Make the Cover Recipe

Arroz con Pollo (Latin Style Chicken and Rice)

This is the classic Latin rice with chicken made in the pressure cooker for a complete meal in just a few minutes. This recipe can easily be cut in half to make 4 servings

8 bone in skin on chicken thighs well trimmed of extra fat and skin salt and pepper to taste 1 tablespoon olive oil 2 carrots peeled and chopped 1 onion peeled and chopped 1 green or Italian frying pepper chopped 1 yellow bell pepper chopped 1 red bell pepper thinly sliced 1 tomato chopped 1/2 teaspoon saffron threads or 1 teaspoon turmeric 2 cups rice medium grain or long grain 2 1/2 cups chicken stock or broth 1 cup frozen green peas soaked in hot water to thaw 2 tablespoons chopped fresh cilantro

• Pat the chicken thighs dry and season with salt and pepper. Place the pressure cooker pot over medium high heat and add the 1 tablespoon of olive oil. When almost smoking add 3 of the chicken thighs skin side down and cook until golden brown, about 5 - 7 minutes, and remove to a plate and continue browning the rest of the chicken and set aside.

• Add the onions carrot and peppers to the pot and cook stirring for 5 - 7 minutes of until the vegetables soften. Add the saffron or turmeric and tomatoes and stir again. Add the rice and stir to combine.

• Add the chicken pieces to the pot pushing them into the rice mixture. Add the stock. Place the lid on the pressure cooker and cook on high pressure for 12 minutes and let stand for 15 minutes and remove the lid and add the peas and stir.

• Remove the chicken from the rice and scoop the rice onto a platter add the chicken on top and sprinkle with chopped cilantro and serve.

Important Safety Information

Read this manual carefully before first use and keep for future reference.

When using your pressure cooker, basic safety precautions should always be observed, including the following:

1. Do not use the pressure cooker for anything outside its intended use. The Viking Pressure Cooker is intended for home use only. Only a person familiar with the pressure cooker’s usage and guidelines should be in control of the pressure cooker at any given time.

2. Children should not come in contact with the pressure cooker during use. Keep out of reach of children when not in use.

3. Do not directly touch the pressure cooker exterior during use in order to prevent possible severe burning and injury. Use the handles on the side of cooking vessel for safe handling.

4. Never place hands, arms, or face over the pressure adjustment valve or pressure indicator when the pressure cooker is in use.

5. Always turn pressure adjustment valve and pressure indicator away from your body, face and hands when in use.

6. Don’t touch the pressure indicator when cooker is in use.

7. Don’t touch the pressure adjustment valve when cooker is in use.

8. Never place pressure cooker in a heated oven or microwave.

9. Avoid using the pressure cooker to cook foods that tend to bubble and spatter and that could block the pressure indicator, such as applesauce, cereal, pasta, oatmeal, barley, or soy beans.

10. Don’t place frozen meat or poultry into pressure cooker. Always make sure food is completely thawed before cooking.

11. Make sure that the cooker, the pressure control valve, pressure indicator, seal gasket, lid are properly cleaned prior to every use.

12. Make sure that the cooker is properly closed before you build pressure, and that the pressure valve and pressure indicator is not clogged.

13. Don’t try to disassemble or tamper with the pressure indicator. Any changes or alterations to the pressure indicator will void this warranty, and could lead to possible injury.

14. Never add baking soda to the pressure cooker during use. Also avoid using excessive amounts of oil or wine for best results.

15. Always make sure the pressure cooker is on a stable surface when using.

16. Ensure that the diameter of the heating surface is smaller than the diameter of the pressure cooker. When using a gas stove, ensure that the flame does not extend beyond the diameter of the pressure cooker.

17. Don’t place anything on the cooker, the pressure adjustment valve or pressure indicator during use.

19. Use extreme caution when moving the cooker in order to avoid spilling, burning or injury. Keep the pressure cooker level when transferring it from one location to another.

20. Never attempt to open the lid of the pressure cooker when it is pressurized or before the vessel has been completely cooled and depressurized.

21. Never exceed 2/3 fill capacity (Maximum mark) of the cooking vessel when adding water or other liquids. Limit water to 1/3 capacity of the vessel when cooking, rice, vegetables, beans or any other food that expands during cooking.

22. Don’t leave any remaining ingredients, salt, sugar, vinegar, water, or food residue left from cooking in the vessel for an extended period of time in order to avoid staining and discoloration.

23. Keep the pressure cooker dry after cleaning.

24. Always use genuine Viking replacement parts. Use of any substitute parts will void your warranty.

Before Using Your Pressure Cooker for the First Time

1. Read this instruction manual carefully before first use and save for future reference, especially the “Important Safety Information” listed above.

