of la Plaza in Castilleja de la Cuesta, with its centenary jornaditas festivities (another manner of re-enacting the days prior to and following the birth of Christ). in january, the arrival of the Three Kings is one of the most eagerly awaited moments on the Christmas calendar, particularly for the younger ones in the family. Throughout the province on 5 january, the traditional Procession of the Three Kings makes its way through the streets of seville´s towns handing out sweets and toys, and even the odd leg of ham in some towns such as villanueva. however, the most traditional of all these processions, to the extent that it has been declared a festival of tourist interest since 2001, is the procession which is held in the capital city (consisting of 30 floats). and of course, mention should also be made of the confectionery at this time of year, for Christmas in seville would not be the same without the typical polvorones, mantecados, roscos de vino and alfajores. The best place to fully experience all these delicious sweets is in the city of estepa. and what better way to accompany these sweets than with the liqueurs and anisettes of the sierra norte in seville. as is evident, Christmas is a season of timeless traditions and dazzling beauty in seville and the province.

y que este mes nos brinda el calendario: la navidad. la provincia de sevilla recibe tan señalado acontecimiento con sus mejores galas, envuelta en tradiciones centenarias y fiestas llenas de color. después del 8 de diciembre, día de la inmaculada Concepción, comienza a percibirse el verdadero aroma navideño. los pueblos comienzan a engalanarse con luces, adornos invernales que nos sorprenden por doquier, belenes… la tradición belenista tiene mucho arraigo en los pueblos de la provincia. muchos hogares se adornan con esas pequeñas figuras que describen el momento del nacimiento de Cristo (algunos incluso abren sus puertas a los visitantes). Pero la tradición va más allá. Cada vez son más los municipios que recrean belenes vivientes. los vecinos, ataviados con ropajes de la época, representan estas escenas por las calles de su ciudad, como es el caso de lora del río o de albaida del aljarafe. asimismo, las mismas iglesias de los pueblos recrean el advenimiento del mesías con sus particulares tradiciones, como es el caso de la hermandad de la Plaza de Castilleja de la Cuesta, que año tras año celebra las centenarias jornaditas (otra manera de representar los días previos y posteriores a la natividad de jesús). ya en enero, la llegada de los reyes magos se convierte todos los años en uno de los momentos más señalados en el calendario navideño, sobre todo por los más pequeños de la familia. a las calles de los pueblos de toda la provincia salen, el día 5 de enero, las tradicionales cabalgatas, recorriendo todos sus rincones mientras lanzan caramelos y juguetes (en ocasiones hasta alguna que otra paletilla de jamón, como en el caso de villanueva del ariscal). aunque la que tiene más tradición e, incluso, está declarada como fiesta de interés turístico desde 2001 es la cabalgata de la capital. y, por supuesto, no se pueden dejar atrás los dulces navideños. ¿Qué sería de la navidad sin los polvorones, los mantecados, los roscos de vino o los alfajores? Pues nada como darse un paseo por estepa para poder degustar estos exquisitos dulces. y para acompañarlos qué mejor que los licores y anises elaborados en la sierra norte de sevilla. de esta manera, tanto sevilla como su provincia hacen de estas fechas una época llena de tradición y belleza.

El Salón de la Logia del Ayuntamiento de Sevilla (D-4) acoge una exposición sobre la historia de España en la centenaria competición de la Copa Davis. Presidida por la mítica Ensaladera de plata, la muestra incluye recuerdos de los distintos combinados españoles, entre ellos la camiseta que utilizó Carlos Moyà en el partido que dio el punto decisivo de 2004 ante Estados Unidos (en el Estadio de la Cartuja), recuerdos de las eliminatorias Challenge Round de 1965 y 1967 o equipaciones completas de Rafael Nadal en la final 2009 de Barcelona.

SPAIN AND THE DAVIS CUP. The Lodge Hall of Seville’s Town Hall (D-4) will offer an exhibition looking back on Spain’s participation in the centenary history of the Davis Cup. Presided over by the legendary silver salad bowl, the exhibition includes memorabilia of the different Spanish team members, including the shirt worn by Carlos Moyá in the match which gave Spain the decisive point in 2004 against the United States (in the Cartuja Stadium), souvenirs from the Challenge Rounds of 1965 and 1967 and Rafael Nadal’s complete team uniform for the 2009 final in Barcelona.

