Developing Country-Specific Nutrition Resources

Why do we need these resources? Because education tools need to work for the world in which they are used.

Not apples and oranges…

…but what people eat locally.

Creating materials takes time, energy, and expertise

“It takes so much time to develop material for my student trips that sometimes I just don’t have the time to lead them.” -Diane Stadler, RDN, PhD, Director of Graduate Nutrition Programs at OHSU

Developing Country-Specific Nutrition Resources

What’s needed? Appropriate resources for teaching nutrition and the related issues of sanitation, hygiene, health

monitoring, agriculture, cooking, parasite management, dental health, and more.

• Nutrition topics relevant to region• Technical and non-technical

explanations• Culturally appropriate illustrations• Language of region used, when

possible• Flexible formats for various audiences • Flexible formats for different activities• Low cost• Accessible to AND and others• Suggested teaching strategies

Testimonials

Jen Brewer, MA, RDNAuthor, Speaker, Consultant Fighting malnutrition through Guatemalan family gardens

“I love the Global Food and Nutrition Resource Hub Resources. The focus of my work is on small communities in Guatemala and these resources have helped not only explain the dichotomy of many in that population who are underfed, yet overweight (the lack of nutrient dense fresh foods and increased consumption of low nutrient density foods and sugar-sweetened beverages), but also give easy-to-teach guides on how to combat these issues. The links and lessons provide information that is concise and basic, and focused on the food and resources available to Latin American cultures. I especially appreciate the food pictures, which include the food most commonly consumed in the Guatemalan communities where I work so I can help people visualize the lessons using foods they are most acquainted with.”

Testimonials

Stephen Alajajian, RDN, CLCSenior Nutrition Technical AdvisorGardens for Health International

“These tools do a nice job of outlining nutrition content that is region-specific and easy-to-understand. It's difficult to talk about things like protein and vitamin A when these terms may not mean much to a target audience. The tips offered here explain these concepts in a very basic, visual way. High-quality visual educational materials are especially important in this part of the world where literacy rates are often very low. For capacity building purposes, these types of tools can be very useful. Having worked as a nutritionist in Guatemala, I can say that there is a great deal of work to be done around malnutrition and that RDNs are well-equipped to meet the challenges. I definitely foresee expanding opportunities for dietitians in the developing world. Tools like these can help to support them.”
