    This Isnt Just Bar-B-Q... This is Love.Holiday meals for those in need.

    Without anyone noticing, the holidays swept right up on to our doorstep in what felt like a blink of an eye. Just a few days away is Thanksgiving and right around the corner afterwards is Christmas. For most, this is a time to celebrate family and friends, spending time to enjoy their company. For some that involves gifts, tirelessly searching for that perfect item and most often times the holidays involve traditional, home-cooked meals that fill entire dining tables. For others, its all about giving back to the community and helping those in need. Which is exactly how Mr. Rib is going to be spending this holiday season. On Thanksgiving Day, on the cover of Peach & Olive starting at 1PM, you will find Evangelist Ned Mallory, aka Mr. Rib, serving up delicious meals of BBQ chicken, tri-tip and catfish to the public for free. God told me to feed his people nature and spiritual food on Thanksgiving day. So thats what I do, no questions asked, I just obey him. And I love doing it! Mr. Rib has been giving back to the community this way for over 14 years. Nearly 300 people show up on Thanksgiving day to take part in the free meal giveaway every year. There are no restrictions on who may come,

    all anyone needs to participate is a healthy appetite. And its not just a free meal, either. Whole families come out and enjoy the festivities together. This is an event that is about community, and food just happens to be the perk. People who come for a nice hot meal may leave having made new friends connecting over the joy of the holiday spirit. The annual cookout is made possible by donations from both businesses and members of the community. Mallory takes these donations and purchases everything from ribs (of course), chicken, tri-tip, fish, to beans and other items to build out the hot meals to be given away. On the day of the cookout, Mr. Rib lends his barbecuing techniques to prepare the all the food, and then volunteers show up to help serve the food to the public. Thanksgiving isnt the only holiday community members can expect to find Mr. Rib out serving BBQ for those in need. Christmas is also a time for giving back, and people can expect the same treatment, except this time theres an added bonus. In addition to hot meals being served, there will also be a free toy giveaway for every child who attends. Ive been doing this for over 14 years, and Im not tired yet. Thank God! Says Mallory, indicating that hes not slowing down anytime soon. All of this couldnt be made possible, however, without the generous donations made by businesses and those in the community.     Thanksgiving Cooking wth HerbsAnd the wonders they do for your body.

    Thaw the turkey and mash those potatoes. A traditional Thanksgiving dinner arrives this month. For some of us, this means family traditions repeated from years gone by. Many people travel to friends and relatives. Others simply grab the remote control and make themselves comfortable in the recliner. Traditions vary from family to family, but Thanksgiving dinners customarily boast the same recipes. These recipes include many herbs and spices that tickle our noses and fill our stomachs with wonderful treats. Treating our taste buds is not the only thing happening during a Thanksgiving meal, however. Those herbs and spice pack a powerful health punch when you use fresh ingredients or therapeutic-grade essential oils. Lets look at some of the hidden advantages to adding flavor to our favorite dishes. When you use basil, oregano, thyme, clove, or cinnamon bark, viruses are being attacked in your body. Not only are these anti-

    viral, but basil, oregano, and cloves are also anti-bacterial. If you are looking for an anti-fungal agent, add rosemary to that list. These oils along with nutmeg are also anti-parasitic in nature. I bet you didnt realize that your meal included so many germ-fighting agents! If inflammation is a problem for you, basil, oregano, rosemary, cloves, nutmeg, and cinnamon bark come to the rescue. Cloves, nutmeg, and cinnamon bark also act as stomach protectants. Since many forms of internal inflammation begin in the digestive system, this makes sense. Protect your stomach lower inflammation. This almost justifies that second helping of stuffing. Sometimes when families gather, it is not all pumpkin pie and whipped cream. Tempers can flair even in the most loving family. When this happens, add some extra rosemary, celery seed oil, or nutmeg to the recipe. These three oils are liver protectants. Since liver is the organ that holds anger, providing some TLC for your liver dispels anger before it comes out of your mouth. Nutmeg and basil have also been shown to relax muscles. This is good to alleviate anger as well as relax tired muscles after the holiday flag football game. If you are more of a spectator than a linebacker in the flag football game, add some extra nutmeg or cinnamon bark to your apple cider and sip it as you watch the game. These two oils can stimulate your circulatory system without the help of any sort of sports. Being with family may also present reminders that everyone is getting older. Not to worry. Oregano, thyme, and cloves have all been shown to be anti-aging in nature and can slow the impact of time on the body. Oregano also stimulates your immune system, keeping illness away for a longer, healthier life. Go one step further by adding rosemary to your day. Rosemary aids mental clarity, which is always a plus if you plan to live longer. This list is brief and only covers a small portion of the benefits that therapeutic-grade essential oils can bring to your Thanksgiving dinner.     Fun Facts1. A tradition is born: TV dinners have Thanksgiving to thank. In 1953, someone at Swanson misjudged the number of frozen turkeys it would sell that Thanksgiving -- by 26 TONS! Some industrious soul came up with a brilliant plan: Why not slice up the meat and repackage with some trim-mings on the side?Thus, the first TV dinner was born!

