Well it’s a new year, & it only seems like yesterday that I was writing about how to have an easy and stress free Christmas, off ering hints and tips & now the decorations are down & stashed, and things are returning to normal! 2012 was such an exciting year, with the Queens Jubilee celebrations, & then the Olympic & Paralympic games. 2012 also saw new residents move into the area, & new businesses set up; welcome to you all.

Aft er the excesses & indulgence of Christmas now may be the time to start thinking of a healthy eating plan or maybe getting some exercise? We have such wonderful parks, walks, & facilities in the area; it’s not hard to fi nd somewhere to go to get fi t. Even a brisk walk along the Taff Trail, up to the Garth or to Castell Coch is enough to get the muscles working & to feel invigorated. It may be a long shot for many of us to plan to be a competitor for Rio, but why not utilise the wonderful achievements of team GB as encouragement for your children or grandchildren to get involved in sport? Sports can be marvellous exercise for children & also help them to learn to share & mix with others.

Th is edition sees the usual mix of recipes, adverts & information. I am always happy to hear from you, so why not submit an article, or advertise your business in the next edition?

I hope that you all have enjoyed reading Th e CF15 Directory over the past year as much as I have producing it. Th anks to the support of businesses & the community, I will be able to continue to produce & distribute the magazine throughout 2013, & each edition will be online too. Ingredients

For the green butter

225g/7oz unsalted butter, softened small handful fresh parsley small handful fresh chives large handful fresh sorrel leaves (if you can't get sorrel you can use extra parsley

and chives or tarragon or basil and add a squeeze or two of lemon juice) For the salmon

a drizzle of olive oil 4 portions salmon fillet, skin-on, about 170g/6oz eact salt and freshly ground black pepper

To serve

lemon wedges a few sprigs of parsley and lengths of chive

Preparation method

1. First make the herb butter. Place the butter in the bowl of a food processor. 2. Chop the herbs roughly. You should aim for two tablespoon each of parsley and

chives; there will be more of the sorrel. Place the herbs into the bowl with the butter. Process until the herbs are finely chopped, scraping down the bowl with a spatula once or twice if necessary. (If you don't have a processor, chop the herbs finely, then beat into the softened butter.)

3. Scrape the butter onto a sheet of silver foil, pat into a sausage shape, roll up and chill in the fridge until needed. (Herb butters can be frozen for up to a month.)

4. For the salmon, add the olive oil to a non-stick frying pan and carefully wipe up any excess oil with kitchen paper - you don't want a lot of oil in the pan. When the pan's hot, add the salmon, skin-side down first, and cook for 2-3 minutes, depending on the thickness of your salmon, without moving it around at all. This will ensure the skin doesn't stick to the pan.

5. While the salmon is cooking, remove the butter from the fridge and slice off eight discs with a hot knife (using a hot knife creates a clean cut).

6. Season with salt and freshly ground black pepper, then turn the fish over and cook for a further 1-2 minutes or so, until the salmon is cooked but still has a line of translucent, darker pink flesh in its centre. This slight 'undercooking' keeps the salmon moist and tender.

7. To serve, lay the salmon on warm serving plates and top with a slice or two of green butter. Tuck a lemon wedge in on the side and garnish with the parsley and chives, if you like.

Ingredients

For the rhubarb fool

700g/1½lb rhubarb 2 lemongrass stalks very finely

chopped to almost a powder 100ml/3½fl oz water 140g/5oz unrefined organic sugar 110g/4oz icing sugar 150ml/¼ pint crème fraîche (preferably organic) or 1 small carton 150ml/¼ pint mascarpone cream 4 tbsp white chocolate, grated or peeled into shavings

For the rhubarb lemonade

1 lemon, juice only 1 small glass sweet wine, optional

Preparation method

1. Wash and trim, but do not peel the rhubarb. Cut into even chunks about 3cm/1¼in long and put into a warm pan with the water, sugar and the lemongrass. Cover and simmer until the rhubarb softens and breaks down - usually this takes about 10 minutes.

2. Strain through a sieve, reserving all the juices and allow the rhubarb to cool down.

3. Whisk the icing sugar into the mascarpone, then gently fold in the crème fraîche and half the rhubarb.

4. Divide the remaining rhubarb among four dishes or glasses and spoon the fool mixture on top. Allow to set and cool in the fridge. Serve with the chocolate shavings on top.