2. Make sure all packaging material has been removed from the box and pressure cooker before first use.

3. Hand wash the interior and exterior the of the pressure cooker and stainless steel steaming basket and trivet before first use with soapy water with a non-abrasive cleaning surface, rinse, and dry completely.

Getting to Know Your Viking 8 Qt. Stainless Steel Pressure Cooker

Parts & Features

1. Stay-Cool Handles – Bakelite handles are securely attached to the cooker for comfort, safety and durability

2. Easy Lock Dial Knob – Easily opens (or securely locks) the lid in place with one hand

3. Pressure Indicator – Raises up when pressure builds inside the pressure cooker locking the lid. Also releases steam at if the cooker becomes over pressurized

Instructions for Use

1. Ensure that pressure release valve is in the proper position before each use. Make sure the pressure release valve, pressure indicator, and sealing gasket are clean, unobstructed and functioning properly. Make sure Easy Lock Dial Knob closes and releases without obstruction, and that the seal gasket is properly in place under the lid before securing the lid.

2. To ensure proper performance of the pressure cooker, you must add at least a minimum of 1/4 Liter (just over 1/4 Quart) of water or liquid in order to generate steam. Never use the pressure cooker without using this minimum amount. Never exceed liquid volume of 2/3 of the cooker’s capacity.

3. Closing the pressure cooker: First, make sure Easy Lock Dial Knob is in the “Open” position and that the two clamps are fully open. Set the lid on the cooker evenly, aligning the lid with the body of the pot. Twist the Easy Lock Dial Knob counterclockwise until the knob coincides with “Closed” mark and the dial can no longer turn or no longer “clicks.” It may be necessary to apply some downward pressure to the lid to ensure it is properly closed. Use two hands if necessary to ensure the lid is properly closed.

Cooking

1. When moving or handling the pressure cooker, always hold the Bakelite handles on both sides of the pressure cooker and keep it level at all times.

2. The pressure cooker should always sit flat on the burner or heat source. When using an electric stove, ensure that the diameter of the heating surface is smaller than the diameter of the pressure cooker. When using a gas stove, ensure that the flame does not extend beyond the diameter of the pressure cooker.

3. Choose desired working pressure on the pressure control valve to position “1” Low (1 to 8 PSI – 1 to 60 kPa), or position “2” High (8 to 15 PSI – 60 to 100 kPa) according to your cooking needs. (See below.)

4. Turn heat source to high until the cooker is just beginning to pressurize and steam is released. At this point, the pressure indicator may release a small amount of steam. This could last several minutes. Once no more steam is released, the pressure indicator will begin to rise and goes into a full “up” position. It is important to note that a hissing sound is consistent with normal use.

5. Once the pressure indicator is in the “up” position, turn down the heat source to low in order to maintain a constant pressure and to avoid excessive heat and steam release. Continue to monitor cooker to make sure the pressure indicator remains in the “up” position. If the pressure indicator drops back down, increase the heat until it is back in the “up” position.

WARNING! Once the pressure indicator is in the “up” position as indicated in the image to the left, the vessel is fully pressurized. This means that the lid cannot be opened at this time. Any attempt to remove the lid once the unit is pressurized could result in sever burning or injury.

6. Cooking times always start once the pressure cooker is completely pressurized. Time should be noted accordingly.

Cooling & Depressurizing

Once cooking time has been reached, cooling and depressurizing the pressure cooker before opening the lid safely can be accomplished in three ways.

1. Always take great care to avoid burning. In order to prevent burning, we recommend the use of oven mitts for additional protection when handling the pressure cooker when in use. Take extra care to make sure that steam is released away from hands or the body, turn the pressure control valve to the release position, allowing the steam to completely release. A brief, loud hissing noise, accompanied by the release of steam, indicates the release of pressure and should be expected. This is known as a “FAST RELEASE.”

2. Move the pressure cooker from heat source using the handles (use kitchen gloves for extra caution) and place into a sink without water. Open the tap and rinse the lid with cool water (avoid putting water on the handle or pressure control valve) until the red indicator of the pressure indicator begins to fall down. This method can reduce pressure quickly and is also considered a “FAST RELEASE.”

3. Turn off heat source and let the pressure cooker cool down on its own for several minutes. The lid can be opened after the red indicator on the locking valve has come down completely. This is considered a “SLOW RELEASE.”

Opening the Pressure Cooker

In order to open the lid, the pressure cooker must be completely depressurized, with the pressure indicator completely in the “down” position as indicated in the image to the left.

Use one of your hands to hold onto one handle of body, the other hand to turn the Easy Lock Dial Knob clockwise until it stops turning. You can now open the lid.

WARNING! Never depress the pressure indicator and attempt to remove the lid when the pressure cooker is under pressure.

Troubleshooting

If you are experiencing issues during cooking, remove the pressure cooker from the heat source and move to a sink. Slowly pour cold water on the lid until the cooker is completely cooled and depressurized. Use the following table to resolve the problem.

