Principle System Design

Installation

This Manual is prepared for the use of authorized installing agents for TMB Baking, licensed utility contractors, and end users. All gas, electrical, plumbing, refrigeration and venting connections should be made according to local codes by local licensed contractors.

This manual is not intended to be all encompassing. You should read, in its entirety, the installation procedure you wish to perform to determine if you have the necessary tools, instruments and skills required to perform the procedure. Procedures for which you do not have the necessary tools, instruments and skills should be performed by a trained technician.

Every TMB Baking retarder proofer has a standard warranty (1 year on parts and 90 days on parts and labor).

Unauthorized installations will void your warranty. Check with TMB Baking before you decide to have an unauthorized party assemble the system.

Utilities – standard for small complex. Consult with TMB on larger boxes: Electrical: 208/240V or 440V -phase, neutral & ground (440V require special heating & humidity

elements)

o Separate connection for light 120v, neutral & ground.

Water connection (tap) ¼” – ½” incoming. ½” – ¾” condensate. Condensing unit: 230-208V/60/1 or 3phase (440V/ 3-phase units also available when this is plant voltage)

Note: Amperage is in accordance to the number of diffusers and size of condensing units in system. Please

contact TMB Baking for these calculations based on model and voltage supplied by plant.

Important Notes for assembly:

Forklift is required for most deliveries

ILLUSTRATION OF DIFFUSERS AND CONNECTIONS TO THEM:

Plumbing and electrical contractors are permitted to make hole penetrations through the 31/2” walls or ceiling

panels for the purpose of mounting and running wire for light fixtures or running condensate piping from the

diffusers to the floor sinks/drains. The walls contain stainless steel or Galvalume® sheating on the inside and

outside of the panel with polystyrene and wood on the inside. There are no concealed wires or pipes inside of

the walls for a drill bit to hit. Penetrations for the refrigeration lines are pre-drilled and located in the top left side

of the diffusers

Operation and Programming – Using your Retarder Proofer

Powering up unit Turn on Main Power switch (Yellow/red dial located on main control panel box)

PLC screen will initialize and in less than one minute

You are viewing the Manual mode screen (“Retarding” or “proofing”)

Your TMB retarder proofer has two manual modes; “Retarding” & “Proofing”.

Manual Mode The “set” values in either of the two modes will remain until changed by the operator.

2) To make changes you first have to input the security code and “enter” (check with TMB Baking). Enter

3) Resetting Time. Enter correct hour and minutes (military) and when correct press “enter time”.

Automatic Mode – This is the second standard mode your TMB Baking retarder proofer can operate in.

In this mode you can program your retarder proofer for every day use, or for every individual days needs.

Automatic Mode

Use the above screen to program your production. For each day of the week you can program/change:

Retarding Temperature

Proofing start time

Proofing temperature

Humidity set percentage

To begin programming select the next production day and press Start/Auto

To change any of these programmable values press “set” or “Hours/minutes”

In each sub screen for the chosen value enter the new value and when finished press “enter”. System always will go to retard first unless proof time is 0:00.

Note: If you are in auto mode and need to be in the alternative program exit to manual mode in the upper left

corner. When finished in this program, switch back to auto mode by pressing auto mode in the upper left corner.

Trouble shooting

When you have a flashing “High Heat” display. Wait for the system to cool down before turning system back on. If this happens again, call for service. To make TMB Baking aware of any issues you may be

having with your retarder-proofer, please send an email to [email protected] and/or call technical

support at (415) 531-4906.
