We have received many positive newsletter com-

ments over the years and several individuals have

stated that they have missed the newsletter and its

content. I am happy to report that circulation be-

gins again with this May 2018 issue. The plan is for

the newsletter to be sent out quarterly and its goal

is to educate Broward County citizens on nutrition-

al, health, food safety, gardening, various life skills

and cooking suggestions along with recipe tips. The

goal is to include a variety of educational, evidence

based topics that are of interest to our readers. I

welcome your content suggestions and look for-

ward to hearing what articles you would like to see

in future issues.

Serving Size Serves 4, ½ cucumber and 6 ounces filling per serving

Ingredients: 2 large cucumbers 1 lemon 2 green onions 1 (6-ounce) can low-sodium tuna, packed in water 1 (15 ½ ounce) can white beans 1 Tablespoon canola oil 1 Tablespoon Dijon or country mustard ½ teaspoon salt ¼ teaspoon ground black pepper

Directions: 1. Rinse cucumbers. Peel off skin every ¼ inch, all the way around. Cut lengthwise. Scoop out the seeds with a small spoon.

2. Rinse lemon. Zest using the small holes of a box grater. Cut in half. In a small bowl, squeeze juice. Discard seeds.

3. Rinse and chop green onions.

4. Drain tuna. In a colander, drain and rinse beans. In a medium bowl, mash beans lightly with a fork.

5. Add green onions, tuna, oil, mustard, salt, pepper, lemon zest, and 2 Tablespoons of the lemon juice to beans. Mix with a fork.

6. Fill each cucumber half with ¼ tuna mixture. Serve and enjoy

Hurricane Season runs from June 1st to November 30th

With the 2018 hurricane season nearly upon us again, we want to make sure everyone in Broward County is prepared and ready. Hur-ricane season runs from June 1 through the end of November. With memories of Irma in the back of our minds, it is time to re-visit hurricane preparedness plans which include thoughts about wheth-er you will evacuate or remain at home, time to discard outdated food supplies and replenish and collect needed new supplies includ-ing medications, paper products and cooking supplies. This should include preparedness for you, your family and your pets. Now is the time to verify insurance coverage and policies. Take photos of your house contents and store in a safe place. This is much easier to do now before patio furniture etc. are brought inside during an im-pending storm. Start stocking up on water while the supply is plenti-ful. Don’t delay your plan to prepare and ready your home. We just purchased new hurricane shutter latches after discovering all of ours were aging and frail (they easily cracked making it impossible to lock) after years of being unused in the FL sun. Part of our action plan is to spend a few weekend hours replacing all of these dam-aged latches. A written plan with a timeline is helpful. Being prepared well ahead of time allows people to make sound decisions when a storm is approaching rather than panicking and being forced to act quickly. One of my favorite sayings: “If you fail to plan, you plan to fail.” Take action today!

Think about the basic items you will need and start picking up those with a longer shelf life now. Use coupons, as able to save money.

Stock up on food items that do not require any cooking or refrigeration.

Choose foods your family likes and will eat. Don’t forget pet food too!

Buy enough food for three to five days including non-perishable packaged or canned food (include fruit, vegetable and protein sources), whole grain crackers, canned or shelf milk, granola bars, whole grain cereal, and snack foods.

Stock up on bottled water to keep hydrated.

Manual Can Opener; Bottle opener; Disinfectant wipes; Trash bags

Paper plates; Paper towels; Paper bowls; Nap-kins; Plastic utensils

As the storm approaches, plan to make and bag your own ice or purchase ice in the event of power outages after the storm. Clean and sanitize your coolers.

Environmental risks are common in your home and neighborhood. These risks include:

1. Clutter: Keep clutter in the home to a minimum. 2. Poor lighting: Replace the lighting in your home with

brighter lights. Place a night-light in the bathroom and dark hallways.

3. Lack of supports: Install handrails in the bathroom and at the steps into your home.

4. Out-of-reach items: Keep objects in your home at a level you can easily and safely reach.

5. Obstacles in walkway: Be alert to objects in your path that may cause you to trip.

6. Small or large pets: Be aware of pets that get underfoot and may cause you to fall.

7. Improper or missing handrails/ramps: Contact the proper community officials and request repair.

8. Cracks in sidewalks in front of buildings and homes: Be alert and use caution; also inform someone so that they can repair them in compliance with the safe public ac-cess laws.

9. Quick changing traffic lights: Look for a safer way to get around or ask someone for assistance when crossing the street.

Use the Nutrition Facts Label for Better Health

Consider calories: Calories provide important fuel for your body. When you are active and get exercise you “burn” calories. But if you eat and drink more calories than you burn, you gain weight. The food label is based on a 2,000 calorie per day diet; calorie needs can differ from person to person. To find the approximate number of calories you need per day, see: www.choosemyplate.gov

Check serving size: The top of the nutrition facts label shows the serving size and the number of servings per container. This is important be-cause it shows you how many calories and nutrients you would get if you ate the entire package. You may be surprised that a package or container contains 4 servings when you thought it was a single serving.

BE SURE TO NOTE: One package may contain more than one serving. Read the nutrition facts label!

Choose nutrients wisely: There are many nutrients that play different roles in your diet. Examples are: Vitamin A, Vitamin C, Calcium and Iron. The words “daily value” are used to describe amounts of nutrients rec-ommended for you to eat every day. The “percent daily value” (%DV) tells you how much of a nutrient is in one serving of a food. 20% DV or more per serving is high. 5% DV or less per serving is low. Read labels and compare foods to choose nutrients wisely.
