Members again supported our Holiday Fund for employees this year, contributing over $40,000, up from the $30,000 contributed last year. As many of you know, this fund is distributed to our employees, excluding the executive management team, based on the num-ber of years of service and hours worked during the preceding year. Th is year has been particularly tough on employees throughout our industry, so member support of our staff is much appreciated during this time.

Th e fund attracted contributions from almost half of our members, with the average contribution about $100. A thank you from our employees to all those who contributed appears on pages 24 and 25 in this issue of the Vistas.

In further recognition of the dedica-tion of our employees in these diffi cult times we have decided to increase the automatic gratuity in food and beverage service to 20%. Th ese gratuities in total are paid directly to the staff that serve you. Th is percentage is also consistent with our banquet and catering charges.

Employee recognition for outstand-ing service during the year occurred at our annual staff Holiday party. Aaron Aguilar from the Golf Pro Shop was named employee of the year and Chris Sabala of the Sales Offi ce was named manger of the year. Ten other em-ployees were named winners of our Stepping Stone Awards for their perfor-mance in areas designated central to the strategic mission of the company.

Th e Stepping Stones and winners included: Integrity, Sherry Cramer, golf course maintenance; Empowerment, Dan Celentano, front offi ce manager; Communications, Isabella Joff roy, sales/catering assistant; Fiscally Responsible,

Chuck Wallace, landscape supervisor; Teamwork, Debra Rhoades and Dianna Avants, overnight cashier/supervisor; Be the Example, Brandon Smith, head golf professional; Personalize the Ex-

perience, Mandy Phillips, spa supervisor; Th e Zone, Brandee Cislini, human resources assis-tant; Image, Jerica Cicci, guest services attendant, and Jim Sullivan, men’s locker room attendant.

Special recognition awards also went to Christine Baker-Perry, membership director; Kelly Scott, accounting; Arlene

Corey, concierge; Rosa Zavala, house-keeper; Jesus Ramirez, maintenance engineer, Noah Gessler, assistant golf course superintendent; Suzy Godin, server; Ricardo Frascari, bartender; Lauren Youngling, hostess; Matt Mc-Gee, executive sous chef; Andy Juday, outside service attendant, and Sandy Henke, nail technician.

As many of you know, this is the time of year when we engage a neutral outside party to determine membership initiation fees for the coming year. Peto & Company was again engaged under the bylaws to perform this service for the third year in a row. Aft er a detailed analysis, Peto concluded that the ini-tiation fees for golf members in 2010 would be $48,000 and for tennis mem-bers, $5,000.

Peto based its determination on na-tional economic conditions and trends in private club membership. Conditions and rates at comparable area clubs were also analyzed and considered. Compa-rable private clubs reviewed included Th e Gallery, La Paloma, Omni Tucson National and Tucson Country Club.

In conclusion, Peto wrote, its valu-ation was based on “prevailing market conditions.”

I hope everyone had a happy and safe holiday season. Now that 2010 is here we are ready to begin the year with an active social calendar starting with the Silver Oak Wine Dinner on Monday, January 25th and Tuesday, January 26th. Th is event gained so much popularity that we had to expand it to a second night to accommodate all the members that have ex-pressed an interest in com-ing. Currently only a handful of seats remain for the Monday night dinner on the January 25th, the Tuesday din-ner is sold out.

Th is will be an event not to miss if you are not signed up already. Chef John and I have been planning this event for months along with the Wine Committee and the House Com-mittee. I know I have been looking forward to these two nights for a very long time.

In addition to the Napa Valley and Alexander Valley Silver Oak Caber-net Sauvignon we will also be serv-ing wine from the Twomey Winery. Twomey is owned by the same fam-ily as Silver Oak. Twomey is not a second label of the Silver Oak wines. In fact, the Twomey Winery produces some of the fi nest merlot, pinot noir and sauvignon blanc wines in all of California. Chef John has paired the

fl avors in these wines to match the menu to perfection.

Th e story of Twomey started when Silver Oak bought some land in Southeastern Napa Valley that was planted with mer-lot. Daniel Baron, who is the Director of Winemaking at Silver Oak, had experience working with merlot while he was in France. He set out to make a merlot that would be considered a top tier wine and has since succeeded. Ray

Duncan, who is the owner of Silver Oak gave the new winery the name Twomey which is his middle name and his mother’s maiden name. As I mentioned, since then Twomey has branched out and produced some of California’s fi nest pinot noir and sauvignon blanc in addition to their superb merlot. Since the early 2000’s when Twomey was established, their wines have only gained in popularity and quality.

