IntroductionEverything is bigger in Texas. Kent and I have heard it since we were children, and we believed it. Researching this cookbook certainly brought that point home, as we quickly discovered that when it comes to cooking in The Lone Star State, there’s more than just beef on the table.

The pleasures of Texas cooking are as big and bountiful as the state itself. From frontier campfire cooking to spicy Tex-Mex fare, old-fashioned cowboy cooking to the German influence of Central Texas, and southeast Texas’ own style of Cajun and Creole cuisine, Texas cooking is diverse... and delicious.

It is our goal to preserve those recipes that have been handed down through generations... favorite recipes from countless family Sunday dinners, recipes that have been cooked on the ranch for years and years, and the recipe your grandmother then your mother then you have made for so many years no one remembers where it actually originated. Some of the best cooks in Texas graciously shared their favorite recipes for this cookbook.

No Texas cookbook would be complete without The Lone Star State’s Big Three—barbecue, chili, and Tex-Mex. We bring you Cheesy Pork Quesadillas, Homemade Taco Seasoning, Texas Red Chili, and Baby Back Ribs with Coffee-Bourbon Sauce. But Texas cooking is more than that. Central Texas brings you the down-home flavor of Chicken Fried Steak with White Gravy and Sweet Potato Pie. The best cooks in the deep southeast area of Texas bring you Cajun- and Creole-influenced Shrimp Po’Boy with Cajun Confetti Slaw, Minced Jalapeño Beef Stew, and Texas Crawfish Cornbread. And, of course, you’ll enjoy delicious ethnic recipes like Ham and Cheese Kolache and Wurstfest Sausage Cheese Balls.

Nowhere is the diversity of Texas cooking more evident than during the many festivals that are held throughout the state each year. And throughout this book, you’ll enjoy fun stories and pictures about food-related festivals across the state. From Big Bang Salsa Fest to Texas Onion Fest in Weslaco, from Chisholm Trail Roundup BBQ & Music Festival in Lockhart to the GrapeFest in Grapevine, there’s a celebration to suit every taste.

Texas8

Our gratitude goes to the many gracious people associated with these festivals. You were helpful and generous with your time, and this book is all the better for the assistance you provided. Thank you, too, Tony Smith (and your family of great Texas cooks) and George Eager (for your Lone Star perspective on good Texas food) and Dana (who is never to be forgotten) and our own hometown sales team, Melissa, Leslie, and Brooke. And, as always, a big thank you goes to Annette Goode (without your support we’d be lost). Last, but always first with us, our love and appreciation goes to our families for their unwavering support; Ally and Macee, Roger, Ryan, and Nicholas—we couldn’t do it without you.

We sincerely hope you enjoy using this latest edition of our State Hometown Cookbook Series as much as we enjoyed writing it. When it comes to hometown cooking, Texas is like a whole other country because there is so much great food to enjoy. With our Texas Hometown Cookbook we hope to bring you the BEST The Lone Star State has to offer.

Wishing you many happy kitchen memories,

Sheila Simmons & Kent Whitaker

Queso Blanco (White Cheese)Asadero is a white cow’s milk cheese of Mexican origin that’s available in braids, balls, or rounds. HushpuppiesEvery year, my grandad had a fish fry at our cabin at the lake. Grandad caught the fish and my grandmother made her infamous hushpuppies. All the aunts, uncles, cousins, and close friends were invited. Over the years, the recipe has been adapted but the traditional fish fry remains the same. Even fifty years later, a weekend at the lake is not complete without fresh, fried catfish and grandmother’s hushpuppies. It is just a younger generation grandmother. “Gas House” EggsGary Dozier of Crowley says, “My dad made this and my brother and son carry on the tradition. Everyone asks why it’s called ‘Gas House’ Eggs. Before fast-food restaurants, there were service stations (or gas houses) with a hot griddle and a cook who could check under the hood, fill the tank, and whip up a quick breakfast. This is one that always brings the late risers to the kitchen.”

Sliced bread (enough to feed everyone)ButterFiesta Brand® Garlic PowderFiesta Brand® Seasoning SaltEggs (1 egg for each slice of bread)

Cut or pinch a hole in center of a piece of sliced bread. Melt several pats butter in heated skillet. Add garlic powder and seasoning salt to butter. Add bread to skillet and turn coating both sides. Crack and place an egg directly in hole in center of bread. When egg is cooked on 1 side, flip bread quickly and carefully. Remove when egg is cooked on other side. The result is a quick flavorful breakfast contained in 1 compact package.