December is a month of celebrations in Seville, with events of all kinds keeping up the festive spirit even beyond the Christmas period. The installation

of the Christmas lights in the main shopping streets and the tennis court in Plaza de San Francisco (D-4), ensure that the last month of the year has a special glow and a festive atmosphere. The draw for the Davis Cup matches between Spain and Argentina will take place on 1 December in the Lope de Vega Theatre (C-6), marking the start of a number of different events on the calendar. Following the championship weekend (2, 3 and 4 December) there are two national holidays which are often marked with tourism activities: Spanish Constitution Day (6 December) and the Immaculate Conception (8 December), the day when the ‘seises’ dance in Seville Cathedral. From 1 to 8 December the second edition of the City of Seville Procession Band Congress will be held. The Sala Joaquín Turina Hall of the Cajasol Foundation (D-3) will host informative talks until 5 December and the different concerts will be held in the Alameda Theatre (D-2), the Church of San Bernardo (B-5), the Church of Santo Ángel, the Basilica of the Macarena (C-2), the Chapel of the Sailors (E-5), the Basilica of El Gran Poder (D-3) and the Sanctuary of Nuestro Padre Jesús de la Salud (Church of the Gypsies). One of the highlights will be the concert in the Casino de la Exposición (C-6) on 6 December with the participation of more than 60 bands. There will also be an exhibition in the Casino itself and a final procession from the Alameda de Hércules (D-2, D-3) to Plaza de la Encarnación (D-3, D-4) passing through La Campana, Plaza Nueva and Plaza del Salvador (D-4). If you visit Seville during these days you can also see the latest trends in wedding fashion, attend a concert of the Seville Baroque Orchestra (winner of the National Music Award 2011) or simply let yourself be carried away by the festive atmosphere which dominates the city during this period.

Diciembre es un mes eminentemente festivo en Sevilla, un periodo en el que convocatorias de todo signo consiguen extender la atmósfera

navideña más allá de los días señalados en el calendario. De entrada, con la iluminación ornamental de las calles comerciales y la pista de tenis instalada en la Plaza de San Francisco (D-4), la ciudad empieza el último mes del año con un brillo especial y con ambiente de fiesta. El sorteo de emparejamientos entre las selecciones de España y Argentina tiene lugar el 1 de diciembre en el Teatro Lope de Vega (C-6) y a partir de ahí se encadenan los eventos y citas de interés. No en vano, tras el fin de semana del campeonato (días 2, 3 y 4 de diciembre) llegan dos días festivos que habitualmente se prestan a acoger algún tipo de programación turística: el Día de la Constitución Española (6 de diciembre) y el Día de la Inmaculada (8 de diciembre), cuando los niños seises vuelven a danzar en la Catedral. Del 1 al 8 de diciembre se celebra la segunda edición del Congreso de Bandas de Música Procesional Ciudad de Sevilla. La Sala Joaquín Turina de la Fundación Cajasol (D-3) acoge las sesiones divulgativas hasta el día 5, los distintos conciertos se celebran en el Teatro Alameda (D-2), la Iglesia de San Bernardo (B-5), Iglesia del Santo Ángel, Basílica de la Macarena (C-2), Capilla de los Marineros (E-5), Basílica del Gran Poder (D-3) y Santuario de Nuestro Padre Jesús de la Salud (Templo de los Gitanos) y, destacando entre todos ellos, uno en el Casino de la Exposición (C-6) el día 6 con la participación de más de 60 bandas. A todo ello hay que añadir una exposición en el propio Casino y un desfile final entre la Alameda de Hércules (D-2, D-3) y la Plaza de la Encarnación (D-3, D-4) pasando por la Campana, la Plaza Nueva y la Plaza del Salvador (D-4). En estos días, además, se puede visitar Sevilla para conocer las últimas tendencias de la moda nupcial, asistir a un concierto de la Orquesta Barroca de Sevilla (Premio Nacional de Música 2011) o, en definitiva, para dejarse llevar por el ambiente festivo de cada diciembre.

el número 1 de la calle Chapineros, conocido en su día como Edificio Rivas-Meguerry, constituye una de las más valiosas muestras del estilo regionalista