I am excited to make this the most suc-cessful and memorable wine dinner we have ever held at Ventana Canyon. Make sure you don’t miss out on all the fun and I will see you in the club again soon!

Also coming up this month, we will be hosting our monthly Burger Night

in the Catalina Room. I have re-ceived a lot of positive feedback from members on this event. Th is month I am changing the format slightly to include a dessert option in the buff et. For $13.95 you will still have a selec-tion of burgers to choose from, all the toppings and the drink included, but now will also have a selection of brownies and cookies to select from as well. Th is event always fi lls up fast, so call the Catalina Room at 577-4075 right away to reserve your table.

During the past few months demand has increased and several Club events have sold out. As your chef, I am fl attered and excited that our membership is so supportive of the Club and that such an impressive demand exists.

Unfortunately, some members have been unable to attend a number of events due to limited space. We have adopted innovative measures in an eff ort to meet demand when we know it exists. For example, Burger Night proved so popular that requests for reservations exceeded the capacity of the dining room.

To accommodate as many members as possible, we made Burger Night available to those who dined in the Ventana Bar and Grill that evening as well. We will continue this practice for popular events whenever possible.

Service in the bar, however, will continue to be on a fi rst-come, fi rst-

served basis, since reservations are not taken there. I mention this be-cause your best option is to make reservations early and be assured of a seat in the dining room.

Another in-novative solution to event planning was the addition of Monday, January 25, to our Silver Oak Wine Dinner, since the original date of Tuesday, January 26, fi lled at record pace. Th ere are still a few open spots for the January 25 dinner, so if you are interested, sign up now. We expect to continue to review overfl ow options for all events that generate substantial member interest. Our aim is to prevent exclusion of any member who desires to attend.

Meanwhile, I continue to rely on member feedback to assess our suc-cess in meeting your needs. I try to personally speak with members on a regular basis because I am convinced that your ideas and experiences are the best measure of how well the entire food and beverage team is functioning in improving your club experience.

We rely on your ideas and requests for inspiration and try to incorporate them in planning for each event and dining experience. Th e entire staff remains excited about serving you throughout 2010 and beyond.

As always, please share any special requests with us and remember that take-out and off -premise catering is available to you.

ACBL Bridge: Election Results

KNITTERS’ KNOOK

THE KNITTERS’ KNOOK IS REMINDING ANY interested knitters to join them! ALL levels (including those who would like to learn how to knit) are welcome! We meet every Tuesday from 10:00 a.m. until noon; please check The Rock for the exact location each week.

David Fletcher led the discussion of EMPIRE FALLS by Richard Russo, the book selected for discussion at our December 1 meeting. Th e fi ctional Empire Falls is an economically depressed small town in Maine. Th e main character, Miles Roby, fl ips hamburgers at the Empire Grill which he man-ages. Th e book chronicles his life, the problems of impending divorce, his re-lationships within his family and the members of the community. Th e book was made into a movie starring Paul Newman in 2005. Th e New Englanders in the group attested to the accuracy of the descriptions of the locales and bleak economic circumstances described in this book which was awarded the Pulitzer Prize in 2002.

Richard Russo was born in 1949 in upstate New York and earned three degrees from the University of Arizona: BA in English (1967), PhD in American Literature (1980) and Masters in Fine Arts in Cre-ative Writing (1981)! Who knew? He is described as the author who most accurately depicts the blue-collar life in economically depressed American towns.

Our next meeting will be held on January 26, 2010, at 6:15 p.m., when Jacque Grote will lead the discussion of TUXEDO PARK by Jennet Conant. See you there.

We had our first election for Adobe Board Members at Ven-tana with the polls open ½ hour prior to our game on December 7th. Two of our regular players were on the ballot: Kathy Parker and Ted Myers. Th ey both won by a landslide! CONGRATULA-TIONS to Kathy and Ted. Th ey are both experienced business people, so we look forward to their astute advice and participa-tion on the Adobe Board.

