or homemade dressing of choice

Preparation Cook the chicken fingers or strips in refined coconut oil.

Prepare honey mustard and set aside.

To serve: Put two big handfuls of lettuce/greens on a plate. Chop

chicken and top each salad with equal amounts of goat cheese,

Wooden Nickel ‘16-’17

68 Co-op Owners voted May 1-7 to narrow the list of

Wooden Nickel nominees from 34 to 12. The following

local non-profits will be featured over the next year:

...Once oil is hot, coat chicken in egg mixture, dredge in almond

flour mixture and place in pan.

Cook 3-4 minutes per side or until golden brown and cooked

through. Sprinkle with additional salt and pepper.

Homemade Honey Mustard Sauce Ingredients

½ cup Homemade Mayo

¼ cup mustard or Dijon mustard

¼ cup honey (I used ¼ cup honey for a tripled recipe)

½ teaspoon salt

½ teaspoon pepper

¼ tsp garlic powder (optional)

Instructions

Mix all ingredients with whisk or blender until smooth.

Homemade Mayo Ingredients

4 egg yolks at room temperature

1 TBSP lemon juice or apple cider vinegar

1 Tsp regular or Dijon mustard (or ½ tsp dried mustard)

Salt and pepper

⅔ cup olive oil or avocado oil

⅔ cup coconut oil (warm) or other healthy oil (macadamia works

well)

Instructions

Put egg yolks into blender or bowl and whisk/blend until smooth.

Add lemon juice or vinegar, mustard and spices, blend.

SLOWLY add oil while blending or whisking at low speed, starting

with olive oil. Start with a drop at a time until it starts to emulsify

and then keep adding slowly until all oil is incorporated.

Refrigerate for up to 1 week.