    2. Going shopping? Not if youre a plumber. Black Friday is the busiest day of the year for them, according to Roto-Root-er, the nations largest plumbing service. After all, someone has to clean up after household guests who overwhelm the system.

    3. Corn is one of the popular symbols of Thanksgiving. It came in many varieties and colors - red, white, yellow and blue. Some Americans considered blue and white corn sacred. The oldest corns date 7000 years back and were grown in Mexico.

    4. It was not until 1941, that congress declared Thanksgiving as a national holiday. It was declared to be the fourth Thurs-day in November.

    5.Leaving a legacy: When Abe Lincoln declared Thanks-giving a national holiday, it was thanks to the tireless efforts of a magazine editor named Sarah Josepha Hale. Her other claim to fame? She also wrote the nursery rhyme, Mary had a Little Lamb.

    6. Gobble, gobble? Not so fast. Only male turkeys, called toms, gobble. Females, called hens, cackle.

    7. Have it your way. If Ben Franklin did, the turkey would be our national bird. An eagle, he wrote in a letter to his daugh-ter, had bad moral character. A turkey, on the other hand, was a much more respectable bird.

    8. Break out the menurkeys: The first day of Hanukkah and Thanksgiving come together today for the first time since 1888. Scientists say the confluence wont occur again for another 70,000 years, give or take a millennium.

    9. Thanksgiving is not just an American holiday. Canadians celebrate it too. Except they do it the second Monday in October.

    10. Doomed from birth: Those poor turkeys; they dont stand a chance. A turkey less than 12-weeks-old is called a fry-er-roaster.

    11. There are four places in the U.S. named Turkey. Louisi-anas Turkey Creek is the most populous, with a whopping 440 residents. Theres also Turkey, Texas; Turkey, North Carolina; and Turkey Creek, Arizona. Oh, lets not forget the two townships in Pennsylvania: the creatively named Upper Turkeyfoot and Lower Turkeyfoot!

    12. The traditional cornucopia was a curved goats horn filled to brim with fruits and grains. According to Greek legend, Amalthea (a goat) broke one of her horns and offered it to Greek God Zeus as a sign of reverence. As a sign of gratitude, Zeus later set the goats image in the sky also known as constellation Capricorn. Cornucopia is the most common symbol of a harvest festival. A Horn shaped container, it is filled with abundance of the Earths harvest.

    Monte Cristo Cornbread SkilletA new way to eat your leftovers this holiday season.

    The winter months are a great time to gather with loved ones and enjoy delicious, cherished recipes. From all over, relatives travel great distances to be with their families. And it just so happens to be that food is the centerpiece of all those gatherings. Everything from honey hams to deep fried turkey finds their way on to the tables. And if youre anything like our family, you have multiple family members who are convinced they have the best recipes for every major dish. Chances are, youll end up with more than you can handle in one sitting. So with all these large meals, theres probably going to be quite a bit of leftovers. Ham and turkey sandwiches for more days than you can count. Regardless of how delicious they may be, a person can only eat one thing for so long. So how about a new way to eat all those left over dishes? In this issue of The Valleys Nickel we included a recipe to help deal with those leftovers and transform them into a tasty new cornbread recipe.

    MONTE CRISTO CORNBREAD SKILLET

    Ingredients:

    1 (6 oz.) package Martha White Cotton Country Cornbread Mix Crisco Original No-Stick Cooking Spray 1 1/2 cups chopped cooked turkey 1/2 cup chopped cooked ham

    1 1/2 cups shredded Swiss cheese 4 large eggs 1 cup milk 2 tablespoons mayonnaise 2 tablespoons honey mustard, divided 1 1/2 teaspoons salt 1/2 teaspoon pepper 1/2 cup Currant Jelly Powdered sugar

    Directions:1. Prepare cornbread mix according to package directions, except bake in a 10 1/2-inch Lodge cast iron skillet (cornbread will be thin).

