This year Grass Valley Creek 4-H Club is hosting Favorite Foods Day on Saturday,

April 6, 2013 at the Lewiston Community Church. The event begins at 9:00 am.

The Theme this year is: “Campfire Cook-out”. Additionally, there will be a new

activity; a Dutch Oven Cook-off. Please see in-

side this issue of the Cloverleaf for full instruc-

tions. This year we will not have the Center-

piece Contest, but we will have the Cover Con-

test. Please read the instructions carefully for

this event and be sure to get your entry form

and the cover contest entry in on time! Late

entries cannot be accepted. Please note: you

are only required to bring 8 copies of your reci-

pe, not 30. These copies will be used to assemble recipe books for each club.

ART EXTRAVAGANZA/CRAFTS DAY will be Saturday, May 4, 2013 at the fairgrounds. Grass

Valley Creek and Southern Trinity are hosting the events. Entry forms for Art Extravaganza

are in this issue of the Cloverleaf and are due to Jennilea Brookins or Maleah McQuade,

along with the artwork itself by April 15th. You may also turn in your entry forms and art-

work at the April 8th Council meeting, or at Favorite Foods Day on April 6. During the Crafts

portion of the day, Southern Trinity will lead Leather Craft and Tie Dye activities. As of yet

we do not have a host club for Textile Day. If your club would like to host Textile Day on May

4, please notify the 4-H Office no later than March 15. Thank you!

THE NEXT 4-H COUNCIL MEETING will be Monday, April 8 at 6:00 pm at the

4-H Office in Hayfork. All volunteer leaders, and teen representatives from

FOOD SAFETY TRAINING FOR 4-H VOLUNTEERS

Dr. Concepcion Mendoza, UCCE Nutrition and Family Consumer Science Advisor, will offer two Food Safety Trainings to Trinity County 4-H Adult Volunteers. Save the date of Satur-day, March 16, 2013 from 10- 1 at the 4-H office in Hayfork, OR Saturday, March 23, 2013 from 10 -1 at the Young Family Ranch in Weaverville. As was discussed at the February 4-H Council meeting, at least one adult leader per club must attend one of the trainings to meet the minimum requirements to sell or distribute any food items to the public (such as a bake sale) in the name of 4-H. Please register by emailing Audra at am-

[email protected]. These are the only 4-H volunteer food safety trainings this program year

offered in Trinity County. Please see the flyer in this issue of the Cloverleaf.

SECTIONAL PRESENTATION DAY will be held on Saturday, April 27, 2013 at Sequoia

Middle School in Redding. Shasta and Trinity counties are hosting this year’s Far North Sec-tional event. Youth who received a gold or silver medal at County Presentation Day last No-vember are eligible to enter Sectional Presentation Day. Since it is in Redding this year, it is a great opportunity to participate in a sectional 4-H event. The entry form and the medical release form for Sectional Presentation Day are posted on the Shasta County website, and are in this issue of the Cloverleaf newsletter. Both forms must reach the Shasta County 4-H Office no later than Fri-day, April 12, 2013 to be entered in the event. The address is: Shasta County UCCE, 1851 Hartnell Avenue, Red-ding, CA, 96002. Since Trinity is helping to host the Sectional event this year; clubs who attend are asked to bring judges, and to stay and help with clean up. Judges need to arrive no later than 9:00 am at Sequoia Middle School to register, and begin orientation at 9:15 am.

If your club members or your family needs to order hats, scarves, ties, or Record Book Covers; please go online and order these directly from ‘Leslie Carman’ at www.4hsupplies.comThe 4-H Office no longer stocks these items. We do have a nice supply of ‘whites’ – both pants and shirts that members are welcome to take home and use. Please contact the 4-H office to make arrangements.

The last new 4-H volunteer leader orientation of this program year was held on February 10. The 4-H Office would like to welcome the following new 4-H Adult Vol-unteers: Cindy Rogers, Tim Rogers, Terri McBrayer, and Heidi Van Dine. Volunteer Leaders who completed the orientation last fall in-clude: Joan Gannon-Gross, and Dixie LaFountain. Thank you for

volunteering your time to the 4-H Program.

Use the first statement of your presentation to capture the interest of your audience.

Have a concluding statement at the end of your presentation so the judges are certain your presentation is completed. Then, after a brief pause, ask if there are any ques-

tions from the judges.

When you think that the judges have finished asking all of their questions, say some-thing like “if there are no further questions from the judges, this concludes my presen-

tation, thank for watching, or listening”.

