    Suzanne “Suzi” Ross, daughter to Helen McAllister-Ross and Jonathan Ross (7913 Cobblestone) is a 7th grader at O.Henry Middle School preparing to go to Australia on a trip this summer as a Student Ambassador. She has been a member of People to People Student Ambassadors ( h t t p : / /www.studentambassadors.org/home ) for 2 years now. This is a great program started by President Dwight Eisenhower, that opens the minds of young people, instills leadership skills and promotes

    global awareness. During the summer of 2006, Suzi traveled to Western Canada with this group. Now she is heading for Australia this summer for three weeks (June 2008). Along with the other nominated 40 students in the Austin based group she will represent the United States, the State and her school.

    As Suzi prepares for this venture she doing some fundraising for the trip. She has created a website describing her goals and just what this inspiring program is about. As a fundraising idea Suzanne decided to make bracelets. She has been busy making bracelets for donations. These bracelets are made with new, vintage, glass, metal and plastic beads. She is asking for

    a donation of $8.00 for one bracelet or $20.00 for three. If you are interested in supporting Suzi please check out her website and you can see what her BRACELETS FOR DONATIONS is all about.     Happy Holiday Season

    Pumpkin Bread1 ½ cup sugar4 eggs2/3 cup melted margarine or butter3 teaspoons vanilla1 can (15 oz) pumpkin3 cups all-purpose flour½ cup chopped walnuts½ cup dried cranberries3 teaspoons cinnamon½ teaspoon baking powder2 teaspoons baking soda In a large bowl mix together sugar, eggs, butter, vanilla and pumpkin.Add remaining ingredients. Stir until well blended. Pour batter into 2 lightly greased loaf pans, 8 ½ x 4 ½ x 2 ½inches. Bake in 350° oven for 50 to 60 minutes. Note: For best results if you use cranberries, place in a microwave safe dish with enough water to cover and microwave for 1 minute to plump cranberries. Let it sit in the microwave for 5 minutes to cool. Drain cranberries before adding to the recipe.

    Holiday Recipes From Your Neighbor’s KitchenPeanut Butter Cup Cookies

    1 pkg 17.5 oz Peanut butter Cookie Mix1 tablespoon milk3 tablespoons butter or margarine1 egg1 teaspoon vanilla ½ cup peanut butter1 package miniature peanut butter cups cut in 4 pieces1. Stir cookie mix, milk, butter, egg, vanilla and peanut butter in a bowl until dough forms.2. Shape cookie dough into small balls and press down on a cookie sheet.3. Bake for 5 minutes at 375°. Remove from oven and press candies into cookies. Bake an additional 5 minutes. Cool for at least 3 minutes before removing from cookie sheet.

    Holiday Stuffing1 celery stalk½ cup butter or margarine1 can chicken broth 14 oz.1 box instant stuffing mix 6 oz.2 cups of bagged stuffing mix½ teaspoon poultry seasoning½ to 1 cup of cranberries (optional)½ cup of chopped pecans (optional)1. Chop celery and sauté in a pan with 2 tablespoons of butter or margarine. 2. In a large bowl combine both stuffing mixes with poultry seasoning.3. Combine remaining butter or margarine and chicken broth in a large saucepan. Bring to boil. Add bread cubes and celery. Stir ingredients until mixed and then remove from heat. (If dressing is too moist, add more bagged stuffing mix, if dressing is too dry add either more butter or margarine and chicken broth). Add cranberries and pecans if desired.4. Let stand for 5 minutes. Fluff with fork and serve.