    Remove cornbread from skillet; cool and cut into cubes.

    Wipe out skillet with paper towels; spray generously with no-stick cooking spray.

    2. Heat oven to 350F.

    Place cornbread cubes in skillet. Top with turkey, ham and cheese.

    In medium bowl, whisk together eggs, milk, mayonnaise, 1 tablespoon honey mustard, salt and pepper until well blended.

    Pour evenly over ingredients in skillet. Bake 30 to 35 minutes or until set and lightly browned.

    3. Melt currant jelly by warming slightly. Add 1 tablespoon honey mustard; whisk to blend.

    4. Remove skillet from oven. Cut in wedges, sprinkle with powdered sugar and serve with currant jelly and mustard sauce. It makes 6 servings.Have a great recipe youd like to share? Send it to [email protected] to have it featured in one of our future issues.

    A Community for Seniors to Have Fun...And to learn, socialize, share, and meet new friends.

    For many seniors who choose to age in place, isolation and depression often af-fect the ability to maintain good physical and mental health. By providing a place to gather for activities, provide moral support and opportunities for socialization, our members can keep their minds sharp, bodies active and spirit uplifted. In the summer of 2013, Barbara Beau-champ, Director of Palm Village Senior Network, along with David Reimer, CEO of Palm Village Retirement Community, came up with an idea to create a program for seniors in the Fresno area. Research was showing that for the next 15 years, the senior population would explode. Statistics show that there were 40.2 million seniors in the United States in 2010. By 2050, the projected population of Americans, age 65 and older, will more than double to 88.5 million. What kind of programs need to be created to support this increasing population? Our goal was to focus on what seniors in the valley want and need in order to live full and happy lives while living in their own homes. By the time we opened our doors in September of 2013, we had our answer: Seniors want to have fun! Thus began the journey of Palm Village Senior Network, a 501 (c) 3, non-profit (status pending), Community Benefit Organization. Currently serving nearly 300 seniors in the Fresno area, Palm Village Senior Network or PVSN, relies on donations from members and generous donors to carry out our Mission: To provide on-going opportunities for seniors in the greater Fresno area to remain active and engaged, in Mind, Body and Spirit, with each other, and in the community. The Director, Barbara Beauchamp, currently runs the organization, relying on volunteers to help with activities, mailings and various duties. Many of our volunteers are our senior members and we occasionally have interns

    from Fresno State. Volunteers are always need-ed and we appreciate anyone who gives of their time, talent or treasure. Palm Village Senior Network is open Mon-day through Friday, with activities between 10 am to 4 pm. We have daily, weekly, and monthly activities which include Bridge, Bin-go, Canasta, Adult Coloring & Potluck, Crafts, Train Your Brain, Line Dancing, Creative Writ-ing, Luncheons and Presentations, occasional Day Trips and so much more. I try to create activities so there is something for everyone, explains Barbara, Some are hit and miss, so I have learned to be very flexible and listen to what my senior members want. I am hoping to start a Tai Chi class in January and have more presentations on issues associated with aging. Palm Village Senior Network and our members love giving back to our commu-

    nity. We have supported the Silent Film series at Warnors Theatre, and are currently in our second year of collecting new blan-kets for Fresnos M.E.A.L. #KeepFresnoWarm, We are also excited to have Elder Paws, a non-profit rescue for senior dogs, presenting at PVSN on Friday, December 4th at 1:30 pm. I think it is the perfect pairing, says Barbara. I hope many will join us. Our day trips have been a huge hit with our mem-bers. We have been to the

    Reagan Library, the Central Coast, Old Town Sacramento, even a San Francisco Giants game. Unfortunately, it takes a lot of time and energy to plan the trips, and with the daily activities and other duties of running the organization, we havent had a trip in a while. I am desper-ately searching for a volunteer who could take over the planning and implement our day trips again, explains Barbara. Most members donate what they can weekly, monthly, or even quarterly. Some of our activities, like Bingo and line dancing class, require a donation to participate.