Our Ventana Game is sanc-tioned through Adobe Bridge Club, therefore, we are an off -site game for Adobe. Th e Adobe Board is made up of 9 elected members and 1 appointed non-voting member who is our Non-Life Master Representative – Kathy served in that position this last year. Th e Adobe Board meets the second Wednesday of every month, so if you have any concerns you would like to have addressed by the board, please feel free to talk with Kathy, Ted, or Ruth

Van VanVlack is continuing to teach outstanding Bridge here for intermediate players. Classes run from 9:00 - 11:30 a.m. each Th urs-day with lunch following. Class fees are $10 per person per class. Van will be teaching these same classes at Finisterra on Fridays, from 9:30 to 11:30 a.m. We have had fabulous turnouts – at least 6 full tables each week so be sure to e-mail me at [email protected] if you would like to join us. WEATHER UPDATE: As of December 14th we have experienced 12 frost delays. We average approximately 45 frost delays each golf season. As of De-cember 14 we have received 7.88” of rain. We average just less than 15” of rain per year.

With the cooler tempera-tures of winter the turfgrass plants ability to recover from traffi c (foot and/or golf carts), ballmarks and divots is greatly reduced. Please avoid high traffi c areas. You will notice more and more ropes & stakes being used around the golf courses to re-direct or limit traffi c. It has become necessary to restrict traffi c on a few golf holes. Canyon #10,14 & 15 as well as Moun-tain #5 & #13 are a few of the common holes that will be roped off to golf cart traffi c. We typically will never have more than two holes per course roped off . Th ank you in advance for your patience and understanding.

As of Th ursday November 26, both courses are allowing golf carts onto the fairways. Th e question has been asked why are both courses al-lowing golf carts on the fairways the same day when the overseeding dates are three weeks apart. Typically we alternate between courses as to which golf course is overseeded fi rst. If the same golf course were to always go fi rst every year, that particular course would lose three weeks of Bermuda-grass growing weather in September each year. It is always our goal to have as much Bermudagrass coverage on the golf courses as possible going into overseeding. Th e fi rst overseeded golf course always has considerable Ber-mudagrass grow back which competes with the new Ryegrass due to daytime temperatures still being very warm

- near 100 degrees. Th e second golf course to be overseeded is in the ideal

weather window – night time temperatures are cool and day time temperatures are warm. It is also necessary to schedule around fall functions such as weddings, which oft en take place behind the club. No bride or groom wants to have brown scalped Bermudagrass in their wedding photos. Keeping the golf cart path

policy consistent between the two golf courses also eliminates any confusion as to which course has what cartpath policy.

Th e Alliance has approved a new pump station as well as construction of a new building to protect the new equipment. Th e work should be com-pleted by the end of February.

Ventana Team Does Well in State Medallion Event The New Year brings us more cel-

ebrations from last year and a wonderful number of future events for you to get on your calendars! Congratulations to Chris D’Huy and Toni McWilliams for taking 1st place in their fl ight and 2nd place overall in the State Medallion in December. Remember the day we had the big rainstorm? Well, that was the day ---- and they did fabulously. Th e State Medallion is a statewide event for Lady Niners’ who were the winners at their own clubs the previous year. It’s a big honor to get to play, and obviously, a big-ger honor to win!

Since our last newsletter we have had team events and free play days galore. Winners for the Odds and Evens event were, in the Net Division, 1st place Christine D’Huy, Nancy Smith, Katie Smith and Cherry Zesch. 2nd place were Randy Davidson, Rita Graham, Suzi Payson, and Pat Wendel. 3rd Place were Mary Anderson, Jackie Bartick, Paula Golden and Rhona Stern. In the Gross Division, 1st place went to Bonnie Hoos, Aimee Poll, Karen Sislo and Jan Whipple. Th e 2nd place team was Nina Arnzen, Linda Cormany, Judy Pease and Jan Wood.

Th e Step Aside Scramble event brought us a few of the same names, but also some new winners. Th e 1st place team was Barbara Carrig, Cindy Jerems, Suzi Payson, and Cathy Christensen. 2nd Place, with a 1 point diff erence, were Nina Arnzen, Ruth Houkom, Ellen Nico-letti and Cherry Zesch. 3rd place, with a scorecard playoff were Marilyn Cowl, Carol Lent, Judy Pease and Linda Duf-fer. 4th place went to Mary Anderson, Betty Grimm, Toni McWilliams and Pat Wendel.

