You might need to ask your butcher or even a store meat manager to order in a tri-tip roast. Two pounds is a good size, but if you come across a larger one, by all means grab it. The trick is to carve the tri-tip against the grain, which can change directions in this cut. So before you rub it and roast it, take a look at the raw meat and see which direction the long strands of muscle fiber are running on each part of the roast. After the roast has been cooked, and it has rested for 15 minutes or so, slice the roast in two at the place where the fibers change direction.

Carve each piece separately.It’s summer so we aren’t going near the oven!

•Trim silver skin. The meat may have a thick layer of fat, some of which can be sliced off, but keep a good amount to help baste meat.•Sprinkle meat with rub and massage lightly all over. Cover and refrigerate at least an hour or as long as overnight. Remove from refrig an hour before cooking.•Prepare charcoal grill or heat a gas grill to high. Place roast on grill and sear one side well, 6 to 8 minutes, checking for flare-ups. Turn the roast and sear other side for about the same time. Then lower gas to medium-high or move the meat to a cooler part of the charcoal grill.

•Turn meat again and cook another 8 to 10 minutes. Flip and cook again. A 2-pound roast will require about 20 to 25 minutes total cooking time. The roast is ready when an instant-read thermometer reaches 130º when inserted into the thickest part. •Rest roast on a cutting board 15 minutes. Slice against the grain. The roast is shaped like a boomerang, so either cut it in half at the center of the angle, or slice against the grain on one side, turn the roast and slice against the grain on the other side.

First State National Historical Park (NHP) and the Boys & Girls Clubs of Delaware are jointly participating

in Delaware’s inaugural American Craft Week. American Craft Week October 2-11, 2015 is a nation-wide celebration of artisans and art organizations, centered on engaging communities and encouraging artistic collaboration.This is the first year Delaware will join the national celebration, providing a great opportunity for First State NHP to engage the next generation of park stewards and artisans by collaborating with the Boys & Girls Clubs of Delaware.First State NHP and the Boys & Girls Clubs of Delaware will create Arts Afire projects to showcase during Craft Week that will celebrate the National Park Service Centennial. Included in the National Park Service (NPS) A Call to Action Initiative, Arts Afire encourages NPS employees, partner organizations, and park visitors to showcase the meaning of parks through dance, music, visual arts, writing and social media. In collaboration with the Boys & Girls Clubs of Delaware’s Pegasus ArtWorks, NPS will engage diverse audiences, especially young people, through the arts and the exploration of First State NHP sites as a means for self-expression and a way to reflect on ideas and experiences that matter to Delaware’s youth. George Krupanski, President/CEO for the Boys & Girls Clubs of Delaware, comments on Pegasus ArtWorks saying, “The program focuses on teaching self-discipline and critical thinking skills through the learning of fine and performing arts. shaker, and muddle thoroughly until everything is well combined. Add tequila, cucumber juice, and ice, stirring vigorously for 15 seconds. Pour into a glass, and enjoy!

Local author and Cobble Jan Churchill

wins National Award.Jan of New Castle, and co-author Brig. Gen. (Ret) Kennard Wiggins, won first place in the history (non-fiction) category for their book, DELAWARE AVIATION, in the 2015 National Federation Communications Contest.

Earlier this year Churchill and Wiggins book received a first place award by the Delaware Press

Association's Communications Contest in the same category.

Published by Arcadia Publishing of South Carolina, this attractive book contains images covering Delaware aviation from

the earliest days to the present time. Civilian and military aviation tell the story of aviation achievements in Delaware.

The Cobble review team recently went to Lewinski’s on Clinton in close by Delaware City. As suggested they tried the much talked about brussel sprouts. “They were flash fried and then mixed in an Asian-inspired ginger-lime vinaigrette.

We concluded that the heat of a fryer may not be quite hot enough and a wok would
