Transform Your Terrain

One hundred and fifty years ago, two scientists engaged in what seemed at the time to be a

minor squabble. They each had a theory they believed in, and, more importantly, neither man

was willing to believe or even consider the other’s position.

One of those men was Louis Pasteur, whose name is enshrined in the annals of modern medical

history. You’ve likely never heard of the other man, Antoine Bechamp. Because these men were

so resolute in their own beliefs, they left no room for compromise.

And our health has suffered for it. the “Cause” of Disease—

from the Outside, the Inside, or Both?

Louis Pasteur is

best known for his

development of

the process of

“Pasteur-ization”—

an industrial

technique

designed to kill

all living bacteria

in foods and beverages in the

name of safety. You probably know

that part of the story.

However, how he arrived at the

point where he believed these

“germs” needed to be destroyed

will probably surprise you.

Building on the work of scientists

before him and on his own

experiments, Louis Pasteur finalized

the “germ theory” of disease. Boiled

down, the theory states that the

cause of many diseases within the

body are microorganisms that come

from outside the body.

But what about the other

theory? Antoine Bechamp was a

contemporary of Pasteur, and he had

an altogether different take on the

cause of disease. He believed that

the body’s “terrain,” when weakened,

attracted disease. Known as the

“terrain theory,” Bechamp’s idea

was seen to be the direct opposite

of Pasteur’s germ theory. The two

feuded over their theories, and today

it’s obvious who won out. Pasteur’s

name is still recognizable. Bechamp’s

name is little more than a footnote.

Perhaps the most regrettable

fallout of this is that there is clearly

room for both theories. However,

Pasteur’s germ theory is the one

that took hold. Much of what

Pasteur believed has proven to be

true. We now know that there are

microorganisms that cause—or at

the very least contribute to—certain

diseases. Before Pasteur’s time,

it was considered unnecessary

for surgeons to wash their hands

between the time they dissected

cadavers and delivered babies, which,

unsurprisingly, resulted in thousands

of unnecessary deaths. Today, such a

practice would be akin to homicide.

The question is: Have we taken the

germ theory too far? While I believe

in elements of the germ theory, for

me personally, it stands a distant

second to Bechamp’s theory, that

disease can only occur in a body

whose terrain (cells, extracellular fluid

and blood) has become weakened.

I think that modern medicine has

given up too much of itself to the

germ theory because it has caused

people to believe that poor health

comes from outside the body. For

every disease that exists, scientists

have created, or are trying to create,

a medicine to combat it.,

I believe that our complete and utter

reliance on these medicines as our

only avenue to health is horrifying

and totally misleading. And it’s

almost all due to the underlying

mindset that the germ theory is the

only theory worth believing in.

That is something I have

never accepted.

the terrainWhile I appreciate the science

behind the terrain theory—and

we’ll get to that in a bit—the

reason I truly love the terrain

message is more personal.

I embrace the terrain theory

because it puts us in control.

This is why I titled my first book,

Patient, Heal Thyself.

Bechamp’s theory basically says

that germs are opportunistic. They

seek out weakened tissue and invade

it. Therefore, in order to combat

poor health, it is of the utmost

importance to support a healthy

bodily environment—what came to

be called a healthy terrain.

A great example of the difference

between a healthy and unhealthy

terrain is the story of 10 individuals

dining at the same restaurant and

consuming the same food. If each

was served raw sushi that was

loaded with germs, and within

three hours, five of the 10 develop

symptoms of food poisoning, what

kept the other five from experiencing

the same symptoms? The answer?

The health of their terrain—the inner

environment of the body’s cells

and tissue.

The word “terrain” fits perfectly. It

creates a potent image of the vast

network of tissue and cells that weave

throughout the body as terrain on

which health either grows or dies. You

can almost visualize it. The idea that I

can take steps to make that terrain as

healthy as possible—and in doing so,

can avoid falling prey to ill health—has

great appeal to me.

The crazy part is that as much as

Pasteur’s work has been validated

through science, so has Bechamp’s!

Weston A. Price, a Harvard-trained

dentist who travelled

the world studying

indigenous populations,

noted that those who

ate a native diet without

processed foods and

lived a vigorous life rarely

suffered from the diseases

of modern commerce. In other words,

they cultivated a healthy terrain.

He also noted that when the

“Western” diet of processed foods

infiltrated their world, these cultures

began to succumb to modern

diseases.

While there are reams of scientific

data to support the terrain theory, it

may be more useful to apply common

sense. In a nutshell, the terrain theory

says that overall health is dictated by

the health of your cells and the tissue

they make up. As long as that terrain

is healthy, then you are more likely to

experience overall health. The thing

is, this is totally accepted. Every

medical professional in the world will

tell you that eating and living healthy

are the keys to being well.

One hundred and fifty years ago,

two men had what they believed

were competing theories. In reality,

what we know today is that there

is a common ground between the

two. Yes, germs can lead to disease—

in individuals who already have

a weakened terrain, that is. However,

preparing a proper terrain within your

body is the best way to stay healthy.