We, of course, had a wonderful Christmas luncheon where we awarded all those who had made birdies and chip-ins this year. We also raised our yearly donation to a charity for Christmas, selecting TROT for the second year.

And now for 2010! In addition to playing every Monday, January 25th is the Rally for the Cure, chaired by Nancy Granat. Th is is an event for not only the Niners, but being held with the WGA , the Tennis players, and the MGA. Registration for this event is through the Pro Shop and needs to be done by January 7th, along with your entry fee. Please make sure you join in for this important cause. February brings us

the annual Valentine Event with golf and dinner. Hopefully, everyone possible will participate --- and it’s a great way for new members to become acquainted with members and their partners. Sign up sheets are on the bulletin board in the women’s locker room.

Save the date of March 1, 2010, for our Member/Guest golf and luncheon event. It will be for all Niners, whether you have a guest or not. You may invite up to 3 guests per person for the 9 hole event and luncheon.Another highlight on the calendar will be the Ventana Nin-ers Invitational on April 5, 2010. Karen Chellevold is the chair and has named the event theme, “Diamonds in the Rough”. Th is event hosts Niners from the other clubs in the area and is an espe-cially important time to introduce our Club to others!

As you can see, we are busy playing and making things fun for as many as we can. Please join us and make playing as oft en as you can one of your New Year’s Resolutions. We’d love to see you on the course!

2010 President’s Cup‘Lemons vs. Limes’

This year's President Cup will be held on January 14th (tee times) & 21st (8:00 a.m. shotgun). As in the past, it will be a Ryder Cup format. The theme is "Lemons & Limes" so get your green and yel-low shirts ready! Sign up sheets will be available in the locker room. This will be the ONLY place that you can sign up for the event. Babes in ToylandTh ank you to everyone who participated in the Member-Guest Day, “Babes in Toyland” on December 3rd. We had a full fi eld of 72 members and guests. Th e weather was beautiful and the food was great. Sue Samet had a hole-in-one on # 16 Mountain and we were able to play 18 holes despite a frost delay! Th ank you to Jason Lucas and the rest of the pro-fessional staff for all of their help. Th e committee would also like to thank all the members and guests who donated gift s and money to Toys for Tots. Rule of the MonthQ. A player’s ball lies near a cactus, and to play the ball the player would have to stand with his legs touching the cactus. To protect himself from the cactus needles, the player wraps a towel around his legs before taking his stance. He then plays the ball. What is the ruling?

A. Provided the player does not breach Rule 13-2 (i.e., he takes his stance fairly), there is no breach of the Rules. Medical flags are available through the golf shop for Members and guests who have a physical disability that is certifi ed by a doc-tor and properly documented. Medical fl ags only provide golf cart access off the cart paths approximately two weeks aft er overseeding. Medical fl ags do not permit access past golf cart directional signs, close to tees and greens or access to fairways that have been roped off . A doctor’s certifi cation must be presented to the golf shop each year at which time a medi-cal fl ag agreement must be signed and will be kept on fi le documenting an understanding of the policies. Medical fl ags will be attached to the golf cart and must be returned each year for future distribution.

Ventana Wins the 2009 Resort Cup

Coming soon, we will be launch-ing a brand new look and format to our junior tennis program at the club that we are very excited about. We will be teaming with the USTA in their new initiative called QuickStart. If you have children or know of a fam-ily looking for a reason to join the club, this program will be something everyone will be excited about!

As I’ve mentioned in the past, tennis has experienced more growth than any other sport over the last two years. A lot of this drive began with USTA initiatives such as Quick-Start for juniors. In 2010, many of the tournaments will be held using

QuickStart guidelines and balls. Th is is one area that we too are being

proactive in introducing our juniors to this format. Quick-Start has been proven to improve skills and the ability to “play” tennis.

So, with the start of the Ju-nior Tennis Program for 2010, we will focus on students learning to “play” the game of tennis. In a lot of tennis

lessons for juniors, the kids come out, stand in line, and learn “form.” Th is is great for the ball that is tossed or fed right to them, but what about another kid on the other side of the net that hasn’t learned how to even start a point trying to hit the ball the same way the pro tossed it to them and

watching those kids rally? QuickStart is the answer to this dilemma. By shortening the court and by using a modifi ed ball, the game slows down and gives the students the opportu-nity to learn how to “play” tennis and not just the form that goes with it.

