An engaging approach to freshnessFresh fruit and vegetables, ready-to-eat salads, sushi, smoothies

and cut flowers are a few of the dynamic products that make up

the ultra-fresh segment. One of the biggest challenges retailers

face is offering customers the best in freshness and quality in a

cost-effective manner. The efficient and attractive presentation

of these items provides valued opportunities in the food trade,

    helping to create additional turnover.

Welcome to UltrafreshnessPerishable and ready-to-eat products have a very short shelf

life, usually less than five days. These goods put high demands

on temperature, relative humidity and air velocity. The Carrier

Ultrafreshness family meets these requirements and can help

provide retailers and customers the best in freshness and quality.

Continuous freshness through an uninterrupted cold chain

In many cases, the vital refrigeration of ultra-fresh products

ceases when the merchandise hits the shelves. In fact, this

dry merchandising approach is still being used 90 percent

    of the time.

At Carrier, we recognize that in addition to a fast and efficient

supply chain, temperature-sensitive products must also be

presented in a professional and quality-preserving manner at

the point of sale to ensure successful retail. We meet these

demands with an innovative series of refrigerated multidecks

called Ultrafreshness. Characterized by great flexibility in the

interior fittings, Ultrafreshness technology allows products to

remain on display longer. The result increased sales and

    better product availability.

    The Ultrafreshness

    family can significantly

    influence the shelf

    life of fresh products

    at the point of sale

    (POS) and extend

    the use-by date for

    customers.

    Only ~63% of the

    original harvest weight

    reaches customers,

    and only ~44% is

    actually consumed.

    Much of the product

    spoils, often due

    to poor climate

    conditions at POS.

Prolonged freshness through optimal humidificationRegardless of the ultra-fresh product, the perfect balance of

refrigeration and humidification is needed to ensure a quality

product and optimized freshness. While refrigeration alone slows

down the ripening process, reducing wilt and product weight

losses depend on other ambient conditions.

Temperature, humidity and airflow rate must be matched to the

sensitive product. The ability to pair these parameters with such

fragile items requires a vast and professional knowledge of both

the technology and the produce something we at Carrier have

    built into every Ultrafreshness cabinet.

Quality and Freshness TriangleThis diagram illustrates the specific

needs of fresh produce, such as lower

    air speed and high humidity.

Experts* say: In the refrigeration of packaged fresh food lines:

Cooling slows the life processes and the ripening of

    the goods.

In the refrigeration of unpacked fresh food lines:

Cooling slows the life processes and the ripening of

    the goods.

    Professional humidification significantly reduces

the wilting symptoms and weight loss.

    Summary:

Cooling and humidification (based on products

presented) can significantly reduce write-offs and

spoilage of the predominant part of the fresh produce.

Customers profit from the prolonged freshness of the

    purchased goods.

Gold Standard Technology: The Ultrafreshness Family

Freshness through humidificationThe new ultrasonic humidifying system offers many advantages.

High quality performance is achieved through the use of an

aerosol mist comprised of tiny water droplets captured by a

current of cold air. This creates airflow with nearly 100 percent

relative humidity. The mist drifts around and through the fresh

    produce, preserving its quality.

The Ultrafreshness family also sets elevated hygiene standards.

By separating cold air from the humidified air outlet in design,

cleanliness can be maintained. Filters, UV-lamp disinfection, and

periodically controlled ozonization of the aerosol supply pipes

and distribution lances, supply reliably clean water.