5. For the rhubarb lemonade, pass the reserved rhubarb liquid through a fine sieve, then add lemon juice to taste. Add the sweet wine if you want to make it alcoholic and chill well in the fridge.

6. Serve in small iced glasses with the fool and some shortbread biscuits or Tuille biscuits.

In October, we had our second Parent’s Evening of the year. As usual, there was a fantastic turnout by parents and relatives of the children. As well as the typical opportunities to view the children’s files, speak to staff and sample the food cooked at nursery, we also invited Radyr Library, the Meningitis Trust and several local businesses to exhibit their products. We had fantastic feedback from parents on the evening – thank you.

In November, we had our first outdoor Stay and Play Session. Parents and children joined the staff as they went ‘on a bear hunt’ around the nursery garden. Everyone had lots of fun trudging through mud, leaves, ice and water before arriving at the bear’s cave! The bear hunt was followed by indoor activities, hot chocolate and homemade flapjacks. All the parent’s were given a gift bag containing the Bear Hunt book and outdoor goodies. The parents were also assigned a Home Project to make an outdoor collage of leaves and twigs, which have now been proudly displayed in the nursery. Well done to all who attended!

Some comments from the day:

‘We had a really good time at the ‘Bear Hunt!’ The opportunity to be able to play a part in your child’s development and see first-hand the wonderful things they experience each week in nursery, was priceless! Gwennan’s mum.

‘Jak and I had a fantastic time this afternoon. All of the staff managed to truly bring the book to life, as we trudged our way through grass, mud, forests, rivers and snow, to find the bear! A really wonderful afternoon of fun. Thank you!’ Jak’s mum.

Strictly children’s classes come to Morganstown

Ballroom and Latin dance classes for children are now running in Morganstown Village Hall on Saturday mornings, where children from 3 to 18 can learn some of the dances seen on BBC’s Strictly Come Dancing.

Th ere are two classes: at 10am a class for ages 3 to 8, and ages 8 to 18 at 11am.

Children learn a selection of diff erent dances, such as the cha-cha-cha, foxtrot, samba, and tango. In another room, free tea, coff ee and biscuits is laid on for parents.

Saturn Dance is a family run dance school, set up by husband and wife team Darren and Lucilla, who also bring their own children to the classes.

Rotary Club of Cardiff – City of Llandaff

Could you become a Rotarian? Profile of Rotarians What Rotarians get out of the Rotary Movement depends largely on what they put into it. Many membership requirements are designed to help club members to participate in and enjoy their Rotary experience. There is no standard profile for a Rotarian. What is sought in new members is a man or woman who has achieved success in the commercial or public sector, professional or academic fields. However, what is more important is their willingness to engage in some way in one of the Rotary activities being undertaken by the club. Service By participating in local and international service projects, club members can volunteer their time and talents where they are most needed. Community Service. Community Service covers the projects and activities the club undertakes to improve life in its community. Examples of this are the Annual Carol Service in Llandaff Cathedral and collecting food for the needy at Xmas. There is also activity at various local schools to help raise the level of reading ability with selected students. To support this effort there are various fund raising activities. International Service. International Service encompasses actions taken to expand Rotary’s humanitarian reach around the globe and to promote world understanding and peace. Collaboration on various overseas projects is set up and there is an International Dinner each year at the Churchill’s Hotel where young students from around the World are welcomed by the club.

New Generations Service. New Generations Service recognizes the positive change implemented by youth and young adults through leadership development activities, service projects, and exchange programs. These range from the under-12 sports days, attendance on the Rotary Youth Leadership Awards course in the Brecon Beacons and participation in running a competition for young musicians. Vocational Service. Vocational Service encourages Rotarians to serve others through their vocations and to practice high ethical standards. Club Service. Club Service focuses on strengthening fellowship and ensuring the club’s effective functioning. In this respect there are various opportunities to serve by way of working on one of the club committees or assuming a key role in running the club. Attendance Rotarians are encouraged to attend the club’s lunches or dinners that are run on alternate weeks. They allow members to enjoy fellowship, enrich their professional and personal knowledge, and meet other Rotarians in their community. If members miss one of these meetings then they are encouraged to expand their Rotary horizons by attending a meeting of any other Rotary club in the world. Dues Club members pay a modest annual due to cover the cost of the club, the Rotary District and Rotary International, as well as a subscription for the Rotary magazine.