Use foam board for the backing of your posters. They stand up much better in an easel and you can use both sides of the foam board. You can also re-use the foam boards

from year to year simply by replacing what you have attached to them.

Read the 4-H Presentation Manual thoroughly for other tips. It is located on our

county 4-H website, and on the state 4-H website.

ALL STAR APPLICATION FOR THE 2013-2014 YEAR is now available on our

county website. Being an All Star is the highest 4-H honor at the county level. Older 4-H youth who qualify should think about applying to be an All Star for next year. Applications are due to the 4-H Office by May 1, 2013. Qualifications to apply to be an All Star are listed on the application. We don’t have any All Stars this year, so please let’s have some applicants for next year! It is a great opportunity to take your leadership skills to the next

level.

CAMPFIRE COOK-OUT For Healthy Favorite Foods Day, 9:00 a.m. April 6,

2013

Lewiston Community Church

All 4-H members are invited to Healthy Favorite Foods Day 2013. This annual event gives mem-bers a chance to prepare, show, be judged on, and share their favorite food with friends and family.

4H members are asked to enter their favorite HEALTHY Campfire Cookout food. You may also enter the Cover Contest for the Recipe Book Cover. THERE WILL BE NO CENTERPIECE CONTEST

THIS YEAR.

Be sure to bring a printed copy of your recipe for the judges to view.

NEW THIS YEAR:

This year we will be doing something new and excit-ing!! We will be having a Dutch Oven Chili Cook-off! There will be two divisions: one for clubs (youth members only), and one for adult participants. Each club may enter as a group. There will be an introductory Dutch Oven class for youth that will be taught by Dr. Cyndi Barnett, 4-H Advisor beginning at 9am the morning of the event. She will as-sist the youth with set-up, cooking, and timing methods. Adults will be on their own. The only "rule" is that no pre-mixed items may be used. For example, please do not use a chili starter where you simply add hamburger. Club groups and adults will be responsible to bring all of their own ingredi-ents and charcoal. Dr. Barnett can provide a few Dutch Ovens for the clubs, but please do bring a Dutch Oven if you have one. Adults must bring their own Dutch Oven. If you are interested in par-ticipating, please contact Kathy at the Trinity 4-H office so we can get a head count. If you have fur-ther questions, please contact Cyndi at the Shasta 4-H office 530.224.4900. This will be a fun event for everyone and the chili will be served for lunch that day. This event will be judged for top club winner and top adult winner. Get ready and let's cook-off!!

HEALTHY FAVORITE FOODS DAY There are three activities you may participate in at Favorite Foods Day:

1) You may prepare and bring a Healthy Favorite Food – theme: Campfire Cookout.

2) You can create a recipe book cover. (Please follow the guidelines)

3) Your club may enter the Dutch Oven Cook-off.

Winning entries in each activity will receive awards.

Primary members (ages 5-8) receive participation ribbons only.

Healthy Favorite Foods Rules Fill out the Entry Form, and prepare a complete written recipe for your healthy favorite food on a piece 8-1/2 x11 inch paper. Keep it simple and easy to read. Make sure your entry form reaches the 4-H Office no later than Friday, March 22. Prepare your favorite food, and bring it along with a copy of your recipe, to Healthy Favorite Foods Day ready to be served to a panel of judges. Be sure your recipe has all the correct measurements.

We would like you to select your favorite food that is healthy to eat! You may choose a desert if you wish, but it should be a healthy version. Please be prepared to explain to the judges why your chosen food is healthy for you. Examples would be: using whole wheat flour instead of white flour, not using white sugar in the recipe, or your recipe having fruit or vegetables in it. Use your imagina-tion to come up with something tasty, interesting and healthy! Only one food entry per member.

It is not necessary to bring an entire place setting. Please bring only the needed dishware and serving utensil to proper-ly serve 3 judges a small portion of your Favorite Food. Paper plates and plastic “silverware” will be provided by the 4-H Council for the judges only. Decoration of your place setting area is NOT part of the judging, and will not be considered one way or another in your score. You are being judged on your food, your knowledge, and your showmanship.

You will have the opportunity to show the judges your skill at setting up a complete place setting in a separate area with dishware and utensils provided. How well you follow the “Setting the Table” guidelines and picture will be part of your overall score. Practice at home before you come.

Note: To insure food safety, all food dishes should be pre-

pared with strictly fresh ingredients. If a hot dish is prepared the day before the event and is held overnight, it should be refrigerated immediately after cooking. You may reheat previously prepared foods, or do some of the actual preparation of your food in the dining hall kitchen if needed.

