The business

The market for on-site environmental assessments has continued to be under serviced in both, Southern Michigan and Southwestern Ontario, Canada. Mr. Johnson and Mr. Smith have both recognized that there is a high demand for these services as well as a shortage in supply.

Through their extensive contacts, they have determined that most environmental consultants don't have the capacity to carry out such activities and as such, don't offer this kind of service.

Therefore, Terra Engineering has initially set the stages as a possible “Go-To” company for other professional engineering groups that don't have this capacity.

The primary objectives of Terra Engineering over the next year are to:

- Obtain commercial financing of $60,000 to cover start up costs and initial operating expenses;

- Generate one new client contract a month by networking with key industry leaders, conducting

seminars and workshops, and joining key environmental agencies;

- Generate a net profit of $35,000 in the first year of operations by developing a strong client base and keeping overhead costs to a minimum;

- Develop and conduct 10 environmental engineering seminars that meets the needs of the surrounding communities.

Terra Engineering will be located at:

The office space is leased and will accommodate the necessary office equipment such as computers, fax machine, photo copier and other engineering equipment. There is a copy of the office lease in Appendix C.

2.0 Company DescriptionThe Traditional Home-Style Restaurant will be located 7950 Camp Bowie West Blvd, Fort Worth, Texas. The restaurant will be wholly owned and operated by Jeff and Betty Wright. The restaurant will serve a variety of classic home-style favorites from pot roast and mashed potatoes to patty melts and vanilla ice cream.

The restaurant will be open 7 days a week with hours as follows:

2.1 Ownership

The restaurant will be owned by Jeff Wright. Jeff began his restaurant career at the age of 15 working in a quick-service foodservice operation and earned his way through college as a server and bartender. After earning his degree, he worked for a regional restaurant chain and an independent fine dining restaurant. In these organizations he held the positions of Assistant Manager and then General Manager.

Betty Wright received her Culinary Degree from the Art Institute in Dallas. After graduation she was employed by a local chain restaurant and then at a Five Star Hotel in Dallas. Betty will be employed as the Kitchen Manager.

With the high turnover of help for startup restaurants, we will rely on family to fill in where required until we are off the ground and making a profit.

2.2 Legal FormTHR will be organized as a sole proprietorship, wholly owned and operated by Jeff Wright d/b/a Traditional Home-Style Restaurant. THR is registered in the state of Texas a community property state.

2.3 Start-Up SummaryThe cost to open the restaurant is $363,000. The majority of the expenses are in furniture fixtures and equipment totally $110,000. The location requires some build-out and renovation totally $50,000 and will require approximately 30 days to complete. The Wrights will sub-contract the work themselves.

$175,000 of the start-up costs will be funded by the owners. The owner’s source of funds is a combination of liquid assets and marketable securities, primarily from their existing catering business.

2.4 Location and FacilitiesThe 3,400 square foot restaurant will be located in a West Roads Shopping Center, a retail strip center located in the Benbrook suburb of Fort Worth, Texas. The restaurant is located in a major traffic area, at the intersection of Camp Bowie and Cherry Road.

Benbrook, a suburb of Fort Worth, Texas, has a population of over 51,000 according to the 2010 U.S. Census Report. The residential population in the immediate area is comprised of a mixture of single family and multi-family housing. The median household income is $46,532. Major employers include Union Pacific and Bank of America.

Objectives

ProfitabilityA common business goal is to run a profitable operation, which typically means increasing revenue while limiting expenses. Revenue objectives could consist of increasing annual sales by 10 percent or landing three new accounts each month. Expense objectives could involve finding a new operating facility that decreases your rent by $200 a month or cutting monthly utility bills by 15 percent.

Customer ServiceExamples of customer service goals are to develop a perception that your company is easy to do business with or to improve your response time to customer complaints. Objectives to help meet these goals could be increasing your customer service staff from one to three workers by the end of the year or implementing a policy where customers are guaranteed to receive a return phone call before the end of the business day.

RetentionIf you've experienced a problem with employee turnover, your overall goal could be to improve retention. Profit maximization objectives might include replacing legacy computer systems with a new company-wide system by year-end or contracting with a new service provider to decrease production line maintenance costs by a specified percent by the end of the quarter. You might also increase profits by changing your company's product or service mix, increasing sales revenues goals or contracting with new vendors to decrease the variable costs of manufacturing a product component.

Improved Product QualityCustomers' needs and expectations require that you provide them products of high quality. You might implement increased productivity objectives such as implementing new equipment to decrease process time and production costs. Other objectives include reviewing and revising production line processes to decrease processing time, wait time, inspection time and move time to decrease your total manufacturing cycle time. You might also identify new quality measures that will minimize defects and improve productivity by a certain percent for the year or improve your capacity by adding a production line that will enable you to respond more quickly to customer demand.

You enhance profits by reselling to current customers and getting new sales through customer referrals. Therefore, improving customer satisfaction is an important goal. Objectives in this regard might include the on-time delivery of products 99 percent of the time and adjusting production and sales processes and policies to reduce the customer’s total cost of ownership by 10 percent. Additional objectives include correctly fulfilling customer orders 95 percent of the time and solving customer issues within 48 hours of the customer's initial contact. You might also commit to improving product functionality, decreasing prices and improving service quality and convenience.

Product description

Longganisa - Longaniza is Spanish sausage, similar to chorizo. Longganisa is the Filipino counterpart made with native spices and ingredients. In her book Palayok, Filipino food writer Doreen Fernandez writes about the two general types of Filipino-style sausages: jamonado, which is sweet like ham, and de recado, which is spicier or vinegar-flavored.

The spices and flavorings used in making longganisa vary from town to town across the archipelago.  In the northern part of the island of Luzon, in a town called Vigan in Ilocos Sur, longganisang Vigan is marinated in garlic and basi or sugarcane vinegar.  Longganisang Lucban from Lucban, Quezon in the southern part of Luzon is made with oregano while the sausages in Pampanga, not far from Manila, are sweet and intensely garlic-flavored.  Traditional longganisa is made with ground pork and diced pork fat but versions that use chicken and beef abound.

Lala, my Pampangueña friend  and the voice behind the blog This Little Piggy, makes the best sweet Pampanga-style longganisa.  She makes them skinless and nitrite-free with lots of freshly ground black pepper to cut through the sweetness of the pork.  She uses achuete powder for color, which I substitute with achuete oil .

Sausage or Salami?

Well, technically they're all sausages but those called "salami" are generally drier, firmer, likely saltier, often larger, and can be sliced and eaten without cooking. Most salamis are raw and cured by air drying, salting an/or smoking, but some are cooked. Some called sausages are air dried, cured, salted, and/or smoked and eaten uncooked as well.
