Mangú Encebollado (Onion Mangú) Recipe from Dominican Republic Ingredients: 3 Green bananas 3 Tbsp. butter 1 Tbsp. oil 1⁄2 cup minced red onion 1 Tbsp. vinegar

Salt Preparation: Peel and cook the bananas. Meanwhile, place the onion in vinegar then cook it with the oil and a little salt (it is good to put them to rest 20 minutes before). Make the mangú with the butter and add 1⁄4 cup of the plantain cooking and salt, then add the same amount of cold water. The consistency of the mangú will depend on how soft you like it, the more water you add the softer it remains. Serve with egg, cheese, salami and avocado.

Receta de Santo Domingo / República Dominicana Ingredientes: 3 plátanos verdes 3 cucharadas mantequilla 1 cucharada. petróleo 1⁄2 taza de cebolla morada picada 1 cucharada. vinagre

Preparación de sal: Pelar y cocinar los plátanos. Mientras tanto, coloca la cebolla en vinagre y luego cocínala con el aceite y un poco de sal (es bueno ponerlas a reposar 20 minutos antes). Prepara el mangú con la mantequilla y agrega 1⁄4 de taza del plátano cocido y sal, luego agrega la misma cantidad de agua fría. La consistencia del mangú dependerá de lo suave que te guste, cuanta más agua le agregues más suave queda. Sirve con huevo, queso, salami y aguacate.