How did it happen, then, that the

germ theory gained an incredibly strong

foothold, while the terrain theory was

brushed aside? There are roomfuls of

conspiracy theorists who love to point

out that there is a lot of money to

be made from the fact that the germ

theory relies on pharmaceuticals and

vaccinations in order to combat disease.

While this is certainly true, I don’t believe

it’s quite that simple.

The reality is that, at the time, the

germ theory offered people hope.

In the mid-19th century, coming just

off the Industrial Revolution and the

urbanization of developed countries,

disease was commonplace, especially in

the densely populated cities. There was

certainly a feeling of lack of control.

Squalid living conditions, combined with

a diet increasingly reliant upon processed

foods, exacerbated the terrain issue. For

many of the people whose families were

struck down by disease, they had little

hope of improving their terrain. The germ

theory offered hope, and rightfully so.

Slowly but surely, though, the hope

offered by the germ theory morphed

into an utter reliance on it. The idea

that you could treat your body and

your health with disinterest—that you

could essentially ignore your terrain—

is born of the germ theory. Fast

forward a 150 years, and the results

are clear. We are as unhealthy as we’ve

ever been. The diseases of modern

society are somewhat held at bay with

pharmaceuticals. However, Americans

live sicker and die younger than

people of other high-income countries,

according to a new study released by the

National Research Council and Institute

of Medicine.

As I mentioned before, when I

first learned of the Terrain Theory,

I immediately gravitated to it.

My excitement was directly related

to my own personal experience.

At the

age of 19,

my digestive

and immune

systems failed

me. I now know

that the root of my

issue was a systemic

breakdown in my

terrain. What I found most

interesting was this: after my

initial diagnosis of Crohn’s

colitis, a digestive health disease, I went on to suffer

from more than a dozen seemingly unrelated health

challenges. Once my terrain failed, my body was

left open to predators—exactly as Antoine Bechamp predicted.

To be clear, supporting your inner terrain isn’t a panacea for all

health—just like relying solely on pharmaceuticals isn’t. Instead,

supporting your inner terrain is the simplest, most logical first step to

embracing true health. Not only is it common sense, I can personally

attest to its importance.

As someone who has manufactured and sold nutritional

supplements for over a decade, formulating a supplement that

echinacea

Latin name: Echinacea

In Food: Although in traditional preparations echinacea root is

brewed into a tea, it doesn’t have any real history as purely a food.

There’s a good reason for this because echinacea, when allowed to

sit on the tongue or consumed in large amounts, actually causes

numbness of the tongue. That’s not exactly what most people look

for in their food.

In health: If you’ve heard of echinacea—which is likely,

considering the enormous amount of attention it has received—

then you know about its ability to support healthy immune

system-function. Echinacea works to bolster the immune system

by stimulating the production of T cells. It also stimulates white

cells in their battle against unwanted toxins.

Bottom Line: The explosion of echinacea came about for good

reason—it may be the single most important immune supporting

herb we’ve ever seen.

holy Basil

Latin name: Ocimum tenuiflorum

In Food: Not to be confused with Sweet Basil, Thai Basil or

Lemon Basil, Holy Basil has a taste similar to cloves, and is

popular in Thai cuisine mixed with various meats in a stir-fry.

In health: Holy Basil is considered a sacred herb in India for

good reason. Traditionally, Holy Basil has been used to support the

immune system on varying levels and also as a digestive health aid.

More recently, interesting research has come forward that notes

Holy Basil’s effect on blood sugar, cardiovascular health and the

support of a healthy mood .

Bottom Line: Holy Basil has been—and still is—one of the most

studied herbal remedies due in no small part to its wide array of

Oregano

Latin name: Origanum vulgare (Bonus name fact: Oregano

means “delight of the mountains” in Greek.)

In Food: Of all the plants and herbs on this list, oregano is the

one most likely found in your own kitchen. Commonly used in

Mediterranean cooking, oregano’s strong, assertive herbaceous

flavor has made it a staple in cooked and raw foods.

In health: Much of oregano’s flavor comes from the same place

as its health benefits— the essential oils that are packed into it. It

has been traditionally used to support a variety of immune system

and digestive health functions, but it’s oregano’s rare benefits to

the respiratory system that have earned it a special place among

herbal formulas.

ginger

Latin name: Zingiber officinale

In Food: Where to start? Ginger has experienced somewhat of

a renaissance in the past decade in the United States. A staple

of Asian cuisine, ginger is used in a variety of ways. It can be

used raw to flavor a salad, pickled to make a side dish, dried and

ground to spice up a favored dish—and it is an essential ingredient

in Indian and Thai curries. With its contrasting spiciness and

sweetness, ginger is one of the most versatile herbs/spices you can

keep handy.

In health: Much of the traditional use of ginger centers around

its benefits to the digestive system. This traditional use has, over

the last decade, been backed by loads of scientific research. It is

an intestinal spasmolytic which relaxes and soothes the digestive

system. Ginger has also been shown to ease the symptoms of

motion sickness and occasional nausea—especially nausea in

pregnant women . Finally, ginger contains gingerol, a compound

which supports healthy inflammation levels in the body.

