SELECTION:
• The most popular form of fresh tomatoes should be bright red in color with taught skin and firm to the touch. Tomatoes can also come in a variety of other colors such as yellow, pink, orange, purple, white, or green.
• Avoid tomatoes with wrinkled skins or that are squishy or contain soft watery spots or brown blemishes that leak juice. The peak season for garden fresh tomatoes is from June through September.
• Tomatoes are not only a popular fresh produce item but can also be frozen or canned and make a delicious sun dried snack.
FUN FACTS:
• Spanish explorers introduced the tomato to Europe following Central American expeditions in the 1600’s. Later, Europeans of wealth considered tomatoes poisonous because the tomato’s high acidity caused lead to leach from pewter plates and eating utensils triggering lead poisoning.
• Although tomatoes are used as vegetables, from a botanical perspective, they are actually a fruit seed.• Tomatoes first became popular in the U.S. in the 1800’s with the influx of Italian immigrants. The tomato’s
continued popularity increased with the invention of pizza in the late 1800’s. Pizza was first invented during a visit to Naples by Queen Margarite by a chef using three ingredients to represent the colors of the Italian flag-red, white, and green with red representing the tomato sauce!
STORAGE:
NUTRITION/HEALTH/WELLNESS:
• Despite their high acidity, tomatoes are high in fiber, low in fat, and low in calories containing only 18 calories in just less than a cup.
• Tomatoes are nutrient dense in Vitamin C, Vitamin K, potassium and folate which promotes cell and tissue growth and is especially important for pregnant women.
• The nutrients, antioxidants, and vitamins found in tomatoes contribute to heart health and healthy immune systems; skin, cell function, and the regulation of blood pressure.
• Keep tomatoes at room temperature until they turn completely red and ripen, then refrigerate to prevent spoilage.
• Remove refrigerated tomatoes at least an hour before eating to experience the full flavor of a tomato--complex compounds in tomatoes that affect their taste and smell are inhibited by cold refrigeration.
• Tomatoes can be easily stored frozen without blanching or peeling. Rinse and dry before placing in airtight zip-top bags. Use a straw to suck out any excess air. When thawed, the skins will peel away easily and the flesh can be used for cooking in all your favorite recipes.

Caprese Salad on a Stick

Ingredients: 4 servings
• 16 cherry tomatoes
• 16 fresh basil leaves
• 8 oz. fresh mozzarella
• 2 tbsp. Balsamic vinegar
• 1 tbsp. olive oil
• 16 toothpicks
Directions:
1. Gently wash and dry the tomatoes.2. If using mozzarella balls, cut them to make 16
equal pieces. If using a large piece of fresh mozzarella, then cut into 16 equal slices.
3. To make a skewer, place a toothpick through a cherry tomato. Top the tomato with a basil leaf and then a piece of cheese.
4. Mix together the vinegar and oil. Drizzle this mixture onto the platter before placing your skewers.
5. Arrange the skewers on a platter and serve.

This is an easy recipe for kids to make and try themselves!