sevillano, esa arquitectura que predominó en Sevilla en el primer tercio del siglo XX y que se mantiene señorial en muchas de sus calles. Su autor, Juan Talavera y Heredia, fue el único capaz de competir con Aníbal González, emblema del regionalismo, y de superarle en algunos aspectos. Lo que más llama la atención en este edificio de 1922, con fachada de esquina a esquina entre las calles paralelas Álvarez Quintero y Francos, es la colorista ornamentación obra del gran pintor decorador Manuel de la Cuesta y Ramos. Las tonalidades sugieren cercanía con el modernismo, pero los motivos son decididamente regionalistas. Ahí están el torreón-mirador con sus tejas a cuatro aguas y sus arcos, las embocaduras en ladrillo tallado y, cómo no, el conocido redescubrimiento artístico de la reja en ventanas y balcones. Por contra, pierde peso el ladrillo visto, al contrario que otras creaciones del autor ese mismo año. En todo caso, se revela como un soberbio ejercicio de sevillanía de la segunda década del siglo XX. Pues bien, en tan insigne espacio se ubica una boutique de esas que atesoran como pocas la elegancia sevillana. “La arquitectura de ayer vestida a la moda”, dice Fabiola. Y hay que darle la razón pues se ha sabido conjugar la estética del inmueble, incluso en su interior con las columnas de bronce, con las exclusivas colecciones de moda que las visitantes de la ciudad, lo mismo que las sevillanas más fieles, pueden encontrar en su interior. Aquí se expone desde el traje de flamenca a la lencería más delicada, pasando por la moda baño o las prendas de señora, según temporada. Por todo ello Fabiola es una institución en Sevilla. Y más que eso: es una ilusión, un mundo propio, un lugar al que volver para sentirse bien recibida. Un fabuloso compendio de lo que representa Sevilla en fondo y forma.

calle Chapineros 1, previously known as the Rivas-Meguerry Building, constitutes one of the most valuable examples of Seville’s Regionalist

architectural style, which dominated the city in the early part of the 20th century and can still be appreciated in many of its streets. Its architect, Juan Talavera y Heredia, was the only one to match the champion of the Regionalist style, Aníbal González, even outdoing him in certain aspects. The most striking feature of this building dating from 1922 running between the parallel streets Álvarez Quintero and Francos is the colourful decoration by the great painter and decorator Manuel de la Cuesta y Ramos. The tones resemble the Modernist style although the motifs are clearly Regionalist, such as the tower with the hipped tiled roof and brick proscenium arches, and of course the well-known readoption of grilles on the windows and balconies. The open-face brickwork is less prominent than other creations by the architect in the same year. However, all in all, it is an imposing example of Seville architecture in the 1920s. This illustrious building also houses a boutique which captures like few others the elegance of Seville. As its owner says, it is “the architecture of yesteryear dressed in the latest fashion”. Never better said, for Fabiola has managed to bring together the aesthetics of the building, even the interior with its bronze pillars, and the exclusive fashion collections which visitors to the city and her faithful customers from Seville can discover inside. Con ello el visitante encuentra otra sabrosa razón, magistralmente conjugada con las vistas, que convierten en una referencia gastronómica sevillana a esta casa palacio del siglo XVIII que es el hotel Vincci La Rábida.

mushroom season is upon us… following the first autumn ra-ins the highlands of the pro-

vince are dotted with these delicacies which spring up amongst the native flora, a time when the most dedicated mushroom hunters launch themsel-ves into the forest with nothing more than wicker baskets and plenty of patience; and these delicious morsels are undoubtedly worth the wait! Each month of the season is domi-nated by different mushroom varie-ties depending on the rainfall and the temperatures each year. Genera-lly, the best mushrooms are the first ones to appear, which need the most warmth. These include Boletus Ae-reous, known as tentullo in the Sierra de Aracena and faisan or ‘pheasant’ in the Sierra del Norte. Although it is not so easy on the eye it is truly ex-quisite, offering endless possibilities in the kitchen. As it is particularly meaty its properties can be enjoyed simply salted with garlic, pepper and oil. When combined with other ingre-dients it can turn a dish into a true masterpiece, such as a ratatouille, with an oven-roasted leg of lamb or sautéed with ham. In November and December the

milk cap emerges, a mushroom which is found amongst pine trees, hence its

nickname pinatel in Andalusia. There are five different types of Lactarius (its

December is the time for the characteristic ye-llow chantarelle mushrooms (Xantarellus Cibarius), also known as rebozuelos. These appear when the temperatures drop and need plenty of rainfall. If the conditions are right, you can appreciate this delicious mushroom with an aroma of fresh apricots which is perfect for scrambled egg dishes and is delicious with garlic and oil. Meanwhile, if there is plenty of rainfall as there was in 2010, when the temperatures drop the ‘trumpets of death’ (Craterellus cornucopioide) appear, popularly known as the ‘poor man’s truffle’. All these mushrooms are highly dependent upon the rainfall and the temperature, making them a truly exclusi-ve delicacy. For the restaurants, it is all a question of supply and demand. Regardless, mushrooms are veritable gastro-nomic delights due to their flavour, texture, aromas and health properties, with some offering anti-carcinogenic be-nefits and nearly all of them being antioxidants. So enjoy them to your heart’s content, because now is the season!

