PRESIDENT’S MESSAGE

Hi Ladies, I hope that you had a wonderful day of thanks with your loved ones. Now it’s on to the next holiday countdown. I saw a wonderful descriptive phrase on Facebook the other day and it describes me right now.

I am working on my PHD in painting (a.k.a my Paintings Half Done). How about you? If you have ornaments or gifts to finish, please come to the December paint-in and join the rest of us and have some company. We can all work on our PHD’s together. I am going to keep this note short so I will transition right into thanking Karen Ortman for her wonderful har-vest pumpkin class. The warm fall colors on the pump-kins and background were just beautiful, and I dare say that everyone had great looking pumpkins. J Thank you very much, Karen, for sharing your talents with us. Thanks also go out to Sue Bond for putting together our annual project vote with an awesome array of choices, and Leslie Pilcher for making it all available as an online voting option. Kudos ladies. 1st Vice (Programs) News Hello ladies! November’s class with Karen Ortman was wonderful. I love fall so much and Karen's pumpkins gave me that warm feeling. Thank You Karen for that wonderful class. We had our project vote and the list of the chosen projects are listed in the newsletter. (Page 4) We had many beautiful pieces to chose from, it was difficult to only pick 9.

January 2016 class with Lori Hillstead is the Zebras on Hat box or Lori also did it on a pillow too. Lori is such a great teacher, I am really looking forward to this class. I am going to have her bring her 2 pieces that she submitted to our project vote and both got in the Baltimore Oriole and Antique Vase so if you want to see them come and take the Zebras and see in person her new projects too.

Here is the list of persons taking the class in January: Sheila Elliot, Charlene Butler, Mary Mitch-ell, Sue Johnson, Silvia Esposito, Kathy Steffel, Roxanne Walker, Mindy Rupp, Renee Molloy, Kenna Perrin, Candy Sciarretta, Leslie Pilcher, Neva Anderson, Charlote Hicks, Dawn Reinhardt, Cheryl Powell, Sue Bond

We still have openings so if you still want to take the class it is not too late let me know and I will get out prep sheet and patterns to you.

CRISPY BAKED BASIL PESTO CHICKEN BREASTS (also great on salmon)

From Phillis Carey "The Casual Gourmet" (check her out on Facebook as she teaches in Escondido) Serves 4. 4 boneless skinless chicken breast halves Salt and pepper to taste 1/2 cup mayonnaise 3 T. prepared basil pesto 1/4 cup freshly grated Parmesan cheese 2 cups coarse fresh breadcrumbs made from fresh French or Italian bread (this also works with gluten-free bread) Panko works well instead of bread crumbs. You might get away with less bread crumbs. 1. Preheat oven to 450 degrees. Trim chicken and pound between two sheets of plastic wrap to an even 1/2-inch thickness. Arrange chicken on a parchment-lined baking sheet. Season chicken with salt and pepper. 2. In a small bowl stir together the mayonnaise, pesto and Parmesan cheese. Divide the mixture evenly among the chicken breasts and spread to cover the entire surface of each. 3. Mound the breadcrumbs on top of each breast, covering completely and patting down lightly. Bake for 12 to 15 minutes or until chicken is cooked through and breadcrumb topping is nicely browned. Jan Johnson (November Paint-In)