Bottom Line: It’s great to see ginger finding a home in our

kitchens. Its uniquely complex flavor is matched only by its

health benefits.

turmeric

Latin name: Curcuma longa

In Food: Peppery, warm and packed with flavor, turmeric has

been used for thousands of years to season foods across Southeast

Asia where the plant grows. Most of us know turmeric as the

dried spice that comes from the rhizome root of a plant; however,

many cultures use the leaves of the turmeric plant to wrap food in

before cooking.

In health: What’s in a color? Everything, where turmeric

is concerned. Turmeric gets its yellowish-orange color from

curcumin, the natural phenol that is thought to be responsible

for many of the health benefits associated with turmeric.

Traditionally, turmeric has been used as a digestive aid and as a

food preservative since it has high antimicrobial activity. Turmeric

has a high antioxidant capacity, making it ideal to support

cellular health, and it has even been shown to support healthy

inflammation levels in the body as well as being an aid to healthy

weight management .

Bottom Line: We’re surprised that turmeric hasn’t been hailed

as “the next great health aid,” as it continues to show powerful and

far-reaching benefits.

peppermint

Latin name: Menthe piperita

In Food: Interestingly, while peppermint has been used as an

herbal remedy for thousands of years, its use as a food additive has

flourished only recently. Today, it is used as a flavoring agent for a

wide range of popular foods and personal care products.

In health: Peppermint is an age-old herbal formula that has

been used to soothe a wide range of abdominal discomforts. In

fact, clinical trials have indicated that peppermint oil is effective

at comforting digestive disturbances—including occasional

abdominal cramping , bloating, constipation and diarrhea. In one

study, Italian researchers reported that 75 percent of participants

who took peppermint oil capsules for four weeks had a major

improvement in digestive health.. Peppermint oil is also commonly

used to support healthy urinary tract function.

Bottom Line: It’s pretty rare to find something that tastes so

good and provides so many health benefits.

milk thistle

Latin name: Silybum marianum

In Food: While you’ve likely never seen milk thistle on the menu

at your favorite restaurant, it has been consumed for hundreds of

years. The leaves are used in salads (thistles removed, of course),

and the root can be boiled, roasted or even consumed raw.

In health: For 2,000 years, milk thistle has been used as a

detoxifier, particularly for the liver, kidneys and gallbladder. It is

known to have a supportive effect on inflammation levels in the

body and gets its antioxidant potency from silymarin, a group of

antioxidant flavonoids that work to prevent free radicals from

effecting liver cells, inhibit toxins from entering liver cells and aid

in the cell regeneration process.

Bottom Line: The liver is the primary organ associated with

removing toxins, and we know of no other herbal that supports

liver function as well as milk thistle.

Black tea

Latin name: Camellia sinensis

In Food: Well, it’s tea—possibly the most widely consumed

beverage on the planet!

In health: Tea has been consumed for thousands of years,

sometimes as an herbal tonic. Black tea is brimming with

antioxidants that are particularly effective in supporting

cardiovascular health. The tannins in tea are good for digestion,

and the caffeine in lower levels can be beneficial in support

of the brain and nervous system. While these benefits are

plenty, there is an even better way to enjoy the benefits of black

tea—by consuming a fermented version , known as kombucha.

Fermentation of black tea truly unlocks its power , packing it with

probiotics, B vitamins, amino acids, and polyphenolic antioxidants.

Bottom Line: Black tea is great—but it’s made all the more

Fermentation has been used for thousands of years as a means of preserving food and unlocking nutrients.

What is it about fermentation that makes it so unique? In short,

fermentation is a process that breaks down substances to their

more basic constituents. Bacteria and/or yeasts act upon a food to

break down its proteins into amino acids, its fats into fatty acids

and its complex sugars such as lactose into single sugars such as

glucose and galactose. In the case of foods or beverages, this often

makes the nutrients easier to absorb into the body, in addition

to creating organic acids, such as lactic acid, which act as natural

preservatives due to their anti-microbial effects. But that’s only half

the fermentation story. Because, while fermentation is essentially a

process of breaking down, it’s actually not a destructive process—it is

a creative one.

During any fermentation process, new compounds are created.

In foods, fermentation leads to the creation of enzymes, organic

acids and antioxidants. Additionally, it also increases the levels of

certain nutrients. The classic example is sauerkraut. Sauerkraut

contains higher levels of vitamin C and B vitamins than the cabbage it

came from, purely due to the fermentation process. This is a concept

we at Beyond Organic like to refer to as “nutritional alchemy.”

Recently, a key discovery has been made to apply the art and

science of fermentation to traditional botanicals that are celebrated

for their tremendous health benefits.

Herbal History

Herbs have been around just as long as fermentation. Whether

dating back in written history to ancient Egypt, Aryuvedic medicine

While the use of herbs to promote wellness

is steeped in tradition and even folklore, there

is much hard science to back up the validity

of herbs. There have been over 10,000 different

compounds identified in plants, a number that

likely is just a small portion of what’s really