meras lluvias del otoño, brotan en los paisajes serranos en sim-

biosis con la flora autóctona, y los se-teros más ávidos e incondicionales se lanzan a por ellas sin mayor equipo que una cesta de mimbre y toneladas de paciencia. El manjar lo merece. En cada mes de la estación pre-domina unas setas distintas, depen-diendo de las precipitaciones y de las temperaturas de ese año. Por lo general, las mejores setas son las pri-meras, las que necesitan más calor. Entre ellas se encuentra el Boletus Aereous, conocido en la Sierra de Aracena como tentullo y como fai-sán en la Sierra Norte. Aunque poco atractivo a la vista, es toda una ex-quisitez. En la cocina ofrece infinitas posibilidades. Al ser especialmente carnosa, se puede paladear en toda su dimensión simplemente salteada con ajo, pimienta y aceite. Combina-da con otros ingredientes, eleva el resultado final a la categoría de obra maestra: en un pisto, aromatizando una pierna de cordero al horno, pasa-da a la sartén con jamón, etcétera. En noviembre/diciembre llega el níscalo, una seta que va con el pino, por eso se le conoce como pinatel en Andalucía. Los cinco tipos de Lacta-rius (su nombre científico), duros y crujientes, son buenos para agregarlos picados a una caldereta de carne ibérica. En diciembre están las chantarellas (Xan-tarellus Cibarius), también conocida como rebozue-lo, muy reconocibles por su color amarillo. Salen con más frío y necesitan de abundantes lluvias. Si se dan estas con-diciones, el comensal podrá deleitarse con esta exquisita seta, muy aromática (huele a albaricoque fresco), a la que le va mucho el huevo, en revueltos, y es muy apropiada con ajo y aceite. Si abundan las lluvias, como en 2010, cuando hace frío salen las trompetas de los muertos, Craterellus cor-nucopioide, conocida popularmente como “la trufa del pobre”. Así son las setas, tan dependientes de la pluvio-metría y de la temperatura que pueden convertirse en un manjar poco asequible. Es la ley de la oferta y la demanda pasada por los fogones. Con todo, lo cierto es que las setas son una exquisitez gastronómica por su sabor, textura, aromas y propiedades alimenticias y saludables. Algunas son anticancerígenas; casi todas, antioxidantes. Que aproveche, que es el mo-mento de disfrutarlas bien frescas.

la gastronomía forma parte de la cultura y de la forma de vida de un destino, es algo que lle-

na de curiosidad al visitante. Es una forma como ninguna otra de cono-cer una cultura, de ahí que ya no es raro escuchar eso de rutas gastro-nómicas o de turismo gastronómi-co. Además, tiene gran incidencia en la satisfacción final del visitante. La gastronomía sevillana es tradicional, con un producto excep-cional por su enclave y diversa por su propia historia, pero sobre todo tiene una gran vocación universal: hay una fiebre mundial por las ta-pas, unas de nuestras formas tra-dicionales de comer. No obstante, para poder explicar qué es Sevilla, más que a través de un bocado lo conseguiría a través de un sorbo, una cerveza Cruzcampo, auténtico estandarte de nuestra gastronomía y nuestra forma de vida. Aunque sería injusto olvidar las aceitunas, el adobo, los guisos de vigilia, las tortas de aceite o la repostería de conventos... Por otro lado, el gran dinamis-mo que experimenta Sevilla, con escuelas de hostelería, concursos de chefs, nuevos itinerarios gastro-nómicos, congresos, ferias comer-ciales, etcétera, que construyen un destino más atractivo, estimulan al visitante e incitan al profesional y

Seville’s gastronomy is tradi-tional, with exceptional products due to its location and the diversity of its history, but above all it has a very universal approach: there is currently a worldwide obsession with tapas, one of the most tradi-tional ways of eating here. Howe-ver, in order to explain the essence of Seville you require more than just food; you also need a Cruzcam-po beer, a flagship of the local gas-tronomy which represents our way of life. Also worthy of mention are the olives and other pickles, the di-fferent stews and the oil cakes and other convent sweets. On the other hand, the dy-namic growth of cooking schools, competitions, new gastronomic routes, conferences, trade fairs and so on makes Seville a more attracti-ve destination, drawing visitors and encouraging professionals and food companies to involve themselves more in the process. Training is fundamental in any sector, and in the case of new wor-kers in the food industry it is quite simply a necessity. The Gambrinus School of Gastronomy seeks to em-brace all of these developments by offering both cooking courses and management courses for restaurant owners and managers. Naturally, training is impor-tant in various other specific areas within the tourism field, such as the languages, culture and customs of our visitors’ home countries. Whi-le tourism is undoubtedly fostered through gastronomy, it is logical for us to also have courses of this nature to help ensure more fluid communication and a combined effort towards the common goal of tourism promotion.
