Pad Thai Noodle Dish Serves 2 Pad Thai is a stir-fried dish commonly served in Thailand as a street food and at casual eateries. It is made with soaked dried rice noodles, which are stir-fried with eggs and other fresh ingredients. It may contain proteins like fresh shrimp, crab, squid or chicken. Pad Thai is a stir-fried dish commonly served in Thailand as a street food and at casual eateries. It is made with soaked dried rice noodles, which are stir-fried with eggs and other fresh ingredients. It may contain proteins like fresh shrimp, crab, squid or chicken. Thai food combines core ingredients like chilli, garlic, ginger, lemongrass, fish sauce, palm sugar and lime juice. The essence of Thai cuisine is achieving the perfect harmony between sweet, sour, hot and salty.

Ingredients:75 g medium flat rice noodles (soak in boiling water 15-20 minutes until soft)2 t oil1 egg, beaten½ chicken breast, thinly sliced1 garlic clove, crushed1 T fish sauce1 T light soy sauce1 t tamarind paste ½ t chilli powder (optional)2 t sugar1 t chilli paste in soy bean oil2 t vinegar2 chives cut into 2cm lengths25 g bean sprouts1 stalk coriander for garnish1 lime wedgeMethod:

1. In the wok, heat half of the oil. Add beaten egg until just cooked looking like an omelette. Take out, fold and leave on enamel plate.

2. Add rest of the oil to the same wok. Fry chicken till golden brown and cooked. Add garlic and fry for 30 seconds.

3. Add fish sauce, soy sauce, sugar, chilli paste and vinegar. Stir for 1 minute until sauce is cooked.

4. Add bean sprouts, garlic chives, eggs (cut into strips) and drained noodles. Carefully turn over a few times until noodles are coated in sauce.

Serving:Place on a serving dish and garnish with coriander and lemon wedge.
