Tex-Mex Pork and Refried Beanswith Pan-Fried Tortillas

Refried beans are a Mexican staple. Mash fibre-rich beans with spring onion and

mild Tex-Mex spices to make your own. Team them with tomatoey pork mince and

crispy tortillas for a plate overflowing with yumminess.

Thinly slice the spring onionspring onion on an angle.

Crush or finely chop 2 garlic cloves2 garlic cloves . Drain and

rinse the beansbeans. Heat 2 tsp olive oil2 tsp olive oil in a

medium deep frypan over high heat. Cook the

pork mincepork mince, breaking up the lumps with a

spoon, for 3-4 mins until browned.

Add the garlicgarlic and 2 tbs barbecue sauce2 tbs barbecue sauce to

the pork and cook, stirring, for 30 secs or until

fragrant. Add the tomatoestomatoes and 60ml (¼ cup)60ml (¼ cup)

waterwater and bring to the boil. Reduce the heat

to medium and cook, stirring occasionally, for

10 mins or until slightly thickened. Taste, then

season with salt and peppersalt and pepper . Remove the pan

from the heat.

Meanwhile, combine 2 tsp olive oil2 tsp olive oil and ½ tsp½ tsp

Tex-Mex seasoningTex-Mex seasoning in a bowl. Brush the Tex-Tex-

Mex oilMex oil over both sides of 3 tortillas*3 tortillas*. Heat a

medium frypan over medium heat (see Make

it yours). Cook the tortillas, one at a time, for

30 secs each side or until lightly golden.

Remove from the pan, halve and cover to

keep warm.

Heat 2 tsp olive oil2 tsp olive oil in the same pan over

medium heat. Cook the remaining Tex-Mexremaining Tex-Mex

seasoningseasoning and half the spring onionhalf the spring onion , stirring,

for 30 secs or until fragrant. Add the beansbeans

and cook, stirring and coarsely mashing with

a wooden spoon, for 2-3 mins until warmed

through. Remove the pan from the heat and

season with salt and peppersalt and pepper .

Divide the refried beansrefried beans and porkpork among

plates and scatter over the remaining springremaining spring

oniononion. Serve with the tortillastortillas and enjoy!

If you'd prefer crispy baked tortillas, preheat

the oven to 220C. Put the tortillas on an oven

tray lined with baking paper and bake for 5-6

mins until golden.
