1 (10 – 12 lb.) whole turkey, thawed completely3 gal. peanut oil (or any higher temperature cooking oil) 2 jars (16 oz. ea.) Cajun Injector Marinade, Creole Butter RecipeCajun Shake Quick Shake Seasoning to taste

Remove giblets and rinse turkey cavity with warm water.Place turkey in the cold turkey fry pot and fill with water until it is totally submerged with water covering at least 2 inches. Remove turkey from water. Mark the water line, this is your oil level line. Drain water and dry pot completely. Fill with cottonseed oil to the established fill line. Using a deep fry thermometer, heat oil to 350ºF. Rinse turkey, drain cavity well and pat dry. Inject marinade throughout breast, thighs and legs as directed on packaging. Sprinkle turkey generously inside and outside with Cajun Shake Quick Shake Seasoning and rub in with hands. Place in fry basket and slowly lower into hot oil using oven mitt. Fry 31/2 minutes per pound (35 – 42 minutes), until drumsticks move easily and juices run clear when thigh is pierced with a fork. Remove turkey carefully and check the temperature with a meat thermometer. The breast should be 170ºF, thighs 180ºF. Drain on paper towels.

TURKEY FRYING TIP: Place fryer outside on level dirt ground or grass to avoid oils stains, and keep a fire extinguisher nearby. Smaller birds work best for frying, preferably under 15 pounds. Be sure to drain all water from the turkey cavity before frying to prevent oil splatter and follow instructions provided with your turkey frying kit.

Preheat oven to 400°F. Spray a 14-inch pizza pan with non-stick vegetable spray. Using a very sharp knife, remove all rind from the cheese wheel. In a small bowl, whisk together the Roasted Raspberry Chipotle Sauce®, rosemary, green onion and garlic. Place cheese on prepared pan, and pour sauce mixture on top of the cheese, taking care that it does not run down the sides; set aside.

Place one sheet of the phyllo pastry on work surface; using a pastry brush, paint a thin layer of butter over the entire pastry sheet, taking care not to tear the pastry. Scatter a few of the ground almonds over the sheet. Place a second sheet of pastry over the first sheet and repeat the buttering and scattering of nuts. Repeat with two more sheets, making a total of 4 sheets. Top the fourth sheet with the last sheet of phyllo, patting the five sheets together gently. Very carefully lift phyllo sheets and center them over the cheese wheel. Tuck the pastry tightly under the cheese on all sides. Brush the top and sides of the pastry with a little of the butter and place pan in preheated oven. Bake for 15 – 20 minutes, or until pastry is golden brown. If pastry starts to brown too quickly, cover the top with foil. Serve with toasted French bread slices. Serves 10 – 15.

Heat olive oil over medium-high heat in large saucepan. Add onion and garlic. Cook 2 – 3 minutes, or until onion is translucent, stirring constantly. Add broth, rosemary and pepper; bring to a boil. Reduce heat to medium, cook 5 minutes. Stir in couscous and currants or raisins; cover and remove from heat. Let stand for 5 minutes. Fluff lightly with a fork. Gently stir in apples; cover and let stand 3 minutes more. Serves 4.

5 lbs. winter squash (such as butternut, buttercup, kabocha or hubbard), peeled, seeded and cut into 1-inch chunks

Preheat oven to 375°F. Toss squash with 4 teaspoons oil, salt and 1/4 teaspoon pepper. Spread evenly on a large baking sheet. Roast, stirring occasionally, until tender throughout and lightly browned, 30 to 45 minutes (depending on the variety of squash). Heat the remaining 2 teaspoons oil in a small skillet over medium heat. Add garlic and cook, stirring, until fragrant but not brown, 30 seconds to 1 minute. Toss the roasted squash with the garlic and parsley. Taste, adjust the seasoning as necessary. Serves 8 – 10.