PLEASE BRING 8 ADDITIONAL COPIES OF YOUR RECIPE SO IT CAN BE INCLUDED IN THE COMMEMORATIVE RECIPE BOOKLET THAT WILL BE

CREATED THE DAY OF THE EVENT.

The cover contest is open to ALL 4-H members; the winning cover design will be used on the cover of the Favorite Foods Day Recipe Book. Primary members can enter the cover contest, but will receive participation ribbons on-ly. Note: Recipe Booklet Cover entry must be the sole work of the 4-H member – no adult help is allowed.

::RULES:: The design itself may NOT be larger than 7 1/2” x 10”. Please use 8 1/2” X 11” white paper.

Entries due at the 4-H office BY Friday, March 22, 2013 in order to allow time for judging . Title of the theme: “TRINITY COUNTY 4-H HEALTHY FAVORITE FOODS DAY 2013” (This title must be written somewhere on your cover). All artwork must be your own design. Please be creative and have fun with this. Design must be in black pen (fine-tipped sharpies are good) and on white pa-per. Hint: sketch in pencil first, and then draw over with black pen. Light pencil does not copy well, so cannot be accepted for cover contest winners. No com-

puter art or lettering, please use your own hand drawn, and lettered work. Write your name, age and club lightly in pencil on back of design.

All entries will be displayed and given recognition at Healthy Favorite Foods Day.

FAVORITE FOODS DAY JUDGING POLICIES

During Favorite Foods Day judging, the 4-H member may sit or stand at his/her place setting awaiting the judging process.

No parents will be permitted to be in the immediate area while the judging of Favorite Foods is in progress, unless they are serving as Judges.

Score sheets used in judging Favorite Food entries is based on the Danish System and will be tal-lied as follows:

Gold Medal 91 - 100 Points

Silver Medal 81-90 Points

Red Ribbon 71-80 Points

White Ribbon 70 Points and below

All Primary member participants – Grades K-3 - will receive green participation ribbons.

A POTLUCK LUNCH will follow Favorite Foods Day judging at 12:00 noon. Each family is asked to bring a potluck dish to share. Bring all of your own eating utensils – the 4-H Council does not pro-vide these. Mark Your Calendar for Saturday, April 6, 9:00 am Healthy Favorite Foods Day and Dutch Oven Cook-Off.

Tips for Success at Favorite Foods Day

Be dressed neatly in clean clothing and be properly groomed. A 4-H uniform is optional and is not re-quired. If you do wear the 4-H uniform, please wear the entire uniform including 4-H hat, and scarf or tie just as you would at any other showmanship event. White pants are the appropriate color for this event if you are wearing your 4-H uniform. Participants should be prepared to introduce themselves and their entry, properly serve the judges, and answer a

question or two about their prepared food, and explain why your recipe is healthy.

Judges will consider four criteria in their placing:

1. The exhibitor’s appearance, performance, and ability to answer ques-tions about

their food (showmanship).

2. Completeness of written recipe, and its health value.

3. Food entry’s quality, flavor and eye appeal.

4. Exhibitor’s ability to properly set a place setting using dishes and uten-sils provided.

Trinity County 4-H Council Meeting Minutes

Monday, February 11, 2013—6:00 p.m. –Young Family Ranch, Weaverville

I. Meeting called to order on February 11th at 6:15 p.m. by President Roni Millsap at the YFR in Weaverville. Pledge of

Allegiance was led by Korson Coulter and 4-H pledge was led by Snuggie McQuade.

II. Roll Call: Present were Audra Lane, Roni Millsap, Jenni Brookins, Dennis Johnson, Dixie LaFountain, Maleah McQuade, Snuggie McQuade, Donna Coulter, Korson Coulter, Abriana Coulter, Jenay Coulter, Shannon Taylor, Bryan

Taylor, Terri McBrayer and Heidi Van Dine.

Introduction of guest or new members: Dixie LaFountain, Heidi Van Dine and Terri McBrayer.

III. Minutes of the previous meeting were approved.

IV. Correspondence:

A: Letter from Leslie Carmen 4-H Supplies including a new price list.

B: Letter from 4-H Fashion Revue Donations Chairperson, looking for donations to help support the Annual Fashion Re-

vue.

V. Reports:

Treasurer’s Report: Kathy Johnson

Balance as of 1/16/13 8,839.49

Reviewed Checking account register & purchases.

Review 2012- 2013 Budget to date. May need to cut budget even more as brought up at a previous meeting. No chang-

es have been made at this time.