Cathedral Choir Tour to BelgiumSaturday 13 - Monday 15 October 2012.

Last month St John's College Concert Orchestra and Cardiff Metropolitan Cathedral Choir undertook a musical tour of the historic Belgian towns of Bruges and Ghent. Known as 'the Venice of the North', Bruges offered the perfect location for our pupils and Sixth Formers to explore Bruges's cobbled streets and canals lined with chocolate shops. Traditional waffles at the street-side were a particular favourite amongst our younger pupils.

The Cathedral Choir performed an afternoon concert in the magnificent setting of the Onze Lieve Vrouvekerk (Church of Our Lady), which boasts the tallest spire in the city and a marble sculpture of the Madonna and Child by Michelangelo. Beforehand, our close harmony group gave a pre-concert rendition of songs by Michael Jackson and the Beach Boys to crowds near the square. The Concert itself was very well received by a large and appreciative audience.

That evening the Concert Orchestra joined the choir in a performance of Haydn's Nelson Mass at one of Bruges's best kept secrets - the Baroque masterpiece, Sint Walburgakerk. It was especially fitting that the orchestra was able to perform works by the Baroque masters, Bach and Purcell. This was the third time that this remarkable church has played host to pupils of St John's College. The Cathedral Choir and Concert Orchestra have both performed here previously, in 1992 and 2002 respectively.

The perfect end to the tour was our final concert at Ghent Cathedral - home to the famous van Eyck altarpiece. The Choir performed a beautiful array of music by Grieg, Haydn, Pearsall, Purcell, Rheinberger, Rachmaninov, Stainer and Schütz while the orchestra entertained audiences with works by Bach, Elgar, Haydn, Purcell and Stravinsky. Much to our delight, the concert ended with a standing ovation.

Daniel Jeremy, who recently achieved 11 A* grades at GCSE and is now in Lower 6th form at St John's College, commented on the tour: 'It was great to both play in the orchestra and sing in the choir. The range of music played

St John's College is the Choir School to Cardiff Metropolitan Cathedral and the boy and girl choristers' principal role is to sing a small number of weekly services at the Wales's National Roman Catholic Cathedral in the heart of Cardiff. They also perform in broadcasts on BBC Radio and most recently appeared in a major Hollywood film to be released in 2013, as well as two annual concerts at St David’s Hall. Earlier this year, the Choir performed a joint concert with internationally acclaimed consort, The Tallis Scholars, and on Tuesday 19th March, the Cathedral Choir will sing its annual Easter Concert at St David's Hall, Cardiff, at 1pm, featuring extracts from Vaughan Williams FIve Mystical Songs & Vivaldi Gloria (Tickets £5.50, Box Office: 02920 878 444).

Potato MicePrep time: 15 minCook time: 1 hr 25 minServes: 4

Ingredients4 medium baking potatoes, a little vegetable oil, medium butternut squash, 40 g butter, 40 g freshly grated parmesan, 1 tsp Dijon mustard, 2 tbsp milk, 100 g grated cheddar cheese

To decorate4 cherry tomatoes, bunch chives, 4 radishes, 8 raisins, spring onions

Method 1. Preheat oven to 190C/gas mark 5. Prick the potatoes in a few places, place on a baking tray and brush all over with the oil. Bake for 1-1 1/4 hours or until they feel soft when pressed. 2. Cut a medium butternut squash in half, scoop out the seeds and brush with a knob of melted butter. Bake in the oven for about 40 minutes or until tender. 3. When cool enough to handle, cut the tops off the baked potatoes. Scoop out the flesh, taking care not to damage the skin. 4. Remove the flesh of the cooked butternut squash and add to the baked potato flesh along with mustard, parmesan, milk and butter. Mash together until smooth. Season to taste. 5. Put the mixture back into the potato shells, cover with the grated cheddar. Cook under a hot grill for a few minutes until golden. 6. Fix a small cherry tomato into each of the potatoes using a cocktail stick for the noses. Add some short lengths of chives for the whiskers - tuck these behind the tomato. Decorate with halved radishes for the ears, raisins for the eyes and spring onion for the tails.