Using the Steamer Basket • Your Viking Pressure Cooker comes with a stainless steel steamer basket

designed with holes to help steam vegetables, fruit, or fish. Simply place the wire trivet in the bottom of the cooker and place the basket on top of it as indicated in the image below.

• Add 3 Cups of water to the cooker when steaming.

• We recommend using an oven mitt to remove the basket after cooking.

Caring for Your Viking Pressure Cooker

Maintaining Cooking Vessel/Body • Clean with a mild detergent like dish washing liquid and hot water by hand.

• Dry thoroughly after each use by hand.

• Avoid using any metal brushes and other harsh objects to scrub the surface.

• Avoid using any industrial detergents or highly concentrated cleaning products.

• We do not recommend placing the body in a dishwasher

• In order to remove burnt-on residue, soak the residue with hot water and let soak for several hours. Use a soft wooden spatula or non-abrasive scrubbing pad to loosen residue. Non-abrasive cleaners such as Barkeepers Friend work well when cleaning stainless steel cookware.

Maintaining Pressure Adjustment Valve • Should the pressure adjustment valve become blocked by food residue or

other food objects, use a moist, hot cloth to clean it, or rinse thoroughly under running water until water runs through the valve smoothly. Check the lock nut on the underside of the valve to determine if it has become loose and re-tighten as needed.

Maintaining Seal Gasket • Thoroughly wash and clean gasket with a mild detergent like dish washing

liquid to remove any food residue. Soak in water for several hours in dish washing water if gasket has absorbed food odors.

• Dry sealing gasket thoroughly after each cleaning and place the sealing gasket back under the lid for storage.

• We recommend replacing the gasket every 1 - 2 years with normal to heavy use.

Cooking Guidelines & Best Practices

• As a general rule, always add a minimum of .5 – 1 Liter (just over 1/2 to 1 full Quart) of liquid such as water or broth when cooking meat or poultry. If cooking time exceeds 15 minutes, add just over 1 Liter (just over a Quart) of liquid prior to cooking for best results.

• The times indicated are intended only as general guidelines. You will need to adjust them according to the amount of food being cooked and personal preference. Cooking times can also vary due to shape, size, and consistency. For example, beef cut into cubes will take less time than the same amount as one piece.

• Cooking times for normal recipes can often be reduced in half by using the Viking Pressure Cooker.

• The pressure and release recommendations are also intended as general guidelines to deliver the best possible cooking results. As a general rule, cook fish or more delicate vegetables under the low pressure setting and a fast release to avoid overcooking. Use the high pressure setting with a slow release for proteins or harder vegetables or grains.

Recipes

Smokey Chipotle Beef Brisket BBQ Sliders

Making delicious BBQ beef in the pressure cooker is a snap and it takes about quarter of the time. People will request this as it is a great make ahead to bring to your next potluck or family get together.

3 pounds beef brisket cut into 4 pieces salt and pepper to taste 2 tablespoons olive oil 2 onions chopped 1 poblano pepper chopped + 1 Italian frying pepper chopped or 2 green bell

peppers chopped 4 cloves of garlic chopped 4 chipotle chilies in adobo more or less to taste + 2 tablespoons of the

adobo sauce 1 cup tomato puree 1 cup beef stock or broth 3 tablespoons cider vinegar 1 teaspoon ground cumin 2 tablespoons brown sugar 2 - 3 dozen slider rolls

• Generously season the pieces of beef with salt and pepper. Over medium high heat add the 2 tablespoons of olive oil to the pressure cooker pot and sear the beef in 2 batches on all sides until well browned 10 - 12 minutes and remove to a plate and set aside.

• Add the onions and peppers to the pot and cook stirring now and then for 5 minutes and add the garlic and cook for 30 more seconds.

• Add the beef back to the pot and add the chipotles, adobo, tomato puree, beef stock, cider vinegar, cumin and brown sugar and place the top on the pressure cooker and cook on high pressure for 1 hour and turn off the heat. Limited 10-Year Warranty

Viking will repair or replace any pressure cooker found defective in material or workmanship within ten years of the original purchase with the original sales receipt. This warranty applies only when the pressure cooker is put to normal household use and is operated and cared for according to the instructions. The rubber gasket is excluded from this warranty. This warranty also excludes damage from misuse or abuse, such as improper cleaning, neglect, accident, alteration, fire, theft, or use in a commercial establishment. Minor imperfections, surface markings as a result of shipping, and slight color variation are normal and are not covered by this warranty. This warranty excludes all incidental and consequential damages. Some states do not allow the exclusion or limitation of incidental or consequential damages, so the above limitation may not apply to you. Without an original sales receipt, the warranty start date will be considered the date of manufacture. This warranty gives you specific legal rights, and you may have other rights that vary from state to state.
