When beef is ground, the surface area of the meat is greatly increased. Any bacteria that are present on the outside of the meat prior to grinding will be distributed rather uniformly throughout the product as it is ground and blended. Should any pathogenic organisms be present, they likewise will be distributed throughout the ground beef batch. Therefore, ground beef products (including ground beef patties) must be thoroughly cooked to at least 160ºF at the center to ensure that any potentially harmful organisms are destroyed. Since color is not a dependable indicator of degree of doneness, a meat thermometer should be used to determine the internal temperature.
