GRAPE VARIETALS 100% Pinotage THE VINEYARD The grapes were sourced from three selected vineyard sites, two situated in the Malmesbury area and the other in Riebeeck Kasteel. The vines and all three locations are trellised and irrigated and grow on high potential Malmesbury Shale soils. HARVEST DATES Mid to late February Balling was between 25.5 to 26.4 WINE MAKING The grapes were picked at full ripeness. The bunches were destalked and crushed and were fermented for 8 days using selected yeasts. The press date was determined sensorically based on regular tastings. The wine underwent abundant wood maturation using both French and American oak during fermentation. The length of wood maturation and release dates were determined by wood extraction and complexity. The components were blended before bottling, receiving minimal filtration. A sumptuous up front nose of mocha and coffee beans is followed through onto an invitingly rich palate, offering wild berry and dark chocolate flavours. FOOD COMPANIONS Goes wonderfully with grilled meats, dishes with dark reduced savoury sauces and smoked and grilled spare ribs. Also try with dark chocolate..