TENNIS TIP:Wrist, Secret to the Serve We all want to improve our serve and the

easiest way to do that is to learn how to use our wrist better. Th e best way to introduce more wrist is during your warm up or practice session by only using the top two fi ngers and thumb of your serv-ing hand. Th is will allow

your wrist a greater range of motion but less control. Don't try to fi ght the racket by over squeezing just let the motion go and concentrate on feeling your new found wrist.

Th e Junior Golf Aft er School Program is back! Th ere will be two classes on Tuesdays from 2:00-3:15 p.m. and 3:30-4:45 p.m. Th e program will be limited to eight children in each class. Th is will allow our instructional staff to have the op-portunity to work more closely with each child to further develop their game. Th e program will focus on all

aspects of their game including: putting, chipping, pitching, full swing and etiquette.

Th e cost for the program will be $25 per class.

Jr. Golf CertificationIn accordance with the Ventana Canyon Golf & Racquet Club By-Laws, the golf staff will conduct a Junior Golf Certifi cation Program for all Junior Members 18 years of age and younger. Th is program is free of charge and will cover topics such as Th e Spirit of the Game, Rules and Etiquette on the Course, Safety, Pace of Play and Maintaining the Golf Course. Juniors will be classifi ed as Begin-ner, Intermediate or Advanced based upon playing ability, experience and knowledge of rules and etiquette. Th e golf staff will contact junior members to communicate the sched-ule of certifi cation classes.

Health Tip: How to cut Calories!By the time you read this article

the holiday’s will be behind us and so will the holiday eating!

So how to attack those holiday pounds?

Begin by cutting 500 calories a day, that can account for a pound a week!

Here are some simple suggestions!1. Don’t eat in front of the T.V. You

will eat up to 228 more calories, ac-cording to research from the Univer-sity of Massachusetts. Eat at the table instead and trade one hour of T.V. for a casual walk. Th at adds up to 527 calories burned!

2. Get in tune with your tummy. Pay attention to how full you feel. Put down your fork when you are satisfi ed. Listen to your body’s cues instead of looking at whether the plate is clean.

3. Ditch the buttered movie theater popcorn. Th e large popcorn at the concession stand weighs in at a whop-ping 1,005 calories. Smuggle in your own (microwave-popped, 94 percent fat-free) and save over 700 calories

4. Kick the soda habit. A twelve ounce soft drink has 150-180 calories. If you drink two to three a day, you are getting lots of extra calories. Quench your thirst with water and save as

many as 540 calories.5. Make a swap. Try one cup of

plain yogurt instead of one cup of heavy cream in a favorite baking recipe. Save 684 calories.

6. Step away from the nuts. Cornell University researchers say the big-ger the serving bowl, the more you’ll eat. Nuts have heart healthy fats, but are also high in calories. One handful (one ounce) of oil roasted mixed nuts has 175 calories, three handfuls have 525. Cut nuts out altogether and save 500 calories. If you can’t resist them, eat pistachio nuts, two handfuls are just 159 calories, and the shelling will slow down your intake.

7. Count your chips and crackers. No, you can’t eat your snacks from a large bag or box because it is too tempting! A bag of 9 ounce chips is 1,260 calories. Stick to one serving, about 15 chips (140 calories) or pur-chase the 100 calorie snack packs and save 1,120 calories.

8. Limit salad toppings. A big salad may be very healthy, but all those extras can make it more calorie laden than lasagna or fettuccine Alfredo! Cheese crumbles, caramelized nuts, bacon, avocado, dried fruits, and crou-

tons can add lots of calories. Save 500 calories by adding just one topping. Add fl avorful but lower calorie veggies (roasted bell peppers, grilled onions, or mushrooms) and use half the dressing.

9. Eat out smarter. One cup of pasta is just 220 calories. Typical dinner portions at restaurants can be as much as 480 percent larger than the one cup serving, according to New York Uni-versity research. Th at’s 1,056 calories. Even if you eat two cups of pasta you are still saving 616 calories.

10. Check the number of servings in a dish. Th e calorie count on the menu may say 350 calories per serving but what may be set in front of you could actually contain four servings. Split the meal with three friends and save 1,050 calories!