Ingredients: 4 servings
• 20 oz. round steak
• 14-15 oz. low-sodium canned chickpeas, drained
• 2 ripe avocados, halved, peeled and pits removed
• 3 ripe, red tomatoes, quartered
• 1 medium red onion, thinly diced
• 1 tbsp. butter
• ¼ cup extra virgin olive oil
• ¼ cup apple cider vinegar
• 2 tsp. cumin
• 2 tsp. minced garlic
• ¼ tsp. salt
• ¼ tsp. pepper
• ¼ tsp, red pepper flakes (optional)
• 1 tsp. toasted sesame seeds (optional
Directions:
1. Prepare the marinade and dressing by adding the last 7 ingredients in a medium-sized mixing bowl and whisk until well blended or, for simplicity, put the ingredients in a mason jar with a tight fitting lid and shake well to blend.
Tip:
Place ¼ of the tomato salad and chick peas into an individual meal prep container as shown in the picture. Top with ½ of an avocado. Slice the round steak against the grain into ½ inch strips and arrange ¼ of the round steak in each container. Refrigerate for a healthy lunch or eat for dinner over the next few days.
2. Arrange the round steak in a deep baking dish. Pour half the marinade over the steak and turn the steak to coat all areas. Cover and refrigerate for 2-4 hours. Refrigerate the remaining marinade for use as a dressing as described later in the recipe.
3. Take the round steak from the refrigerator and bring to room temperature for 30 minutes. Remove the steak from the pan and place between 2 sheets of parchment paper. Preheat the oven to 325 degrees F.
4. Use a meat tenderizer or the bottom of the canned chickpeas to gently pound and flatten the round steak. Flip the meat over and repeat so both sides are tenderized. Use only enough pressure to flatten the round steak because too much force will tear the meat.
5. In a large frying pan melt the butter. Place the meat in the pan and sear each side for one minute. Once the meat has been seared, arrange in a baking dish with the marinade. Place the baking pan in a preheated oven and bake uncovered for 12 minutes. Flip the meat and cook for an additional 10 minutes or until a meat thermometer reads 140-145 degrees F. Remove from oven and let the steak cool for at least 10 minutes before cutting.
6. While the steak cools, prepare the avocados, onion, and tomatoes as described in the ingredients list. Place the tomatoes and onion in a mixing bowl and drizzle with half of the remaining dressing and gently toss. In a separate mixing bowl, toss the chick peas with the remaining dressing.

• 12 oz. tofu, pressed and cubed• 2 tbsp. olive oil, reserved• ½ onion, diced
• Two 14.5 oz. cans diced tomatoes• 1 garlic clove, minced• 2 red potatoes, diced
• 2 tbsp. curry powder• 2 tsp. paprika• 2 cups instant brown rice
In our regular rotation of familiar meals, it can be easy to rely on uncomplicated cuts of meat, like chicken breast or ground beef, when making a meal. A familiar type of meat that’s easy to imagine what to do with it. It can be intimidating to try a new cut of meat with a new recipe that specifically calls for it. If you’re unfamiliar with it, tofu can be even more intimidating.
As a complete protein which provides all the 9 essential amino acids, tofu is a great way to mix up your proteins in your meals. It stands out in the non-animal based proteins by being low in carbohydrates. Tofu is also low in calories and high in protein. Tofu contains isoflavones which are part of a group of plant based proteins and have found to be associated with lower rates of osteoporosis and may reduce the number of hot flashes.
Over the past several years there has been encouragement to reduce the amount of animal protein in your diet and replacing with plant based protein. Substituting plant-based foods for meat has been shown in studies to improve heart health and may reduce your risk of diabetes. Going meatless doesn’t have to be just on one full day, you can sprinkle it throughout your week and change it so your lunches are meat free or alternate days.
This dish can be made using any protein source and shows how easy it is to substitute tofu in any other dish. Using the liquid in the canned tomatoes to make the curry paste adds additional flavor while tofu often takes on the flavors of what it’s cooked in. There are many different types of curry and this is a good starting dish to experiment with both the spice and the protein. It can also serve as a baby step into trying to cook ethnic dishes without needed too many ingredients you might not already find in your pantry.
1. Cook the rice according to package directions.2. Heat 1 tbsp. olive oil in a sauté pan over medium heat
then add the onions, garlic and potatoes. Stir until the potatoes have browned, about 10 minutes.
3. Add the remaining ingredients, save the tofu, careful to stir to combine the spices throughout, cover and let simmer for 10 minutes stirring occasionally.
4. In a separate pan over medium heat add 1 tbsp. olive oil and add the tofu rotating the cubes searing each side.
5. Once the potatoes have softened add the tofu to mix.6. Serve alongside the rice once the curry comes to heat,
about 4 minutes.
Notes:• To press tofu, remove excess moisture from the tofu by
pressing it between paper towels. Place a heavy object on top and let sit for 30 minutes.
• This dish can easily be made with any protein source. If using animal protein, consider letting it simmer longer to tenderize the meat.
• The size of the pan can impact the liquids in this mix and you might need to add water to ensure the ingredients are covered and don’t burn.
• Swap the brown rice with vegetable noodles to add variety.• For additional heat, add red pepper.