Other Officer Reports: Ronie having trouble with the online enrollment. Other clubs expressed same problems with the

online enrollment.

Timber Jacks applied for Revolution of Responsibility Grant to make a new fitness trail and are tentatively approved.

Any club may apply for these 1,000 grants. Further details are in the latest cloverleaf.

Special Reports:

4-H Program Representative Report- Audra:

Volunteer Leader Orientation: Trinity Alps has 2 new leaders.

Cloverleaf has a new editor: Huge thanks to Joan Gross for taking over.

Member Cards were handed out to leaders to distribute at club level.

4-H Leader Food Safety Training: 3/16/13 in Hayfork and 3/23/13 in Weaverville at YFR. Both times are from 10am-1pm

Committee Reports:

1. 4-H Calendar fundraiser: The fundraiser did not pull in enough monies to benefit the council and we will be looking for other ideas on raising monies for council. Club leaders please ask clubs if they have any ideas. For future fundraising, we will establish clearer parameters for what is expected of each club. Secretary is to send out reminder letters to Trinity

River and Zenia on outstanding monies owed for calendars. Huge thanks to Jenni for all the effort put forth.

2. FFD Jennilea, Maleah: We are looking forward to learning about the Dutch ovens and encourage all clubs to come enjoy the day. If clubs are going to partake in the Chili Cook Off part, then they need to bring a bag of charcoal and be ready to start cooking the chili by 9am. Please bring a Dutch oven if you have one to make sure we will have enough.

The number of copies of the recipes that leaders need to bring has been changed from 30 to 8. Please have entry forms mailed by March 18th to ensure they get to the 4-H office by the 22nd. Further details and entry forms are in the current

cloverleaf.

3. Textile Day/Crafts/Art Extravaganza: We need a new host club to replace Zenia. Ideas came up for asking Trinity River 4-H to host Textile Day since they always enter so many beautiful articles! Secretary is to send letter to ask. Roni is well underway for crafts and maybe having a fair work day after the 4-H function. GVC is looking forward to another

great Art Extravaganza as well.

VI. Old Business:

A: Shasta-Trinity is hosting Sectional Presentation Day in Redding on 4/27/13. Which clubs have members and leaders

attending? GVC is sending 3 members and 2 leaders.

B: Remaining livestock clippers, should council sell them or keep them? Council voted to keep them, but to make them more available during fair time; Ronie is will to have them at her camp if anyone would like to check them out. Remem-

ber to have your own blades for use of clippers though.

C: Reports from the clubs on Fundraising ideas:

Local club level. Dessert auction, car or pet washes, bake sales, Hayfork feed store customer appreciation day, kids

have BBQd for them before. Dennis is willing to check into that.

County wide. None yet.

VII. New Business:

A: Leader concern regarding rabbit showmanship at fair- Shannon. Would like rabbit showmanship back into fair since they have the cages. Only mini members can show right now. Next fair board meeting is on 2/21/13. We would like to be able to have showmanship without having to sell an animal. Rules are very confusing because of the personal dis-

cretion of any one judge. Fun shows on the other hand can be strictly for kids with no plans to sell a market rabbit.

B: 4-H work day at fairgrounds- Jenni

Neighborhood Assist, a crowd-sourced philanthropic initiative, lets communities determine where grant fund-

ing is awarded, exclusively through Facebook. The submission phase is open from February 13 - March 6

and each Facebook user who downloads the free application can submit up to three causes. Anyone living in

Upon successful completion of this course, the participant will be certified as rifle trainer and can lead a rifle pro-

ject at the club or county level or serve as county trainer to certify project leaders in the shooting sports discipline

of rifle. This course is also open to 4-H teen leaders (high school aged youth). For more information, or to register

Special Recognition at 2013 State Presentation Day

A special recognition pin will be awarded for youth who participate in State Presentation Day and focus their

presentations on healthy living. This year’s focus area is physical activity. Potential topics may include potential

trends, fitness apps, stretching, benefits of exercise, fun ways to workout, exergaming, recreational sports,

4-H MyPlate Challenge at 2013 State Field Day

In 2011 the U.S. Department of Agriculture (USDA) unveiled the federal govern-

ment’s new food icon, MyPlate, to serve as a reminder to help consumers make

healthier food choices. 4-H is challenging YOU to show how you’re making YOUR

plate MyPlate. We invite you to submit a photograph illustrating how you’re creating

healthy meals using MyPlate as a guide. 4-H members do not need to pre-qualify at
